BUFFALO MEXICAN SHRIMP SKEWERS

8 tablespoons (1 stick) butter
1/2 cup hot sauce, such as Frank's RedHot
1 teaspoon chili powder
3 cloves garlic, finely chopped
1 teaspoon white wine vinegar
2 pounds large shrimp, peeled and deveined
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Carrot sticks, for dunking
Celery sticks, for dunking
Blue cheese dressing, for serving

Steps:

  • Preheat a grill or grill pan to medium-high heat.
  • In a medium saucepan add the butter, hot sauce and chili powder over medium-high heat. Once the butter melts, add the garlic and vinegar, and saute until it sizzles and is fragrant, about 3 minutes. Remove from the heat. Reserve a few tablespoons of the sauce for a later use.
  • Stick 3 shrimp on each skewer. Sprinkle the shrimp with salt and pepper on both sides. Place the shrimp on the grill and cook for 3 to 4 minutes on each side, basting with the sauce the last few minutes of grilling.
  • Remove the shrimp to a platter and drizzle the reserved sauce over the skewers. Serve the shrimp skewers with carrots, celery sticks and creamy blue cheese dressing.

6 tablespoons butter
1/4-1/3 cup hot pepper sauce (like Louisiana or Franks not Tabasco)
1 1/2 tablespoons cider vinegar
1 Italian salad dressing mix (Good Seasons .6 ounce dry packet)
1 lb chicken tenders, rinsed and patted dry
2 tablespoons vegetable oil
salt and pepper, to taste
wooden skewer (soaked in water for 30 minutes to avoid burning)
1/2 cup blue cheese dressing

Steps:

  • Combine butter, hot sauce, cider vinegar and dressing mix in heavy saucepan. Stir over low heat until smooth. Taste and add more hot sauce if desired.
  • Spray grill or broiler pan with no-stick cooking spray; heat grill or broiler.
  • Place chicken tenders in large bowl; drizzle with oil. Toss to coat. Season with salt and pepper. Thread each chicken tender onto a wooden skewer.
  • Grill or broil until cooked through and golden brown, about 8 to 10 minutes. Brush generously with Buffalo Sauce in the last minutes of cooking. Serve with blue cheese dressing for dipping.

  • Make dip: Pulse sour cream, mayonnaise, blue cheese, Worcestershire sauce and vinegar in a food processor until mixture has blended into a chunky sauce. Season with salt and pepper. Cover and chill until ready to use. (Dip can be made up to 2 days ahead.)
  • Make chicken: Stir butter, hot wing sauce, sugar and vinegar in a pan over medium-low heat until butter has melted. Remove from heat. In a large ziplock bag, mix cayenne, 1 tsp. pepper, 2 tsp. salt and flour. Add half of chicken and toss until well coated.
  • In a large skillet, warm half of oil over medium-high heat. Remove chicken from bag, shaking off excess coating. Add to skillet and cook, turning on all sides, until chicken is crispy and no longer pink in the middle, about 6 minutes. Drain on paper towels. Wipe out skillet and repeat, tossing remaining chicken in coating and cooking in remaining oil.
  • Rewarm hot sauce mixture in a pan or microwave. Pour over chicken in a large bowl; toss well to coat. Thread 2 pieces of chicken onto 20 small skewers. Serve with dip and carrots and celery, if desired.
