GRANDMA RITA'S SOFT BUTTER ROLLS
Want a roll that stays soft for days? Try these fluffy, soft rolls made with butter and love. This is my Grandma's recipe. The rolls are quick to rise due to the two packages of yeast. A special thanks to Baking Nana for writing the directions that are clear and easy to follow.

Steps:
- Pour milk into a glass 2-cup measuring cup and heat in the microwave until it starts to boil and climb the sides, about 1 minute. Add butter, 1/4 cup sugar, and salt to the scalded milk; set aside to cool until it gets below 110 degrees F (45 degrees C).
- Dissolve yeast and 1 teaspoon sugar in warm water in a large bowl. Let stand until the yeast softens and begins to form a creamy foam, about 10 minutes.
- Pour milk mixture into the yeast mixture; add 2 cups bread flour and egg. Stir the mixture with a wooden spoon until smooth. Add remaining flour, 1/2 cup at a time, mixing thoroughly after each addition, until the dough is smooth and a little tacky.
- Turn dough out onto a sheet of flour-dusted waxed paper and lightly knead to pull dough together; shape into a ball. Place dough in a large, lightly-oiled bowl, and turn to coat. Cover with a towel and let rise in a warm place for about 30 minutes.
- Line a baking sheet with parchment paper. Divide dough into thirds. Break each third into six evenly sized balls and arrange onto prepared baking sheet. Cover balls with a towel to rise further for another 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven until browned, about 15 minutes.

- Make the dough: In the bowl of a stand mixer fitted with the dough hook, combine the milk and yeast and let stand until foamy, about 10 minutes. With a fork, stir in the butter, sugar, salt and egg. With the mixer on low, add the flour and then the herbs. Increase the speed to medium and knead the dough until it is smooth and elastic, about 5 minutes.
- Lightly butter a large bowl. Transfer the dough to the bowl, then cover and set in a warm place until doubled in size, 1 to 4 hours, depending on the temperature of your house.
- Butter a 13-by-9-inch baking pan. Transfer the dough to a work surface and cut into 18 equal pieces. Roll each piece into a tight ball. Transfer the dough balls to the prepared pan, spacing them evenly (rolls will touch once they have risen). Cover and set in a warm place until doubled in size, about 1 hour.
- Finish the rolls: Preheat the oven to 400 degrees F. Very gently brush the rolls with some melted butter and sprinkle with some flaky sea salt. Bake until golden, 15 to 18 minutes. Brush with more melted butter and serve warm.

Steps:
- In bread machine pan, put all ingredients in order suggested by manufacturer.
- Select dough setting.
- When cycle is completed, turn dough onto a lightly floured surface.
- Divide dough into 24 portions.
- Shape dough into balls.
- Place in a greased 13 inch by 9 inch baking pan.
- Cover and let rise in a warm place for 30-45 minutes.
- Bake at 350 degrees for 13-16 minutes or until golden brown.
BUTTERY SOFT DINNER ROLLS
Steps:
- In a large bowl, dissolve sugar in warm water. Add yeast; let stand for 5 minutes.
- Add the canola oil, egg, salt and enough flour to form a soft dough. Knead for 5 minutes.
- Form dough into a smooth ball. Keeping the dough in the bowl, spray with non-stick spray and cover bowl with plastic wrap. Let rise in a warm place for 15 minutes.
- Punch down dough. Knead for 1 minute. Take the dough and divide it into 12 portions. Shape each ball dough by rolling it gently into a ball and tucking the sides underneath so that the roll looks smooth.
- Place rolls in a greased 9x13 pan. Brush each with egg wash on the top of each roll to give them that smooth, shiny crust.
- Let rolls rest and rise while oven is preheating to 425 degrees F, or about 10 minutes.
- Bake for 10-12 minutes, until rolls are golden brown. Let cool for 5 minutes, then brush with butter and serve.

- Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer. Cover and allow to sit for 5 minutes. *If you do not own a stand mixer, you can do this in a large mixing bowl and in the next step, mix the dough together with a large wooden spoon/rubber spatula. It will take a bit of arm muscle. A hand mixer works, but the sticky dough repeatedly gets stuck in the beaters. Mixing by hand with a wooden spoon or rubber spatula is a better choice.*
- Add the remaining sugar, egg, butter, salt, and 1 cup flour. With a dough hook or paddle attachment, mix/beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If the dough seems too wet to a point where kneading (next step) would be impossible, beat in more flour 1 Tablespoon at a time until you have a workable dough, similar to the photos and video above. Dough should be soft and a little sticky, but still manageable to knead with lightly floured hands.
- Keep the dough in the mixer and beat for an additional 3 full minutes or knead by hand on a lightly floured surface for 3 full minutes. (See video tutorial above if you need a visual of kneading dough by hand.)
- Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size. (I always let it rise on the counter. Takes about 2 hours. For a tiny reduction in rise time, see my answer to Where Should Dough Rise? in my Baking with Yeast Guide.)
- Grease a 9×13 inch baking pan or two 9-inch square or round baking pans. You can also bake the rolls in a cast iron skillet or on a lined baking sheet.*
- When the dough is ready, punch it down to release the air. Divide the dough into 14-16 equal pieces. (Just eyeball it- doesn't need to be perfect!) Shape each piece into a smooth ball. I do this entirely in my hands and you can watch in the video tutorial above. Arrange in prepared baking pan.
- Cover shaped rolls with aluminum foil, plastic wrap, or a clean kitchen towel. Allow to rise until puffy, about 1 hour.
- Adjust oven rack to a lower position and preheat oven to 350°F (177°C). (It's best to bake the rolls towards the bottom of the oven so the tops don't burn.)
- Bake for 20-25 minutes or until golden brown on top, rotating the pan halfway through. If you notice the tops browning too quickly, loosely tent the pan with aluminum foil. Remove from the oven, brush with optional honey butter topping, and allow rolls to cool for a few minutes before serving.
- Cover leftover rolls tightly and store at room temperature for 2-3 days or in the refrigerator for up to 1 week.

- Put the milk (95-115 degrees Fahrenheit) and the butter in the bowl of a stand mixer. Sprinkle the yeast over the milk. (If the yeast is not instant yeast, let it sit for 5 minutes to activate.)

- Combine 3 cups of the flour, the sugar, salt and yeast in a large bowl. Stir well and set aside.
- Combine milk, water and 1/4 coup of the butter in a saucepan and cook over medium heat until butter melts, stirring occasionally. Remove from heat and let mixture cool to 120 to 130 degrees F (49 to 54 degrees C).
- Gradually add milk to flour mixture and beat at low speed of an electric mixer for 30 seconds. Then beat for 2 minutes at high speed. Gradually stir in the remaining flour to make a soft dough.
- Turn dough out onto a lightly floured surface and knead for about 8 to 10 minutes or until dough is smooth and elastic. Place dough in a well greased bowl, turning to grease top. Cover and let rise in a warm place for about 1 hour and 15 minutes. Punch dough down, cover and let rest for 10 minutes.
- Melt remaining 1/4 cup plus 2 tablespoons butter.
- Shape dough into 40 balls and dip each one in the melted butter. Place the balls in two greased 9 inch square baking pans. Cover and let rise for 45 minutes.

- Place all ingredients in pan of bread machine, in the order listed. Process on dough cycle.
- When dough cycle finishes, remove dough to floured surface. Partition into 12 equal pieces (about 1.6 ounces each). Form into balls, and place, evenly spaced, on parchment lined 9x13-inch baking sheet.

My favorite 1-Hour Soft and Buttery Dinner Rolls recipe is easy to make by hand or with a stand mixer and absolutely heavenly served warm out of the oven.

- Heat the oven to 400°F. Grease a 9 x 13-inch baking dish with cooking spray, and set aside.
- In a microwave-safe bowl (or saucepan, see below), stir together the water and melted butter, then add in the milk and honey and stir until combined. Microwave the mixture for 1 minute and give it a stir. Continue microwaving the mixture in 15 second intervals, until it reaches 110°F. It will be warm but not hot to the touch. (*Alternately, you can heat the mixture over medium-low heat in a saucepan until it reaches 110°F.)
- Pour the liquid mixture into the large bowl of a stand mixer. Sprinkle the yeast evenly on top, give it a quick stir with a fork to combine, and let the yeast activate for 5 minutes until it is foamy.
- Add in 3 1/2 cups of flour (not all of the flour) and the salt.
- (See alternate instructions in the notes below for how to knead the dough by hand.) Use the dough-hook to mix in the dry ingredients on medium-low speed until combined. If the dough is sticking to the sides of the bowl, add in 1/4 cup more flour at a time until the dough pulls away from the sides of the bowl and is only slightly sticky to the touch. (Only use up to 4 cups of flour total.) Continue mixing on low speed for 4-5 minutes until the dough is smooth. Then form the dough into a ball with your hands and transfer it to a greased bowl.
- Cover the bowl with a damp towel or paper towel, and let it rise briefly for 15 minutes.
- Gently punch the dough down and divide into 15 equal-sized pieces. Form each piece into a ball and place the dough balls in the greased baking dish. Cover the dish again with a damp towel or paper towel and let the dough balls rise for an additional 15-20 minutes.
- Uncover and bake for 15 minutes, or until the rolls are lightly golden brown on top and cooked through.
- Transfer the baking dish to a wire cooling rack and brush the tops of the rolls with melted butter.

