This vegetarian Bulgur Pilaf is a Middle Eastern dish that is so flavourful and a great alternative to rice. Cooked with onions, tomatoes and chickpeas, you only need a few ingredients to make one of the best sides ever!

2 cups coarse bulgur
3 tablespoons vegetable oil
1 onion (diced)
1 to mato (diced)
4 tablespoons tomato paste
1 can chickpeas (540mL)
1 chicken stock cube (or vegetable if vegetarian)
1.5 teaspoons salt
1/2 teaspoon black pepper
3.5 cups water

Steps:

  • In a non-stick pan, start by adding the vegetable oil and cooking the onion on medium heat for 3-5 minutes until softened
  • Add the tomato paste, diced tomato and chicken stock cube and continue to cook for 5 minutes, stirring often
  • Wash and drain the chickpeas and add them to the pot along with the 3.5 cups water, salt, and black pepper. Allow everything to come to a boil
  • Once boiling, add the washed and drained bulgur and mix well. Cover the pot, turn the heat down to low, and allow it to cook undisturbed for 20 minutes
  • After 20 minutes, turn the heat off and let it stand for 5-10 minutes. Fluff with a fork and serve

1 onion (finely chopped)
¼ cup tomato paste
1 vine ripe tomato (finely chopped)
¼ green pepper (finely chopped)
1 ½ cups fine bulgur wheat
1 teaspoon cumin
1 teaspoon salt
½ teaspoon black pepper
1 canned chickpeas (rinsed and drained)
3 cups chicken broth
1 tablespoon parsley finely chopped

Steps:

  • Heat the olive oil in a large stockpot over medium heat. Add the onions and cook until soft and translucent, about 5-7 minutes.
  • Stir in the tomato paste, chopped tomatoes and green peppers, and continue to cook with the onions until fragrant, about 2-3 minutes.
  • Add the bulgur, cumin, salt and pepper, and stir to combine until the bulgur is completely coated in the tomato paste, about 2-3 minutes.
  • Add the chickpeas on top along with 3 cups of chicken broth or water and stir to combine. Remove from heat, close the lid and allow the bulgur to absorb the liquid for 10 minutes. Open the lid and fluff with a fork.
  • Serve with chopped parsley and fresh vegetables, if desired.

Turkish style bulgur pilaf is a classic hearty and healthy side dish dish that is very easy to make. It's a great alternative to rice and can be served with many dishes.

2 cups bulgur (coarse)
2 tbsp olive oil
1 large onion (diced)
3 cloves garlic (minced)
1 green pepper (diced)
3 roma tomatoes (chopped)
1 1/2 tbsp tomato paste
1/2 tsp salt
1/2 tsp black pepper
3 1/2 cup water

Steps:

  • Place the bulgur in a bowl and rinse a few times. Set it aside.
  • Heat the olive oil in a pot over medium heat. Sauté the onion until translucent and then add the minced garlic. Cook for a minute.
  • Add in the diced green pepper and cook for a few minutes until it softens.
  • Add in the chopped tomatoes and stir well. Cook until they start releasing their juice.
  • Add the tomato paste and stir well so it combines with the other ingredients.
  • Add the salt and pepper and add in the rinsed bulgur. Stir well.
  • Turn the heat to medium high and add in the water. Once it comes to a simmer, lower the heat to medium, cover with a lid and cook for about 20-25 minutes until the water is almost completely evaporated.
  • Wrap the lid in a clean kitchen towel and place it on the pot. Turn the heat to medium low and cook for another 10 minutes.
  • Turn the heat off the let the bulgur sit for 5 minutes untouched, then fluff it with a fork and serve.

1 cup dried chickpeas, soaked in 1 quart water for six hours or overnight and drained
Salt to taste
1 cup coarse bulgur wheat
2 tablespoons extra virgin olive oil
1 bunch scallions, finely chopped
2 large garlic cloves, minced
1/4 cup finely chopped flat-leaf parsley, or a mixture of parsley and dill
2 tablespoons finely chopped fresh mint
Juice of 1 lemon

Steps:

  • Drain the soaked chickpeas, and place in a pot with 1 quart water. Bring to a boil, reduce the heat and simmer one hour. Add salt to taste and continue to simmer for 30 minutes to an hour, until the chickpeas are tender.
  • Place the bulgur in a 2-quart bowl. Place a strainer over the bowl, and drain the chickpeas so that the hot broth covers the bulgur. Set the chickpeas aside. Cover the bowl, and allow the bulgur to sit until fluffy, about 20 to 30 minutes. Strain and press out excess liquid.
  • Heat 1 tablespoon of the oil over medium heat in a large, heavy skillet, and add the scallions. Cook, stirring, until tender, two or three minutes. Stir in the garlic, and continue to cook until fragrant, 30 seconds to a minute. Stir in the bulgur and chickpeas. Add the herbs and the remaining tablespoon of olive oil, and toss together. Remove from the heat, add lemon juice and pepper, taste and adjust salt. Add more lemon juice if desired. Serve hot or room temperature.

