BUTTER LETTUCE SALAD RECIPE

This Butter Lettuce Salad is packed with vegetables and drizzled with lemon salad dressing. It comes together in 20 minutes. Serve it with any of your meat dishes or by itself for a light lunch or dinner.

½ cup olive oil
4 tablespoons lemon juice
2 small cloves of garlic minced
1 teaspoon dijon mustard
1 teaspoon kosher salt
½ teaspoon black pepper
Water
1 tablespoon of Kosher salt
1 bunch of asparagus (- rinsed and cut into 2-inch small pieces approximately 1 lb.)
1 ½ cups of peas (fresh or frozen)
2 heads of Butter Lettuce (leaves gently removed, rinsed and dried)
1 medium size English cucumber (sliced thinly approximately 1 cup)
4-5 radishes (sliced thinly)
1 cup sliced almonds (lightly toasted)
1 ripe avocado (cut into cubes)
1 cup shredded parmesan cheese (optional)

Steps:

  • Make the dressing: Place all the ingredients in a jar and give it a vigorous shake. Alternatively, you can place everything in a small bowl and whisk until emulsified.
  • To Blanch asparagus: Fill a large pot with water and a tablespoon of salt and bring it to a boil. Meanwhile, fill a large bowl with water and ice and set it aside. Place asparagus in the hot boiling water and let cook for 3-4 minutes.
  • While it is cooking, fill a bowl with cold water and add some ice in it.
  • Using a slotted spoon transfer the asparagus into the bowl with ice water. Do not discard the boiling water.
  • To blanch peas: Add the peas into the now empty pot with the boiling water. Cook for 2-3 minutes or until the peas are softened to your liking. Remove with a slotted spoon and place in the ice water (where the cooked asparagus is)
  • Drain both vegetables and set them aside.
  • To assemble the salad: Place the butter lettuce leaves in a large salad bowl. Add in blanched asparagus and peas, cucumber slices, radish slices, sliced almonds, avocado cubes, and parmesan cheese, if using.
  • Drizzle with the lemon salad dressing and give it a gentle toss. Serve.

2 tablespoons olive oil
2 tablespoons fresh lemon juice
½ teaspoon white wine vinaigrette
1 teaspoon maple syrup
¼ teaspoon dijon mustard
½ teaspoon minced garlic
Pinch salt
Pinch pepper
3 medium shallots (thinly sliced)
¼ cup olive oil
⅓ cup slivered almonds
½ tablespoon maple syrup
1 head butter lettuce (torn into large pieces)
1 cup thinly sliced fennel
1 small honey crisp apple (thinly sliced)
1 small red bell pepper (minced)
2 tablespoons grated parmesan cheese

Steps:

  • First, prepare vinaigrette. Add olive oil, lemon juice, vinegar, maple syrup, mustard, garlic, salt, and pepper to a mason jar. Cover and shake. Set aside.
  • Prepare fried shallots. Line a plate with a paper towel. Set aside.
  • Heat a large skillet over medium/low heat. Add ¼ cup olive oil. When olive oil is fragrant add the shallots. Cook the shallots for 15-20 minutes stirring occasionally until the shallots turn a golden brown color.
  • Meanwhile, prepare the candied almonds. Heat a separate small skillet over medium/low heat. Add almonds and maple syrup to the skillet and toss so all the almonds are covered with maple syrup. Let the almonds cook for 10-12 minutes or until they start to brown. Remove from heat and transfer them in a separate plate (they will harden as they cool). Set aside.
  • Use a slotted spoon to remove the browned shallots from the pan and place the shallot on top of the paper towel-lined plate. Set aside.
  • Assemble the salad. Place the butter lettuce in a large salad bowl. Spread the fennel, sliced apple, bell pepper, and almonds over the lettuce. Drizzle the vinaigrette over the ingredients and toss. Lastly, sprinkle the salad with fried shallots and parmesan cheese.

1 cup dry white wine
1 shallot, thinly sliced
1 bay leaf
1/4 teaspoon sugar
Kosher salt and freshly ground pepper

4 tablespoons cold unsalted butter, cut into pieces
2 heads butter or Bibb lettuce, leaves separated
1/4 cup hazelnuts, toasted and chopped
2 tablespoons coarsely chopped fines herbes (chives, parsley and chervil)

Steps:

  • Bring the wine, shallot, bay leaf, sugar, 1/2 teaspoon salt and 1/4 teaspoon pepper to a simmer in a skillet over medium-high heat; cook until reduced to about 2 tablespoons, 8 to 10 minutes. Remove from the heat and discard the bay leaf. Whisk in the butter and 1 teaspoon water until smooth.
  • Combine the lettuce, hazelnuts and herbs in a large bowl. Add the warm dressing and toss to coat. Season with salt and pepper and serve immediately.

Half a 6-ounce ripe red Bartlett pear, peeled, cored and diced
1/2 cup coarsely crumbled gorgonzola cheese
1/4 teaspoon kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
1 head butter lettuce, cut into 4 wedges
1 avocado, halved, pitted, peeled and diced
1/2 a large ripe red Bartlett pear, quartered lengthwise, cored and thinly sliced
1/3 cup hazelnuts (preferably skinned), toasted and roughly chopped
1/3 cup sweetened dried cranberries

Steps:

  • For the dressing: In a blender, blend together the oil, pear nectar, balsamic vinegar, lemon juice, mustard, diced pear, cheese, salt and pepper until smooth.
  • For the salad: Place the lettuce wedges on 4 salad plates. Arrange the avocado, pear slices, hazelnuts and cranberries around the lettuce. Drizzle with the dressing and serve.

1 large head butter or bibb lettuce
1 small jicama, peeled and cut into 1/4-inch matchsticks (roughly 1/2 cup)
1/3 cup pomegranate seeds
1 cup large shavings Asiago or Parmesan cheese
House Dressing
2 1/2 tablespoons crème fraîche
2 tablespoons extra-virgin olive oil
1 teaspoon honey
1 scallion, white part only, finely chopped
2 tablespoons apple cider vinegar
1/2 teaspoon sea salt
1/2 teaspoon fresh ground pepper

Steps:

  • To make the dressing, whisk together the crème fraîche, olive oil, and honey. Add the scallion, vinegar, salt, and pepper and whisk again. Taste and add salt and pepper to taste, or a touch more vinegar if you prefer your dressing on the acidic side.
  • Gently pull the lettuce leaves from the head, making sure they are dry. Gently toss the leaves and jicama with the dressing. Assemble in a stack on each of 4 plates, starting with the largest leaves on the bottom to create a base. Garnish each salad with a quarter of the pomegranate seeds and the cheese shavings. Serve immediately.

GORGONZOLA SAUCE

4 cups heavy cream
3 to 4 ounces crumbly Gorgonzola (not creamy or "dolce")
3 tablespoons freshly grated Parmesan

Steps:

  • Bring the heavy cream to a full boil in a medium saucepan over medium-high heat, then continue to boil rapidly for 45 to 50 minutes, until thickened like a white sauce, stirring occasionally.
