THE BEST BUTTERMILK WAFFLES

The Best Buttermilk Waffles image

In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield about 6 waffles

Number Of Ingredients 11

1 3/4 cup all-purpose flour (see Cook's Note)
2 tablespoons granulated sugar
1 3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 3/4 cup well-shaken buttermilk
2 large eggs
2 teaspoons vanilla extract
1 stick unsalted butter, melted and slightly cooled
Nonstick cooking spray
Maple syrup, jam, berries or yogurt, for serving

Steps:

  • Preheat a waffle iron to medium-high.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  • In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.
  • Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. (Take into consideration that the batter will spread once the lid is closed.) Close the iron and cook until the waffles are a deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron has a well-seasoned or nonstick surface, it may not be necessary to spray it between each batch.)
  • Serve the waffles immediately with butter, syrup, jam, berries or yogurt.

SOUTHERN BUTTERMILK BISCUITS

Southern Buttermilk Biscuits image

These buttermilk biscuits are authentic. This recipe came from my great-great-grandmother, and was handed down to all the women in my family, and we are all Southern. I am the first one to commit the sin of using a food processor (lol) but I find it works very well. I would put these biscuits up against anyone's - they are perfect in every single way. I hope you all enjoy them.

Provided by P48422

Categories     Breads

Time 22m

Yield 10 biscuits

Number Of Ingredients 6

2 cups unbleached all-purpose flour, plus more for dusting the board (if you can get White Lily flour, your biscuits will be even better)
1/4 teaspoon baking soda
1 tablespoon baking powder (use one without aluminum)
1 teaspoon kosher salt or 1 teaspoon salt
6 tablespoons unsalted butter, very cold
1 cup buttermilk (approx)

Steps:

  • Preheat your oven to 450°F.
  • Combine the dry ingredients in a bowl, or in the bowl of a food processor.
  • Cut the butter into chunks and cut into the flour until it resembles course meal.
  • If using a food processor, just pulse a few times until this consistency is achieved.
  • Add the buttermilk and mix JUST until combined.
  • If it appears on the dry side, add a bit more buttermilk. It should be very wet.
  • Turn the dough out onto a floured board.
  • Gently, gently PAT (do NOT roll with a rolling pin) the dough out until it's about 1/2" thick. Fold the dough about 5 times, gently press the dough down to a 1 inch thick.
  • Use a round cutter to cut into rounds.
  • You can gently knead the scraps together and make a few more, but they will not be anywhere near as good as the first ones.
  • Place the biscuits on a cookie sheet- if you like soft sides, put them touching each other.
  • If you like"crusty" sides, put them about 1 inch apart- these will not rise as high as the biscuits put close together.
  • Bake for about 10-12 minutes- the biscuits will be a beautiful light golden brown on top and bottom.
  • Do not overbake.
  • Note: The key to real biscuits is not in the ingredients, but in the handling of the dough.
  • The dough must be handled as little as possible or you will have tough biscuits.
  • I have found that a food processor produces superior biscuits, because the ingredients stay colder and there's less chance of overmixing.
  • You also must pat the dough out with your hands, lightly.
  • Rolling with a rolling pin is a guaranteed way to overstimulate the gluten, resulting in a tougher biscuit.
  • Note 2: You can make these biscuits, cut them, put them on cookie sheets and freeze them for up to a month.
  • When you want fresh biscuits, simply place them frozen on the cookie sheet and bake at 450°F for about 20 minutes.

BUTTERMILK BREAD

Buttermilk Bread image

Make and share this Buttermilk Bread recipe from Food.com.

