EASY BANANA SPICE CAKE (EGGLESS)

Steps:
- 1. Preheat oven to 350°F. Grease and flour a Bundt pan (or spray with baker's coating). Mash bananas very well with lemon juice and set aside.
- 2. In large mixing bowl, stir together cake mix and spices. Add eggs, water, oil, and mashed bananas. Mix with electric mixer for 2 minutes at high speed, scraping bowl occasionally. Pour batter into prepared pan.
- 3. Bake approximately 45-50 minutes, until pick inserted near center comes out clean. Cool on wire rack in pan for 10 minutes. Invert and remove from pan and cool completely.
- 4. Use 1/2 a container of your favorite frosting; microwave until it's pourable. Drizzle it over cooled cake. Some suggestions are: Cream Cheese frosting, Lemon, Caramel, or Vanilla.

- In a bowl, beat the egg yolk, oil and bananas. Combine the cake flour, 1 cup sugar, all-purpose flour, baking powder, cinnamon, baking soda, nutmeg, salt, cloves, ginger and allspice. In another bowl, combine the milk, orange juice concentrate, yogurt, orange zest and vanilla. Gradually add dry ingredients to banana mixture alternately with milk mixture., In another bowl, eat egg whites and cream of tartar until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form. Fold in batter. Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 48-52 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack., Combine the glaze ingredients; drizzle over cooled cake.

LIGHT EGGLESS BANANA CAKE
Light and easy to make and oh so yummy. I invented it after having too many ripe bananas. Best eaten straight out of the oven.

- Preheat oven to 160 degrees Celsius.
- Sift first three ingredients together.
- Whisk pureed bananas, milk and butter together. (It is important that the pureed bananas are smooth and there are no lumps). Add dry ingredients gradually into wet ingredients, mixing well.
- Pour into well buttered rectangular pyrex or oven roasting pan and bake for 20 to 30 minutes or till lightly browned on top and skewer comes out clean.
- Cooks Note: After reading a review from someone, I think perhaps they went for a high cake. Aim for a flatter rather than high cake. So your pyrex or roasting pan should be flatter rather than deeper or higher. Eggless cakes fare poorly when you try to bake them in deep/high dishes instead of flat, as they dont have eggs to help them rise. This could lead to rawness in the centre, whereas a flatter cake would cook evenly.
