This is a great cold weather stew.

2 pounds ground beef
1 medium onions, chopped
2 (19 ounce) cans minestrone soup
1 (14.5 ounce) can pinto beans with jalapeno peppers
2 (10 ounce) cans diced tomatoes and green chiles
garlic powder to taste
seasoned salt to taste
ground black pepper to taste

Steps:

  • In a skillet over medium heat, cook the ground beef and onions until beef is evenly brown and onions are tender. Drain grease.
  • In a pot, mix the beef and onions, minestrone soup, pinto beans with jalapeno peppers, and diced tomatoes and green chiles. Season with garlic powder, seasoned salt, and pepper. Bring to a boil, reduce heat to low, and simmer 1 hour.

I found this recipe in a church cookbook. It looks like it would be a winner for a camping trip. Just make sure to take a large group of campers with you or be the camp cook.

25 lbs stew meat
10 lbs onions, rough chopp
10 lbs potatoes, quartered
1 (2 ounce) can red peppers
1 gallon tomato juice
salt and pepper
3 gallons tomatoes
4 gallons mixed vegetables
4 gallons creamed corn
2 (2 ounce) cans garlic
3 gallons water
1 quart cooking sherry

Steps:

  • Mix stew meat, onions, tomatoes, tomato juice, water and red pepper in a 25 gallon pot. Cook until almost done; add potatoes, mixed vegetables, garlic, salt, pepper and cooking sherry. Cook until done, stirring frequently to keep from sticking. Add the corn and turn the fire to simmer. Stir good.Cook for 10 minutes and turn the fire out. This is 25 gallons of the best stew you will ever eat !

My family enjoyed this tasty stew every Christmas Eve. It was our traditional meal before we had our family celebration. Now, when I have oyster stew, it always makes me think of those wonderful holidays spent with my family.

2 1/2 qt half & half
1/2 c butter (1 stick - use real, salted butter)
2 dozen shucked oysters (with broth)
salt and pepper to taste
dash(es) cayenne pepper or hot sauce

Steps:

  • 1. Place half and half in a large saucepan. Heat to scalding (until little bubbles appear around edge of pan). DO NOT BRING TO BOIL!!!
  • 2. Meanwhile, place the butter in a 2-quart saucepan and melt over medium high heat. Add the oysters with their broth (check oysters for pieces of shell before adding to butter). Cook gently until edges of oysters start to curl.
  • 3. Add oysters and broth to scalded milk. Season with salt, pepper and cayenne pepper.
  • 4. Cook over medium heat for 1-2 minutes or until heated through.

This is the easiest, tastiest, "get better soon" or comfort stew that you will ever make As the title suggests, I stole this one from my Dad. These were his tips for me a long time ago: 1. Cut the tomatoes so that any skin you get is bite size or smaller (the rest will dissolve) 2. Cut the meat bite size or smaller, it will be easier to eat (my sister was picky, actually, but whatever works) ALSO, I have made this plenty of times w/o meat at all. We called it "Fried tomatoes" when we were growing up, but it's really a simple, fresh tomato soup.

1 -2 tablespoon olive oil
1 onion, white, diced
1 lb beef stew meat (optional)
5 tomatoes, diced (preferably on the vine)
salt
French bread

Steps:

  • In medium sauce pan, heat oil to low/medium heat, saute onion.
  • Dice the tomatoes just small enough the skin is bite size.
  • Cut meat into bite size or smaller pieces, removing fat if needed.
  • When onions are translucent, add meat (if desired) and cover with lid.
  • If you added meat, raise temp to medium and cook until the meat is done. Add diced tomatoes, cover and bring to a boil.
  • Reduce to simmer and cook until tomatoes have dissolved (~20min), stirring occasionally.
  • Add salt to taste, cook additional 3min and serve with french bread.
