QUICK SOFT BREADSTICKS
Our family likes these breadsticks because they are soft and chewy. I like to make them when I am in a hurry because they rise quickly.

- Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
- Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch-long pieces. Knead each piece slightly and shape into a 7-inch-long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. OATMEAL STICKS
This is a recipe my mom used to make, and since they are positively addictive, I made sure I got the recipe. These are one of my daughter's favorites as well. I bet you can't eat just one, lol!!

Steps:
- 1. Heat milk to scalding, add oatmeal and allow to cool.
- 2. Sift dry ingredients together. Cut butter or margarine (I prefer butter for its taste) into dry ingredient mixture until well incorporated (pea sized butter pieces).
- 3. Using your hands, form it into a ball. Depending on your flour, you may need to add more flour just to keep it from being too sticky. Turn it out onto a floured board and knead just until smooth. No excess kneading is necessary - just so it holds together.
- 4. Pull off a small sized ball - enough to make a stick about a foot long when rolled to 1/2 inch diameter size. You may need to grease your hands for this: Roll the dough between your two hands into a rope of about 1/2 inch diameter and place it onto a greased cookie sheet. Continue placing the ropes out onto the cookie sheet, about an inch or so apart (they rise a bit). Bake at 400 degrees fahrenheit until they just turn a bit brown (about 10 to 15 minutes?) This makes a lot, but they go fast!
