TEX-MEX BREAKFAST HAYSTACKS

Tex-Mex Breakfast Haystacks image

I love haystacks and wanted to make a fun Tex-Mex version for my family. Adding panko crumbs and cheese to the hash browns before cooking gives them a wonderful golden brown color and crisp texture. -Donna-Marie Ryan, Topsfield, Massachusetts

Provided by Taste of Home

Categories     Breakfast     Brunch

Time 40m

Yield 6 servings.

Number Of Ingredients 14

2/3 cup sour cream
3 thinly sliced green onions
2 tablespoons oil-packed sun-dried tomatoes, chopped
2 tablespoons minced fresh cilantro
2-1/2 teaspoons Tex-Mex seasoning, divided
1 package (3-1/2 cups) refrigerated shredded hash brown potatoes
1/2 cup panko bread crumbs
1/3 cup shredded Mexican cheese blend
1/4 teaspoon salt
5 tablespoons canola oil, divided
6 large eggs
1/2 cup salsa
4 cooked bacon strips, coarsely chopped
Finely chopped green onions, optional

Steps:

  • Combine sour cream, green onions, sun-dried tomatoes, cilantro, and 1/2 teaspoon Tex-Mex seasoning; set aside., Squeeze hash brown potatoes dry with paper towel to remove excess liquid. In a large bowl, combine potatoes, bread crumbs, cheese, salt and remaining Tex-Mex seasoning., On an electric griddle, heat 3 tablespoons oil over medium-high heat. Drop potato mixture by 2/3 cupfuls into oil; press to flatten slightly. Fry, adding oil as needed, until crisp and golden brown, 5-7 minutes. Drain on paper towels; keep warm., On same griddle, heat remaining oil over medium heat. Break eggs, one at a time, onto griddle. Reduce heat; cook until whites are set and yolks have begun to thicken. Flip eggs if desired; cook to desired doneness., To assemble, top each potato patty with an egg, salsa, bacon and sour cream mixture. If desired, sprinkle with green onions.

  • Huevos Rancheros Casserole. Here huevos rancheros go the way of the casserole with a double layer of corn tortillas, a generous helping of beans and cheese, and the signature spicy-sweet tomato-chile sauce.
  • Bean Chilaquiles with Avocado & Queso Fresco. Let’s face it — most of us have stale corn tortillas lingering somewhere in the back of the fridge. Chilaquiles is my favorite way to give them new life, by simmering them in some salsa and turning them into breakfast in about 10 minutes.
  • Basic Breakfast Tacos. These tacos start with a mix of crispy bacon, diced potato, onion, and sweet bell pepper. Get a jumpstart by prepping these components in advance, then come morning all that’s left to do is whip up a pan of scrambled eggs.
  • Tex-Mex Migas. For this simple and ultra-comforting breakfast you just need some eggs, a couple of tortillas, a hunk of cheese, and salsa. (Image credit: Jenny Huang)
  • Baked Egg and Chorizo Enchiladas. Let’s be clear about one thing: Enchiladas are not just for dinner. This version starts with spiced Mexican chorizo, but it’s so easy to swap in mushrooms or beans if you want to keep it meat-free.
  • Savory Tex-Mex Dutch Baby Pancake. All you need are some beans, chiles, hot sauce, and cheese to transform a classic Dutch baby pancake into a savory Tex-Mex breakfast for the whole table.
  • How To Make Slow Cooker Breakfast Burrito Bowls. Whether you stuff this filling into a soft tortilla, spoon it into a bowl with avocado, or scoop it up with chips, there is no wrong way to devour this breakfast.

  • Heat 1 tablespoon olive oil in large nonstick skillet over medium heat. Sautee onion and jalapeno together until browned, about 5 minutes. Keep in mind the longer you cook the jalapenos, the less heat they will have. While onion and jalapenos are cooking, bring chicken stock to a boil. Remove jalapenos and onions from pan and set aside. Once chicken stock is boiling, whisk in grits. Reduce heat to lightly simmer and stir occasionally until cooked completely.
  • While grits cook, replace large nonstick skillet back to medium heat. Saute onion and diced dinner sausage until browned, about 7 minutes. Add in peppers, zucchini, corn and seasonings and cook another 5-7 minutes or until the veggies are crisp-tender. Set aside.
  • To finish the grits, remove from heat. Stir in cheese and reserved cooked onion and jalapenos. Slowly stir in heavy cream until grits become the consistency you'd like. Add salt and pepper as needed.
