Butterbeer is a must for any Harry Potter event, and Butterbeer Cookies are the perfect dessert! These cookies have big butterbeer flavor in every bite.

- Preheat the oven to 375° F. In your stand mixer fixed with the paddle attachment, combine butter or margarine and both sugars; add eggs and vanilla.
- Whisk salt, baking soda, and pudding powder together in a separate bowl. Add to the wet mixture then slowly add flour.
- With a wooden spoon, add chocolate chips and mix in well. Cover and place in the fridge for 15-20 minutes to chill.
- Bake on a greased baking sheet 7-9 minutes, or until light golden brown on top. Move to a cooling rack to cool.
HARRY POTTER'S BUTTERBEER COOKIES
These Harry Potter inspired Butterbeer Cookies are a sweet old-fashioned blend of vanilla and butterscotch loaded up with toffee bits. Baked to perfection with a soft chewy center and lightly crisp edges, they won't last long!

- In a large bowl or stand mixer fitted with a paddle attachment, cream the butter and sugars together until smooth. Scrape down the sides of the bowl, if needed.
- Add the pudding, eggs, additional egg yolk, vanilla, and imitation butter. Beat for about one minute on medium speed.
- In a separate bowl, combine flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients a 1/2 cup at a time and mix until combined.
- Mix in the toffee chips.
- Form the dough into a giant ball and wrap tightly in plastic wrap. Chill the dough for at least two hours. Remove the dough a little while before baking so the dough can soften a bit and is easier to work with.
- Scoop the dough using a medium cooking scoop and roll the dough between your hands to form round balls of dough and place onto a nonstick baking sheet about two inches apart. Top with yellow sprinkles, if desired.
- Bake at 350 F for 10-13 minutes.
- Cool on the pan for a couple of minutes before transferring to a cooling rack.

- Combine brown sugar and water in a small saucepan; bring to a gentle boil and cook stirring often until reads 240 degrees on a candy thermometer.
- Stir in the butter, salt, vinegar and 1/4 cup of heavy cream; set aside to cool to room temperature.
- Once it is cool, stir in the extract.
- Combine 2 tablespoons of the sugar mixture and the remaining 1/2 cup of heavy cream; beat with an electric mixer 2 or 3 minutes until just thickened but not completely whipped.
- To serve, divide the brown sugar mixture between 4 tall glasses (about 1/4 cup each).
- Add 1/4 cup of cream soda to each glass, stirring to combine.
- Fill each glass nearly to the top with the additional soda.
- Spoon whipped topping over each.

- Combine the brown sugar with 1/2 cup water in a small saucepan over medium-high heat. Cook, stirring occasionally, until the mixture boils and the sugar dissolves, 2 to 3 minutes. Transfer to a small bowl or liquid measuring cup and refrigerate until very cold, about 1 hour.
- Beat the heavy cream and confectioners' sugar in a large bowl with a mixer on medium-high speed until soft peaks form. Beat in the butterscotch sauce and salt until medium peaks form. Cover and refrigerate until ready to use.
- Stir the butter extract and vanilla extract into the cold brown sugar syrup. For each drink, combine 1 cup seltzer with 3 to 4 tablespoons of the brown sugar syrup in a chilled glass. Top with the butterscotch whipped cream.

- 1. Mix the first seven ingredients by hand until batter is smooth and shiny.
- 2. Drop by tablespoon full onto parchment lined cookie sheets and bake for 10 minutes at 350*. They usually will not look done at 10 minutes, but trust the timing. Pull them out and let them sit on a rack to cool and they will firm up and be fine.
- 3. Once cooled, make the icing drizzle ~ 1 c powdered sugar, 1 tbsp vanilla, 2 tbsp french vanilla coffee creamer. Drizzle over cooled cookies.

After a spring break trip to Universal Studios® Wizarding World of Harry Potter, I was feeling nostalgic and wanted to try my hand at making a butterbeer-flavored cookie. After a few test batches, this recipe was finally approved by my family of extremely picky Harry Potter fans as being the perfect cookie recreation: lightly butterscotchy, with vanilla and brown sugar accents, just like the Wizarding World drink!

- Beat butter, brown sugar, and white sugar together in a large bowl until creamy using an electric mixer. Add egg, maple syrup, sour cream, vanilla butter and nut flavoring, and pumpkin pie spice. Beat again until combined. Add baking soda and slowly mix in flour, 1/2 cup at a time; dough will be sticky.
- Chill dough in the refrigerator for 30 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Pour 2 tablespoons white sugar into a shallow bowl. Roll dough into walnut-sized balls using your hands, roll balls in sugar, and place on an ungreased cookie sheet. Flatten each cookie slightly using your palm, and leave space between each, as cookies will spread during baking.
- Bake in the preheated oven until edges are golden brown, 8 to 10 minutes. Cool on a rack.