1 onion (chopped, medium sized (approximately 1 cup))
1 green pepper (seeded jalapeno or a small bell pepper would work (approximately 1/2 cup))
2 tbsp tomato paste
1 teaspoon ground cumin
1 cup coarse bulgur (both coarse and extra coarse bulgur would work for this recipe)
1 fresh tomato (cut into small cubes (approximately 1 cup))
1 can chickpeas (drained and rinsed )
2 cups water (boiling water (or you can use vegetable stock))
1 teaspoon salt
1/4 teaspoon ground black pepper
handful of Italian (or flat leaf parsley, chopped)

Steps:

  • Saute onion and tomato paste: Heat olive oil in a medium saucepan over medium heat. Add in onion and green pepper and saute until translucent, 3-4 minutes. Add in tomato paste and stir constantly for a minute or so.
  • Add in the rest of the ingredients: Add in ground cumin, bulgur, tomatoes, chickpeas, and water (or stock). Season with salt and pepper.
  • Stir & Bring it to a boil: Give it a stir, bring it to a boil, put the lid on, turn down the heat to low. Let it simmer for 10-12 minutes or until most of the liquid is absorbed.
  • Let it rest & serve: Off the heat, allow it to rest for 10 minutes (with the lid on), fluff it with a fork, garnish with parsley, and serve.

1 cup bulgur
1½ teaspoons salt, divided
⅓ cup diced red onion
¼ cup extra-virgin olive oil
¼ cup fresh lemon juice, from 2 lemons
1 large garlic clove, finely minced
1 teaspoon cumin
1 teaspoon sugar
½ teaspoon freshly ground black pepper
1 red bell pepper, diced
1 small English (or hothouse) cucumber, seeded and diced
½ cup finely chopped fresh dill
⅓ cup finely chopped fresh parsley
1 15-ounce can chickpeas, drained and rinsed

Steps:

  • Bring a kettle of water to a boil. Place the bulgur in a large bowl with ½ teaspoon salt and 1¼ cups boiling water. Cover the bowl tightly with saran wrap and let sit for 15-30 minutes, or until all of the water is absorbed. Let cool, then fluff with a fork.
  • Meanwhile, to soften the bite of the raw onions, place them in a small bowl and cover with cold water. Let sit for ten minutes, and then drain. (Feel free to skip this step if you don't mind the strong taste of raw onions.)
  • In a large bowl, whisk together the oil, lemon juice, garlic, cumin, sugar, pepper, and remaining 1 teaspoon salt. Add the cooled bulgur, onion, bell pepper, cucumber, dill, parsley, and chick peas. Toss well, then taste and adjust seasoning if necessary. Chill until ready to serve or up to two days.   • Heat the olive oil in a large skillet over medium heat. Add the shallots, cover, and cook until softened, about 3 minutes. Add the bulgur and stir to combine. The recipe recommends fancy (fine grain) bulgur as it cooks faster, although none of the stores I went to had more than one kind to pick from so I took what I could get (I believe it was medium). The original recipe also called for frozen chopped onion and jarred minced garlic - I used fresh. This recipe was my first experience with toasted sesame oil - delicious!

1 cup boiling water
1 tablespoon extra virgin olive oil

  • If the bulgur seems to wet (it should be moist but not soggy), increase heat to medium and cook, uncovered, stirring often, until fairly dry.

1/2 cup walnuts, roughly chopped
3 tablespoons extra-virgin olive oil
1/2 medium red onion, diced
1/4 to 1/2 chipotle chile in adobo, to taste, chopped, plus 1/2 to 1 teaspoon adobo sauce
1/2 teaspoon ground coriander
Kosher salt and freshly ground black pepper
1 cup medium bulgur
1 cup baby arugula leaves, chopped
1 cup frozen green peas, thawed
1/2 cup fresh flat-leaf parsley leaves, chopped
1/4 cup chopped fresh dill
3 tablespoons red wine vinegar

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the nuts on a baking sheet and toast until fragrant and golden, 7 to 10 minutes. Check frequently, as they can burn quickly. Cool before using.
  • Bring 1 cup water to a boil in a small saucepan. Heat 1 tablespoon of the oil in a medium saucepan over medium-high heat. Add the onion and cook, stirring, until soft, about 2 minutes. Add the chipotle chile, adobo sauce, coriander, 1/2 teaspoon salt, and a few grinds of pepper. Cook, stirring, until fragrant, 1 minute. Add the bulgur and the boiling water. Cover, remove from the heat, and let stand until the bulgur is tender, about 25 minutes.
  • Fluff the bulgur with a fork and pour into a large bowl. Toss with the arugula, green peas, parsley, dill and walnuts. Stir in the remaining 2 tablespoons oil and the vinegar and season with salt and pepper. Serve at room temperature.

2 cups chopped onion
1 clove garlic, finely chopped

2 cups vegetable broth, or reduced-sodium chicken broth
1 ½ cups chopped carrot
2 teaspoons grated or finely chopped fresh ginger
1 teaspoon coarse salt
¼ cup lightly packed finely chopped fresh dill
¼ cup lightly packed finely chopped fresh mint
¼ cup lightly packed finely chopped flat-leaf parsley
3 tablespoons lemon juice, or more to taste
1/2 cup chopped walnuts, toasted (see Tip)

Steps:

  • Heat oil in a large high-sided skillet or broad shallow saucepan with a tight-fitting lid over medium heat until hot enough to sizzle a piece of onion. Add onion, reduce heat to medium-low and cook, stirring often, until golden brown, 12 to 18 minutes. Stir in garlic and cook, stirring, for 1 minute. Add bulgur, turmeric and cumin and cook, stirring, until the bulgur is coated with oil, about 1 minute.
  • Add broth, carrot, ginger and salt and bring to a boil, stirring. Cover and cook over medium-low heat until all the broth is absorbed and there are "eyes" or indentations in the surface of the bulgur, about 15 minutes. (Do not stir the pilaf.) Remove from the heat and let stand, covered, for 5 minutes.
  • Stir dill, mint, parsley and lemon juice into the pilaf. Serve topped with walnuts.
