I make this at Christmas Time every year for my cookie platters that I give away. I've made it with plain graham crackers, chocolate graham crackers, town house and ritz crackers. I prefer the town house or ritz crackers the best as it is just a little bit "less" sweet.

1 (16 ounce) box town house crackers or 1 (16 ounce) box Ritz crackers
1/2 cup butter
1/2 cup margarine
1/2 cup sugar or 1/2 cup Splenda granular
1 cup pecans or 1 cup walnuts

Steps:

  • Line a large lipped cookie sheet with foil.
  • Place crackers end to end on cookie sheet.
  • Combine other ingredients (except nuts) in saucepan and bring to a boil.
  • Boil for 2 minutes.
  • Pour over crackers.
  • Sprinkle with chopped nuts.
  • Bake at 350 degrees for 12-14 minutes.
  • When cool, break apart.

This is the recipe I've been waiting for my whole life! I got this recipe from Peter Reinhart's book Artisan Breads Every Day. I have never found a cracker recipe that I've been happy with before this one. All other recipes make gritty or soft crackers. They were never flaky or crisp. That has all changed now! Try these and you'll agree. Just make sure to follow the recipe to the letter. Don't substitute different flours or you'll be disappointed. Ingredients are listed by volume for beginners and by weight (grams) for the more advanced cooks out there.

1 1/4 cups all-purpose flour
1 cup cake flour
1 1/2 teaspoons kosher salt
1 tablespoon sugar
3/4 teaspoon baking powder
1/2 teaspoon garlic powder
10 tablespoons unsalted butter, melted
1 egg (50 g)
6 tablespoons milk
1 egg, beaten
2 tablespoons water
salt
1/4 cup butter, melted

Steps:

  • Combine all dough ingredients in a large mixing bowl. If using a mixer, use the paddle attachment and mix on low speed for one minute. If mixing by hand, use a large wooden spoon and mix for one minute. The dough should form a firm ball and shouldn't be sticky. Mix in extra flour or milk as needed to adjust texture.
  • Transfer dough to a lightly floured surface and knead for 30 seconds to make sure all ingredients are evenly incorporated. The dough should be slightly tacky but not sticky.
  • Preheat the oven to 400 degrees Fahrenheit, or 350 degrees Fahrenheit for a convection oven. Line 2 baking pans with parchment paper or silicone baking mats. Do not oil the paper or silicone mats.
  • Use a rolling pin to roll out the dough on a floured work surface, frequently lifting the dough with a metal pastry scraper or bowl scraper to be sure it isn't sticking and dusting with more flour underneath if need be. You can flip the dough over and continue rolling with the bottom side up. The goal is to roll it to about 1/8 inch thickness. Use a fork or dough docker and poke holes all over the surface of the dough. Brush the surface of the dough with an even coating of the egg wash and sprinkle with fine salt.
  • Use a small cookie cutter dipped in flour to make round crackers or cut into squares or diamonds with a pizza cutter. Place the crackers about 1/2 inch apart on the prepared pans. Gather any scrap dough and repeat the rolling out, egg wash and salting process until all dough is formed into crackers.
  • If making more than one pan of crackers you can bake them all at once. Place the pans on different shelves and bake for 8 minutes, rotate the pans and bake for an additional 8 to 12 minutes, or until the crackers are firm and lightly golden. Remove the pans from the oven and brush the hot crackers with the melted butter. Immediately, turn off the oven, then return the pans to the hot oven for 3 to 5 minutes. Remove the pans from the oven and let the crackers cool on the pan. The crackers are done when they have a rich golden brown color and are fairly dry and crisp. If they don't snap cleanly after they cool, return the pan to a hot oven for a few more minutes until they dry sufficiently to snap when broken.

SIMPLE ROMAN PIZZA DOUGH

I found this recipe in Peter Reinhart's book American Pie, and I adapted it for the bread machine. He has traveled the globe searching for the best pizza around. Peter is a master breadmaker, and he probably would not approve of making this dough with the bread machine. Alas, I lack the patience and strength in my hands to knead dough. If you want to make this dough the old fashioned way, I encourage you to get a copy of Peter's wonderful book. The way I prepare it, though, makes the best pizza dough I have ever had. It is thin and flavorful.

