1 pound ham steak, from packaged meats case of market
1 tablespoon (1 turn around the pan) olive oil
2 tablespoons butter
12 extra large eggs
1/2 cup milk or half-and-half
Salt and pepper
2 cups (8 to 10 ounces) Danish Fontina, shredded

Steps:

  • Preheat oven to 400 degrees F.
  • Trim any connective tissue and all fat off ham steak. Mince the meat into very small bits and set aside.
  • Heat a 12-inch nonstick skillet with oven safe handle over moderate heat. Add oil and 1 tablespoon butter to the skillet and coat sides and bottom of pan evenly with melted butter and oil mixture. Add ham bits to the pan and saute 3 minutes to brown them a bit and render some of the moisture in the meat.
  • Whisk together eggs and milk or half-and-half. Break off tiny pieces of remaining 1 tablespoon butter and drop them into beaten eggs. Season eggs with a little salt and pepper and whisk again to combine. Pour eggs into skillet over ham. Stir eggs gently to evenly distribute bits of ham throughout the eggs.
  • As eggs set, lift up bottom skin that has formed and allow uncooked eggs to settle. Keep doing this as eggs brown until the eggs begin to set. Transfer the pan to the oven, and allow the frittata to cook 10 minutes, or until golden on top. Add a generous layer of shredded fontina to the frittata and leave in oven another 3 to 5 minutes, or until cheese is melted and begins to bubble and brown. Serve frittata wedges directly from the skillet with a pie server.

A Delia Smith creation that she describes as a 'hot, home-made sandwich'. I love everything to do with hot cheese and this is no exception. The focaccia dough is made in a bread machine, stuffed and then baked. Any number of fillings would be great here. Use your imagination--mushrooms, artichokes, salami, bacon--the possibilities are endless!

Number Of Ingredients 12

250 g bread flour
1 teaspoon easy-blend dry yeast
150 ml water
1 tablespoon olive oil
1 teaspoon salt
175 g parma ham
350 g Fontina cheese or 350 g gruyere cheese
3 tablespoons fresh sage leaves, chopped
fresh ground black pepper
15 small sprigs fresh rosemary
2 tablespoons olive oil
1 teaspoon sea salt

Steps:

  • Pop the ingredients for the dough into a bread machine in the order recommended by the manufacturer. Set to dough and start.
  • Towards the end of the time, prepare the filling by slicing the cheese thinly and separating the slices of ham.
  • When the dough is ready, remove from the machine, turn it out onto a lightly foured surface, divide it into two and then roll out one half to form a rough rounded rectangle approx 28 x 20cm.
  • Place the rolled out dough onto a baking tray or pizza stone and arrange the slices of ham on top, making sure that they go right up the edges. Follow this with the cheese, then scatter the sage and season well with the pepper. Roll out the remaining dough, lay it on the top of the other half and pinch the edges together to completely enclose the filling. Cover with a clean cloth and leave to puff up for about 30 minutes.
  • Preheat the oven to Gas 6/400/200 degrees. When the dough is ready, make about 15 little dimples in it with your finger and press in the sprigs of rosemary. Finally drizzle over the olive oil and sprinkle with salt.
  • Bake for 20-25 minutes, until the dough is crisp and golden.
  • Serve straight from the oven, cut into wedges or squares.

1/2 teaspoon salt, divided
3/4 teaspoon pepper, divided
1 large egg
1-1/2 cups panko bread crumbs
1 teaspoon paprika
4 boneless skinless chicken breast halves (6 ounces each)
1 tablespoon olive oil

Steps:

  • Preheat oven to 375°. In a bowl, mix the first six ingredients; stir in 1/4 teaspoon each salt and pepper. In a shallow bowl, whisk egg and the remaining salt and pepper. In another shallow bowl, toss bread crumbs with paprika., Carefully pound chicken breasts with a meat mallet to 1/4-in. thickness. Spread cheese mixture over chicken. Roll up chicken from a short side; secure with toothpicks., Dip chicken in egg, then coat with crumbs. Place in a foil-lined 15x10x1-in. baking pan, seam side down. Drizzle tops with oil., Bake, uncovered, 30-35 minutes or until golden brown and chicken is no longer pink. Let stand 5 minutes; discard toothpicks before serving.

