- Heat oven to 450°F. In medium bowl, mix flour, sugar, baking powder, salt and baking soda. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like fine crumbs. Stir in buttermilk until dough leaves side of bowl (dough will be soft and sticky).
- Place dough on lightly floured surface. Knead lightly 10 times. Roll or pat 1/2 inch thick. Cut with floured 2- to 2 1/4-inch round cutter. On ungreased cookie sheet, place biscuits about 1 inch apart for crusty sides, touching for soft sides.
- Bake 10 to 12 minutes or until golden brown. Immediately remove from cookie sheet to cooling rack. Serve warm.

- Preheat the oven to 450 degrees. Line a baking sheet with parchment.
- Whisk the flour, baking powder, baking soda, sugar and salt together in a medium bowl. Rub 2 tablespoons of the cold butter into the flour with your fingertips until completely absorbed. Work the remaining 5 tablespoons of cold butter into the flour with your fingertips until pea-sized bits of butter remain. Use a rubber spatula to stir the buttermilk into the flour until the mixture comes together into a shaggy dough.
- Dust a cutting board or work surface with flour and turn the dough out onto it. Pat the dough into a 1/2-inch thick rectangle. Fold dough in thirds, like a letter, and then pat into a 3/4-inch thick rectangle. Cut biscuits out using a 2 1/2-inch round biscuit cutter and put on the prepared baking sheet. Press together the remaining scraps of dough and cut out more biscuits. Brush the biscuit tops with buttermilk.
- Bake until the tops are lightly browned, about 15 minutes. Cool on the pan at least 5 minutes. Serve warm or at room temperature.

- Preheat oven to 450 degrees F.
- In the food processor, put the flour, baking powder, baking soda, and salt. Pulse the food processor to thoroughly mix the dry ingredients.
- While pulsing the food processor, drizzle in the canola oil. Keep on pulsing until the oil appears to be evenly distributed. You may have to stop and scrap down the sides a couple of times to ensure it is thoroughly worked into the flour mixture.
- After the oil is worked in, add the buttermilk. Keep on rapidly pulsing until the dough becomes a lump.
- Remove the dough from the food processor and form it into a flatten ball on a floured surface. Roll out the dough until it is approximately 1/2 inch thick. Using a biscuit cutter cut out the biscuits and put them on an ungreased baking sheet. Space the biscuits about an inch apart. Pull together the scraps and re-roll for more biscuits.
- Bake for approximately 15 minutes or until nicely browned.