1 3/4 cups luke warm water, plus
2 tablespoons water, luke warm
3 1/4 teaspoons kosher salt
5 cups unbleached flour
1/4 cup semolina flour
1 1/2 teaspoons bread machine yeast

Steps:

  • Set your bread machine to the dough setting for a 1 lb. loaf.
  • Place the ingredients in the breadmaker in the order listed above. Start the bread machine.
  • After the dough cycle is complete, transfer the dough to a floured counter and form it into a ball.
  • Place the ball in a bowl that has been coated with olive oil. Roll the ball around to coat with olive oil.
  • Let the dough sit at room temperature for 30 minute Cover and put it in the refrigerator over night.
  • The next day, divide the dough into 6 balls. I use a scale and weigh the dough, but you can eyeball it if you like. Do not over work the dough.
  • Rub each ball with olive oil.
  • If you do not plan to use each ball the same day, place each ball in individual freezer bags and refrigerate (up to 2 days) or freeze (up to 3 months).
  • Allow the dough to sit at room temperature for 2 hours before making the pizza.
  • Roll on a floured surface with a rolling pin and also stretch with your hands to shape the dough.
  • Heat the oven to 425 deg.
  • I prefer to use a pizza stone. Sprinkle the stone with semolina and place it in your oven as it heats up.
  • Roll the dough with a rolling pin and you may also stretch it with your hands. Once it is shaped, lightly coat the dough with olive oil to prevent your dough from soaking up all of the sauce.
  • Top with sauce and ingredients. I would only use two ingredients since the dough is thin.
  • Bake for 10 minute.
  • Top with provolone or mozzerella cheese.
  • Bake another 5 minute or until the bottom is lightly brown.

1 1/2 cups buttermilk
1/3 cup cream of wheat (1 minute kind)
1 egg
1/2 teaspoon salt
1/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup vegetable oil

Steps:

  • Preheat griddle.
  • Spray with pan release.
  • Combine all ingredients in bowl and mix until smooth.
  • Pour batter by 1/3 cupsful onto the griddle and cook for 1 - 2 minutes per side or till brown.
  • Makes 8 - 10 pancakes.

Peter Reinhart's lavash recipe (in The Baker's Apprentice) is my favorite, but is thicker than I like. This version varies in kneading method, makes twice the area and varies in preparation to baking.

192 g bread flour (1 1/2 cup)
3 g table salt (1/2 teaspoon)
2 g instant yeast (1/2 teaspoon)
21 g honey (1 tablespoon)
14 g vegetable oil (1 tablespoon)
76 g water (1/3 cup)

Steps:

  • Add all ingredients to a medium bowl and mix one minute until ingredients are uniformly distributed.
  • Place in an oiled 2 cup measuring cup and cover. Let rest for 10 minutes and begin kneading on a lightly floured surface.
  • Knead for 5 minutes (it's a stiff dough) and place back into the cup and cover.
  • in 20 minutes, remove the dough, stretch into a rectangle as large as possible without tearing and fold letter-style, top to bottom third and bottom to top third. Do this from sides as well. Replace into measuring cup and cover.
  • In 20 minutes, do another stretch and fold and replace into cup. Let rest in a warm place until doubled in volume. This make take another hour to hour and 20 minutes.
  • Preheat oven to 350°F A baking stone can be used if desired.
  • Divide the dough into 2 equal halves and roll one half out on a lightly floured surface until it resists rolling. Do the same with the other half. Return to the first dough piece and continue to roll out until each piece is a 12" x 15" rectangle or a 15" diameter circle. Lift the doughs occasionally and return to the surface and re-flour lightly as needed.
  • Cover each dough with a thin towel or plastic wrap lightly to prevent sticking (can use flour or oil to prevent sticking but not usually necessary). Let rest for 5 minutes.
  • Lift the dough and place onto a half size baking sheet (12" x 16" or so) that has been fitted with parchment paper or silpat pad.
  • Spray the doughs with water lightly and sprinkle toppings (sesame seeds, poppy seeds, sea salt, Italian seasonings and/or paprika). Lightly press or roll the toppings into the dough. Instead of water, an egg wash or milk wash can be applied.
  • Using a fork, press holes into the dough to reduce the bubbling that flatbreads all do.
  • Bake for 4 minutes and rotate pan or pans and bake for an additional 5 minutes or until the crackers are uniformly browned lightly and crispy. Remove and cool on the pan, counter or rack.
