BUTTERY SOFT ROLLS
Buttery Soft Rolls are the best and simplest homemade rolls ever. They're super soft and perfect with any soup, salad or main dish.

Steps:
- Put the milk (95-115 degrees Fahrenheit) and the butter in the bowl of a stand mixer. Sprinkle the yeast over the milk. (If the yeast is not instant yeast, let it sit for 5 minutes to activate.)
- Add the sugar, eggs, salt, and flour. With a paddle attachment for your stand mixer, mix for a few seconds until just combined. Let this mixture sit for about 5 minutes.
- Switch the attachment to the dough hook and knead on medium speed for 10 minutes.
- Cover the dough and let it rise in a warm place for 30 minutes or until doubled.
- Divide and roll dough into 15 balls. You may have more or less depending on the size you make the rolls.
- Place in a greased 9x13 pan. Cover and rise for 15-20 minutes.
- Bake at 375 for 13 to 16 minutes or until lightly browned.
- Serve warm.

BUTTERY SOFT CRESCENT ROLLS
My daughter fell in love with my bread machine and she is always trying out new recipes, here is her best find yet. The rolls are soft and buttery, a perfect accompaniment to soup and salad.

Steps:
- Place ingredients into bread maker in order recommended by manufacturer: water, milk, egg, 1/3 cup butter, sugar, salt, flour and yeast. Reserve additional butter butter (1/4 cup) for later.
- Select dough/knead cycle and start. This cycle should mix dough and allow it to rise for 1 hour.
- Turn dough out onto a floured surface and roll into a circle, about 1/4 inch thick. Brush with additional butter.
- Cut into 16 pie shaped wedges. Roll wedges starting with wide end into crescent shapes.
- Place on an ungreased baking sheet and allow to rise for an additional hour.
- Bake for 10- 15 minutes at 375°F or until golden brown.

- In a medium saucepan over medium-low heat, combine the milk, 1/2 cup sugar, 5 Tablespoons butter and salt. Heat until mixture is warm and butter is melted (it will start to slightly bubble around the edges of the pan), remove from heat and cool to lukewarm (this is important, because if it's too hot, it will kill the yeast). Meanwhile, in a medium bowl, combine the warm water, 1 teaspoon of sugar and yeast. Allow to sit for 5 to 10 minutes or until bubbly and frothy. If the yeast mixture does not get bubbly and frothy, start yeast mixture over.
- Add three cups of flour to the bowl of your stand mixer. Pour warm milk mixture into the bowl and mix, using the dough hook, until combined, scraping sides of bowl with a rubber spatula as needed. Add the yeast mixture and beaten eggs and mix until combined. Gradually add remaining two cups of flour, 1/2 cup at a time, or until dough starts to pull away from the sides of the bowl as you mix. Dough should still be slightly sticky to the touch. Don't add too much flour or your rolls will be dry. You may or may not need the entire 5 cups of flour.
- Cover bowl with a towel and allow dough to rise until doubled in size. When dough has risen, punch down. Form dough into balls (if it's a little too sticky, spray your hands with cooking spray). I use about 3 oz. of dough per dough ball. Place on a large greased sheet pan, spacing 2-3 inches apart. Cover with a towel and allow to rise for one hour or until doubled in size.
- Preheat oven to 400 degrees and bake for 12-13 minutes. Tent rolls with foil the last few minutes of baking. The rolls brown pretty quickly, so tenting them with foil is a must. When done baking, brush with remaining 2 Tablespoons of melted butter. Makes around 16 large rolls.

- Preheat the oven to 400°F or 200°C. Using nonstick cooking spray, grease a 9x13 baking dish and set it aside.
- In a heat-proof bowl, combine the water and melted butter, then stir in the milk and honey until blended.
- Microwave the butter mixture for 1 minute, stir, then heat for 15 seconds at a time until the butter is melted and it reaches 110°F (you can use a thermometer to check).
- Transfer the warm butter mixture to an electric mixing bowl and sprinkle the yeast evenly on top. Use a fork to gently stir the yeast into the mixture and leave it for 5 minutes until it activates and foams up.
