Time 2h

Number Of Ingredients 10

• 1/2 Lb (230 g) bread flour
• 1/2 cup (120 ml) milk (optional)
• 1 (7g) dry active yeast
• 1 Qt (1lt) sesame oil
• 1 cup (340 g) honey
• 1 tbsp sugar
• 1 tsp salt
• 1 tbsp cinnamon powder
• 1 tbsp toasted sesame seeds (optional)
• 2 tbsp chopped walnuts (optional)

Steps:

  • The liquid part of the Loukoumades mixture can be composed of a half cup of milk and a half cup of water or by just 1 cup of water. To obtain a perfect result, you want the liquid lukewarm.
  • First of all, pour 1 cup of liquid in a bowl, then add the yeast along with 1 tbsp of sugar, and melt stirring with your hands.
  • Now, sift the flour and pour it a little at a time, stirring and adding 1 tsp of salt on the halfway. Finally, wrap the bowl and store into the oven at room temperature until the mass doubles its size.
  • When the Loukoumades mixture is well raised and ready to be fried, prepare the honey syrup.
  • Combine a half cup of honey and a half cup of water in a small pot, then stir over medium heat until melted, then turn off the flame and cover with a lid.
  • Now, pour the oil into a deep pot a bring to 350° F (177° C). To cook the honey puffs to perfection, it is critical maintain the oil temperature between 340 and 350° F (170 to 177° C).
  • At this point, wet a teaspoon and model a ball of the mixture, then drop the ball into the oil (please be careful of oils slashings!).
  • Fry the ball a little at a time, until nicely golden outside and well cooked inside.
  • Finally, dry the Loukoumades over paper towels then soak them a couple of minutes into the honey syrup, still hot.
  • Place the honey puffs on a plate, then garnish with the rest of the honey, a sprinkle of cinnamon powder.
  • Depending on the preferences, complete with sesame seeds and/or chopped walnuts. Serve immediately.

Time 34m

Yield 2 dozen loukoumades, 6 serving(s)

Number Of Ingredients 7

1 cup milk
1 1/4 cups self-rising flour
1 jigger brandy (1oz.)
1 lb honey
vegetable oil (for deep frying)
cinnamon, for topping
finely chopped walnuts, for topping (optional)

Steps:

  • In a large mixing bowl combine milk, flour and brandy.
  • Beat until batter is thick and bubbly.
  • Fill a large heavy pan with oil to a depth of at least 2". If possible it is better to use an electric deep fryer or electric fry pan because of the constant controlled temperature.
  • Heat the oil to 375-400*. Work in a well ventilated room.
  • Drop batter from teaspoon or tablespoon into hot oil.
  • Dip spoon in cup of cold water each time before dipping in batter so batter will not stick to spoon.
  • Fry 4-5 loukoumades at a time turning often until puffed and golden on all sides. The frying process usually takes 2-4 minutes.
  • Remove from oil and drain in colander or in bowl lined with paper towels.
  • Heat honey and 2 Tblsp. of water in a saucepan.
  • To serve, arrange hot Loukoumades on a platter and pour hot honey over each one. Sprinkle with cinnamon. If desired, sprinkle with chopped walnuts.Serve hot and immediately.
  • Left over cooked dry Loukoumades may be wrapped in plastic or aluminum foil and frozen. When ready to use, defrost completely, place uncovered on ungreased baking sheet and heat through in preheated moderate oven. Serve with honey, cinnamon and finely chopped walnuts as above.

  • Dust with walnuts and cinnamon, and serve.

LOUKOUMADES

Loukoumades image

A Greek doughnut-hole-like fried puff pastry. If you can't get thyme honey, other honey will do. Each time I've made these, I've come out with a different number, with the count varying quite a bit across time. So the amount given is only a very inexact estimate.

  • Using the lukewarm water, slowly add to the flour, mixing with an electric mixer until all the water has been added and the mixture is smooth.
  • Cover with a clean tea towel and leave it in a warm place for about 1 hour or until it has doubled in size.
  • To deep fry the donuts, you can use a deep-fryer or a deep pan. Fill with olive oil and heat.
  • Take a teaspoon, dipping it in water first to prevent the mixture sticking, then take a teaspoon of mixture and drop it in the hot oil. Fill up your fry pan and continue until all the batter has been made.
  • The loukoumades will puff up and rise to the top of the oil very quickly. Turn them over and as they turn golden, take them out with a slotted spoon and place on some paper.
  • To make the syrup, add all the ingredients into a small saucepan, bringing to the boil and simmer on medium heat for about 5 minutes or until slightly thickened.
  • Pour the syrup over Loukoumades and serve warm, drizzled with extra honey and sprinkled with cinnamon. Alternatively, you can drizzle the loukoumades with melted chocolate.
