LEMON CUPCAKES
Here is a recipe I use for beautifully delicious lemon cupcakes. Ideally, you'd use buttercream frosting to ice cupcakes, but I tried these with Lemon Cream Icing for a less buttery icing, and they were perfect! These cupcakes are truly lighter than air and will melt in your mouth.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line 30 cupcake pan cups with paper liners.
- Sift the self-rising flour and salt together in a bowl. In another bowl, beat the unsalted butter and sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time, beating each egg until incorporated before adding the next. Mix in the vanilla extract and lemon zest.
- Gently beat the flour mixture into the butter mixture, one third at a time, alternating with half the milk and half the lemon juice after each of the first 2 additions of flour. Beat until just combined; do not over mix.
- Fill the prepared cupcake liners with batter 3/4 full, and bake in the preheated oven until a toothpick inserted in the center comes out clean, about 17 minutes. Let the cupcakes cool in the pans for about 10 minutes before removing them to finish cooling on a rack.
- To make the icing, beat the cream in a chilled bowl with an electric mixer set on Low until the cream begins to thicken. Add the confectioners' sugar and lemon juice, a little at a time, beating after each addition, until fully incorporated. Increase the mixer speed to High, and beat until the icing forms soft peaks, about 5 minutes. Spread on the cooled cupcakes. Refrigerate leftovers.

- 1. Pour your Sundrop out of the can/bottle ahead of time into a bowl or cup so it can lose some of its "fizz" before you add it to your cake mix. Preheat your oven to 350 degrees. Place cupcake papers in your cupcake pans.
- 2. Pour the cake mix into your mixer bowl. Add the lemon pudding (in powder form) to the mixture. Add the lemon extract and oil. Mix on medium speed for about two minutes until it is well blended. Add your lemon zest, if you wish, with a spatula.
- 3. Fill cupcake papers about 2/3 full. Bake for approximately 20-25 minutes until a toothpic inserted into the middle of a cupcake comes out clean.
- 4. When they are cool, you can frost them with this tasty frosting: Lemon Buttercream Frosting: 1 lb of unsalted butter 1-2 tbl of heavy whipping cream 1 1/2 tsp vanilla 1-2 tsp lemon extract 2 tsp freshly grated lemon zest (optional) 3-4 cups powdered sugar Directions: Cut butter into small squares into a large bowl and blend with mixer until fluffy. Add whipping cream, vanilla, and lemon extract to butter. Once ingredients are incorporated, turn mixer down to low and gradually add powdered sugar until frosting reaches desired consistency (the more powered sugar you add, the thicker the texture of frosting). Then add your lemon zest by hand, if you choose to use it.

- Preheat oven to 350°F. Spray 12-cup (10-inch) bundt pan with nonstick cooking spray. Combine all ingredients in large bowl; mix well. Do not over-mix. Pour mixture into prepared pan. Bake 40 to 45 minutes or until a toothpick inserted near center comes out clean. Cool completely in pan on wire rack. While cake is still in pan, poke holes into cake with handle of wooden spoon. Ladle approximately half of glaze over cake. Allow cake to set 10 minutes. Turn cake out onto round plate then drizzle remaining glaze over top of cake. Serve warm or at room temperature. Note: Cake is best when served warm. Glaze: Combine soda, sugar and butter in small heavy saucepan. Heat over medium heat; stir until all ingredients are melted.
SUN DROP® POUND CAKE
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a tube pan.
- Beat white sugar, 1 cup margarine, and shortening together with an electric mixer until creamy and smooth. Mix flour, 6 fluid ounces citrus-flavored soda, eggs, lemon extract, and vanilla extract into the creamed mixture until well incorporated. Pour batter into the prepared tube pan.
- Bake in the preheated oven until a toothpick inserted into the cake comes out clean, about 1 hour 15 minutes. Let cake cool for 10 minutes before turning cake onto a serving plate.
- Whisk confectioners' sugar, 2 tablespoons melted margarine, and 1 fluid ounce citrus-flavored soda together in a bowl until smooth; spread over cake.

SUN DROP CAKE
This is a favorite at our company potlucks. If you do not have Sun Drop, you can use Mountain Dew. You can also use orange cake mix, and use Orange Crush for the soda. It is a great addition, as well.

- Combine the cake mix, Sundrop soda, eggs and vegetable oil in a mixing bowl. Beat with an electric mixer for 3 minutes. Spoon into a flutes pan.

- To prepare the cupcakes, adjust rack to center position of oven and preheat oven to 350°Line muffin pans with 24 cupcake liners (*see Tips & Tricks below).
- Set a large sifter or fine mesh sieve over the large bowl of an electric mixer. Measure flour, cornstarch, sugar, baking powder, and salt into sieve and firmly hit the palm of your hand against its side to sift all of the dry ingredients together into the bowl. (If desired, repeat this process a few more times for fluffier cupcakes.)
- To the sifted dry ingredients, add the softened butter, sour cream, milk, lemon juice, eggs, vanilla, and lemon zest. Beat at medium speed for about 30 seconds or until smooth. Scrape down the sides of the bowl with a rubber spatula and beat for 15 more seconds.
- Evenly divide the batter between the 24 cupcake liners (I find it easiest to do this using a cookie scoop). Bake for 18 to 22 minutes or until cupcakes are light golden and test done with a toothpick inserted in center (mine were perfect at exactly 20 minutes). Cool the cupcakes for a few minutes in the pans before transferring them to a wire rack set on top of wax paper or foil (to keep the counter clean for the next step).