1 loaf frozen bread dough
7 ounces gorgonzola, Crumbled
7 ounces mozzarella cheese, Slice
1 1/2 cups spinach, Sauteed
4 tablespoons olive oil
fresh rosemary
coarse salt

Steps:

  • Thaw dough.
  • Preheat the oven to 400 degrees F.
  • Divide the dough into two.
  • On a floured surface, either pat down or roll into two 10-11 inch circles.
  • Place one circle on an oiled cookie sheet, and then sprinkle the cheese evenly over its surface.
  • Spread the spinach across the top, and then cover with the remaining circle.
  • Using your fingertips, gently press the edges together.
  • Create dimples across the top surface using your fingertips, and drizzle over with the oil. Sprinkle the salt and rosemary on top.
  • Bake for about 30 minutes or until golden brown.
  • Serve warm.
  • Variation: Try stuffing the focaccia with thinly sliced tomatoes and basil leaves, shredded cooked ham and Fontina cheese, or simply a mixture of your favorite Italian cheeses.

3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper

Steps:

  • Preheat broiler. Arrange mushrooms in a single layer in a baking dish. Drizzle with oil, and sprinkle with 1/2 teaspoon salt and some pepper. Broil for 2 minutes. Remove dish from oven, and add thyme and cheese. Broil for 1 minute. Serve warm.

We've used ham, cheese and sage here, but any kind of filling at all would be fine, including vegetables such as mushrooms or preserved artichokes, or salami - the permutations are endless.

9 oz (250 g) strong white bread flour, plus a little extra for dusting
1 level teaspoon easy-blend dried yeast
1 dessertspoon olive oil, plus a little extra for greasing
1 level teaspoon salt
6 oz (175 g) sliced Parma ham
12 oz (350 g) Fontina (or Gruyère)
3 tablespoons chopped fresh sage leaves
freshly milled black pepper
15 small sprigs fresh rosemary
2 tablespoons olive oil
1 level teaspoon sea salt

Steps:

  • MethodPop the ingredients for the dough, including 5 fl oz (150 ml) water into the breadmaker in the order your manual instructs. Set it to the dough only setting (as the focaccia is going to be baked in the oven) and press the start button. Meanwhile, towards the end of the time, prepare the filling ingredients, separating the slices of ham and cutting the cheese into thin slices. When the dough is ready, remove it from the machine, turn it out on to a flat, lightly floured surface, divide it into two and then roll out one half to form a rough, rounded rectangle about 11 x 8 inches (28 x 20 cm). Then place it on a baking tray (or pizza stone) and arrange the slices of ham on top, making sure they go right up to the edge. Follow this with the cheese, right up to the edge again, then scatter over the sage. Now give it a good seasoning of freshly milled black pepper. Then roll out the remaining dough, lay it on top of the first, pinching the edges together all the way round to completely enclose the filling. Now cover it with a clean tea cloth and leave it to puff up again for about 30 minutes. Meanwhile, pre-heat the oven to gas mark 6, 400°F (200°C). When the dough is ready, make 15 little dimples in it with your finger and press in the sprigs of rosemary. Finally, drizzle over the olive oil and sprinkle with the salt. Bake for 20-25 minutes, or until the dough is crisp and golden. Serve the focaccia, cut into squares or wedges, straight from the oven.

TOPPING:
1-1/2 teaspoons olive oil, divided
8 fresh sage leaves

  • In a large bowl, dissolve yeast in warm water. Stir in honey; let stand for 5 minutes. Add 3/4 cup all- purpose flour, whole wheat flour, oil, minced sage and salt. Beat on medium speed for 3 minutes or until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Cover and let rest for 5 minutes. Place 1 tablespoon olive oil in a 10-in. cast-iron or other ovenproof skillet; tilt pan to evenly coat. Add dough; shape to fit pan. Cover and let rise until doubled, about 30 minutes. , With fingertips, make several dimples over top of dough. For topping, brush dough with 1 teaspoon oil. Top with sage leaves; brush leaves with remaining oil. Sprinkle with cheese. Bake at 400° until golden brown, 10-15 minutes. Remove to a wire rack. Serve warm.,
