LIMA BEAN SALAD

Lima beans are almost always on the menu when you visit a traditional Gullah or Low Country soul food restaurant. They've usually been slow-cooked for hours with a smoked turkey leg or ham hock. To be honest, I'm not a huge fan of that way of cooking them, so this salad is my favorite way to serve lima beans. I love the tangy vinaigrette and the colorful crunchy vegetables added to the beans. This is another one of those recipes that gets better the longer it sits in the fridge.

One 12-ounce package frozen Fordhook lima beans, thawed
3 cups chicken broth
1 slice thick-cut bacon
1 cup fresh corn kernels (from 2 ears corn)
1 cup grape tomatoes, halved lengthwise
1 small red bell pepper, diced (about 1 cup)
1 small green bell pepper, diced (about 1 cup)
1/2 small red onion, thinly sliced (about 1 cup)
4 cloves garlic, minced
Kosher salt and freshly ground black pepper
1/3 cup sherry vinegar
1 tablespoon honey
1 teaspoon celery seeds
1/3 cup extra-virgin olive oil

Steps:

  • For the salad: Combine the lima beans, broth and bacon in a small saucepan. Bring to a boil. Reduce the heat and simmer until the lima beans are tender and cooked through, adding the corn during the last 2 minutes of cooking, 10 to 12 minutes. Remove and discard the bacon and drain the beans and corn. Set aside to come to room temperature.
  • Make the vinaigrette: Sprinkle the garlic with about 1/4 teaspoon salt. Use the flat side of a chef's knife to press down on the garlic and drag it across the cutting board. Keep mincing, pressing and dragging the garlic until it forms a paste. Place the garlic paste in a large bowl. Add the vinegar, honey and celery seeds. Gradually whisk in the oil until combined. Season with salt and pepper.
  • Add the lima beans and corn, tomatoes, peppers and onions and toss until combined. Season with additional salt and pepper if needed. Serve at room temperature.

Smoked Turkey and Bean Soup image

This delicious soup is a great way to use up leftover smoked turkey from Thanksgiving. Freezes well. Prep time does not include time to soak beans.

2 -3 cups smoked turkey, shredded
1 (1 lb) bag 15 bean mix (dried beans)
1 tablespoon canola oil
2 small onions, diced
3 large carrots, diced
3 stalks celery, diced
3 -4 garlic cloves, minced
1 (14 1/2 ounce) can diced tomatoes
2 tablespoons dried rosemary, crushed
2 teaspoons dried sage
2 bay leaves
1 tablespoon chili powder
1 teaspoon cracked black pepper
2 quarts chicken broth

Steps:

  • Place dry beans into a large pot, cover with 2 quarts of water and soak overnight (or at least 8 hours). After soaking, drain water.
  • Heat oil in a large pan over medium-high heat. Add onion, carrots and celery and saute 5-10 minutes or until tender.
  • Add garlic, rosemary, sage, bay leaves, chili powder and pepper to the vegetables during the last 2 minutes of cooking.
  • Layer the ingredients in CrockPot: add beans, top with turkey, add sauteed vegetables and spices, and finally add the broth.
  • Cook on low for 6-8 hours.

16 ounces dried large lima beans
1 teaspoon salt
1/2 cup molasses
1/2 cup light brown sugar, firmly packed
2 tablespoons prepared mustard
1 (8 ounce) can tomato sauce
3 lbs smoked pork hocks (3)
1 cup onion, peeled and chopped

Steps:

  • Rinse beans; put into a large pot with 2 quarts cold water.
  • Heat to the boil; simmer two minutes.
  • Remove from heat; cover and let stand for one hour.
  • Add salt.
  • Reheat to boil, reduce heat and simmer, covered, until beans are tender (about an hour).
  • Drain and reserve liquid.
  • Combine molasses, sugar, mustard and tomato sauce.
  • Stir in 2 cups reserved cooking liquid; add to beans.
  • Stir in smoked pork hocks and onion.
  • Turn ingredients into a 2 1/2 quart casserole or a bean pot; bake at 300F for 3.5 to 4 hours.
  • Add more cooking liquid if needed.
  • Stir halfway through cooking.

2 cups dried large lima beans (10 ounces), sorted and rinsed
2 boneless, skinless turkey thighs (1 1/2 pounds total), cut into 1 1/2-inch pieces
coarse salt and ground pepper
3 tablespoons vegetable oil
1 large white onion, diced medium
3 garlic cloves, smashed and peeled
1 1/2 cups dry white wine, such as Sauvignon Blanc
5 large strips of lemon zest (from 1 large lemon), plus 2 tablespoons lemon juice and lemon wedges, for serving

Steps:

  • In a slow cooker, cover beans with cold water; let sit overnight. Drain beans and return to slow cooker.
  • Season turkey with salt and pepper. In a large skillet, heat 1 tablespoon oil over medium-high. In two batches, brown turkey on all sides, adding 1 tablespoon oil for second batch, about 10 minutes total. With a slotted spoon, transfer meat to slow cooker. Return pan to heat and add 1 tablespoon oil, onion, and garlic. Cook, stirring occasionally, until onion is translucent, 4 minutes. Add wine and bring to a boil, stirring and scraping up any browned bits with a wooden spoon. Boil 1 minute, then add mixture to slow cooker.
  • Add 1 1/2 cups water and lemon zest to slow cooker. Season with salt and pepper. Cover and cook on high 6 hours. (Beans should be tender and turkey will be just beginning to fall apart.) Add lemon juice and stir. Serve stew with lemon wedges.