HERBY BUTTER DINNER ROLLS

Steps:
- Melt 1/2 stick (4 tablespoons) of the butter and brush two 12-cup muffin tins with it. Put the frozen rolls in the cups of the muffin tins. Cover and allow to rise for several hours at room temperature or in the fridge overnight.
- Melt the remaining 3 1/2 sticks butter in a skillet over medium-low heat. Mix in the rosemary, thyme and lemon zest and heat until warmed through. Lightly brush the risen rolls with the butter mixture.
- Bake the rolls according to the package directions (usually 400 degrees F for 6 to 8 minutes), until the rolls are a deep golden brown on top. Dab with more of the butter mixture and serve warm.
BUTTERY DINNER ROLLS
Steps:
- 1 . In a small saucepan, combine the milk, butter and sugar . Warm over low heat until the butter is melted . Remove from heat and set aside until cooled to room temperature . 2 . Dissolve the yeast in the warm water in a large measuring cup . Let stand 5 minutes, or until mixture is foamy . Put the flour and salt in the work bowl of a Cuisinart® Food Processor fitted with the dough, or metal chopping blade and process for 10 seconds . Add the melted butter mixture and egg to the yeast/water mixture . With the machine running, slowly add the liquids through the feed tube and process until a dough ball forms . Continue pro- cessing for 45 seconds to knead the dough . Shape the dough into a smooth ball, put it in a clean mixing bowl and cover with plastic wrap . Let rise in a warm place until the dough has doubled in size, about 60 minutes . 3 . Lightly butter a 9-inch round baking pan . Punch down the dough and divide into 12 equal pieces (about 1½ to 1¾ ounces each) . Roll into smooth rounds and arrange in the prepared pan . 4 . Put the pan onto the rack in Position 1 . Select Proof with temperature set to 90°F for 45 minutes . Rolls should be about doubled in size . 5 . Remove pan and preheat oven by selecting Bake with High Speed fan at 350°F for 15 to 20 minutes . While the oven is heating, melt the remaining tablespoon of butter and combine with the remaining tablespoon of milk in a small bowl . Gently brush the tops of the rolls with butter/milk mixture . Once the oven beeps to signal that it is preheated, put the pan into the oven in Position 1 and bake rolls for 15 minutes, or until golden brown and an internal temperature of 190°F is reached . 6 . Remove rolls from the pan and cool slightly before serving .

BUTTER HERB GLAZE FOR DINNER ROLLS
I was looking for an easy glaze to dress up store bought dinner rolls. I made this for a wedding recently and they were a big hit. My husband claims he will not eat plain rolls again. This really dresses up plain Costco rolls and makes a great substitution for garlic bread if you are serving a lot of people. Enjoy!

- In a small saucepan, over medium heat, combine cream, milk, and 6 tablespoons of butter. Stir constantly until the butter melts and the liquid reads 125F on thermometer, Set aside.
- In a large bowl, combine flour, yeast sugar and salt. Whisk until well blended.
- When milk mixture reads 120F pour it over flour mixture, along with egg yolks. Mix with your hands. Turn onto lightly floured surface and knead until no longer sticky, about 10 min.
- Shape into ball, place in lightly greased bowl. Cover tightly with plastic wrap and let rise until doubled (45-55 min).
- Lightly grease 9X13 baking dish. Turn dough out onto clean work surface and press lightly to deflate. Divide dough into 16 pieces. Roll each into a ball in small, tight circles with seam at bottom.
- Put ball in baking dish, seam side down. Repeat for rest. Cover baking dish with plastic wrap and let rise until they are 1 1/2 times original size and have risen 3/4 of the way up the baking dish.
- Bake until puffed and brown, about 20-25 min at 375°F Brush tops with melted butter.
