BUFFALO WING-STYLE CHICKEN SALAD
We added some heat to our chicken salad with buffalo wing sauce, celery and blue cheese.

Steps:
- In small bowl, beat mayonnaise and Buffalo wing sauce with whisk; set aside.
- In medium bowl, toss chicken, blue cheese and celery. Drizzle with sauce mixture. Toss to evenly distribute.
- Serve immediately, or cover and refrigerate until ready to eat.

BUFFALO CHICKEN PASTA SALAD
For anyone who likes Buffalo wings, this is a great change of pace from normal pasta salad. Really popular as a side dish for a barbeque or just about any gathering you can think of. You can substitute or add many different vegetables with this recipe.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Stir together the mayonnaise, blue cheese dressing, buffalo wing sauce, salt and pepper in a large bowl. Add the chicken, bell peppers, red onion, and cooked pasta and toss to coat with the dressing. Cover and chill at least 1 hour in the refrigerator before serving.

- Preheat the broiler. In a medium bowl, combine 2 tablespoons of the oil and 1 tablespoon of the hot pepper sauce. Add the chicken and toss. Transfer the chicken to a broiler pan and sprinkle on both sides with the paprika and 1/2 teaspoon of the salt. Broil 6 inches from the heat, turning once, for 8 to 10 minutes, or until cooked through. Place on a plate to cool slightly. When cool enough to handle, cut into bite-size pieces.
- Meanwhile, prepare the celery, carrots and scallions, and put them in a large salad bowl, tossing well to combine.
- In a blender or mini food processor, combine the blue cheese, milk, yogurt, vinegar, remaining 2 teaspoons oil, remaining 1 teaspoon hot pepper sauce and remaining 1/2 teaspoon salt. (If there are any juices on the chicken plate, add them in.) Process until smooth.
- Add the dressing, chicken and lettuce to the salad bowl, tossing gently to combine. Serve chilled or at room temperature.

- Preheat broiler.
- Combine: cheese, sour cream, mayo, milk, parsley, lemon juice& 1/4 tsp salt.
- Cover and refrigerate.
- Arrange chicken wings on a rack in a broiling pan and sprinkle with 1/4 tsp salt.
- Broil 5" from heat for 10 minutes, turn wings and broil a further 10-15 minutes.
- Meanwhile in a saucepan melt butter; combine with the hot sauce.
- Pour sauce over broiled wings and toss.
- Arrange on a platter with the celery sticks and cheese mixture.
- Dip sticks and wings in the cheese.