Provided by P48422

Categories     Yeast Breads

Time 3h45m

Yield 2 loaves

Number Of Ingredients 8

1/4 cup water
1 tablespoon active dry yeast (not instant!)
2 cups buttermilk
4 tablespoons unsalted butter
4 -5 cups bread flour (can substitute all-purpose flour)
1 teaspoon kosher salt
1/4 teaspoon baking soda
2 tablespoons sugar

Steps:

  • Mix the yeast and water in the bowl of your mixer and let proof for 5-10 minutes.
  • Meanwhile, heat the buttermilk and butter over low heat until the butter melts.
  • The mixture will look badly curdled- don't worry, that's what happens when buttermilk is heated.
  • It will be fine.
  • Mix the salt, baking soda and sugar into 1 cup of the flour.
  • Pour over the yeast, and mix until thoroughly combined.
  • Put the bowl on your mixer with the dough hook attachment, add another cup of flour and mix until the flour is incorporated.
  • Keep adding flour until the dough comes together and is no longer sticky.
  • Then let the dough knead in the machine 5-10 minutes.
  • Take out of the bowl and finish kneading by hand until the dough is smooth.
  • Turn into a buttered bowl, cover with plastic wrap, then a towel, and then let it sit to rise until doubled.
  • Punch down the dough, divide and shape into 2 loaves, then place in greased loaf pans.
  • Set aside for the second rising.
  • Heat the oven to 350 degrees F.
  • Bake the loaves until done, about 30-45 minutes.

HOMEMADE BUTTERMILK

Homemade buttermilk image

Making homemade buttermilk is surprisingly easy. Use it in pancakes and cakes, as a marinade for fried chicken or for salad dressings

Provided by Good Food team

Time 5m

Yield Makes 250ml

Number Of Ingredients 2

250ml whole or semi-skimmed milk
1 tbsp lemon juice or vinegar

Steps:

  • Mix the milk and lemon juice in a jug. Leave at room temperature for 5-10 mins until the milk has thickened slightly. It won't thicken as much as traditional buttermilk, but it's a great substitute when making scones, soda bread or pancakes. Don't worry if the mixture looks curdled or has small white lumps in it, it will be fine once cooked.

  • Buttermilk Skillet Cornbread with Tomatoes and Scallions. Think of this as the dinner-party-ready upgrade to traditional cornbread. The buttermilk makes it tangy and tender, and the colorful toppings make it shine.
  • Cinnamon Sheet Cake with Cider Frosting. Little known fact: Along with adding tang, the acid in buttermilk reacts with baking soda to give cakes like this one their lofty rise.
  • Nutella Pancakes. It’s the buttermilk that makes these decadent pancakes pillowy soft and fluffy (and the Nutella that makes them irresistible).

  • Stir together buttermilk, sugar, and yeast in a medium bowl. Let stand until frothy and bubbly on surface, about 10 minutes. Meanwhile, combine all-purpose flour, spelt flour, and salt in the bowl of a stand mixer fitted with the whisk attachment; beat on low speed until combined, about 20 seconds
  • Make a well in center of flour mixture; pour in buttermilk mixture. Beat on medium speed until batter is smooth and no lumps remain, about 2 minutes. Stir together 2/3 cup warm water and baking soda in a small bowl. Reduce mixer speed to medium-low; gradually beat in warm water mixture until batter is smooth and slightly thicker than buttermilk, about 30 seconds. If needed, add up to 2 additional tablespoons warm water, 1/2 tablespoons at a time, to thin batter to proper consistency. Cover bowl loosely with plastic wrap, and let stand at room temperature until surface is very bubbly and batter has doubled in volume, about 45 minutes.
  • Heat a well-seasoned 12-inch cast-iron skillet over low. Brush skillet with 2 teaspoons oil; coat insides of 4 (3 1/8-inch) crumpet rings with cooking spray, and place in skillet. Let rings preheat until hot, 2 to 3 minutes. Carefully spoon about 1/3 cup batter into each ring, filling each ring halfway. Cook, undisturbed, until surface is covered in large holes and batter looks dry and slightly set around edges, about 8 minutes. Using tongs, carefully lift ring molds to remove. Using a small spatula, gently flip crumpets. Cook until bottoms are golden brown, 1 to 2 minutes.

  • Milk and lemon juice. Lemon juice is an acid that you can use instead of vinegar to make buttermilk. To make 1 cup (240 mL) of buttermilk substitute, add 1 tablespoon (15 mL) of lemon juice to a liquid measuring cup.
