4 chicken thighs, cubed and with skin removed
150 ml filter coffee
500 ml white wine
150 ml cream
4 garlic cloves, finely sliced
50 g butter
4 red chilies, pounded to a paste
1 bay leaf
12 coffee beans
salt
pepper

Steps:

  • Add the butter to a pan and fry the cubed chicken. Mix-in the chillies, garlic and bayleaf.
  • When the chicken is golden brown in colour remove from the pan and set aside. Add the wine and coffee to the pan and continue cooking until the sauce has thickened appreciably then add the coffee beans and cream.
  • Mix well, return the chicken pieces to the pan and cook for 15 minutes. Serve on a bed of rice.

This is my mum's old recipe; It's really interesting that the same (or extremely similar) recipe was published in my local magazine! Marinating time not included in preparation time.

6 skinless chicken breasts
1 tablespoon oyster sauce
2 teaspoons olive oil
2 garlic cloves, minced
2 teaspoons barbecue sauce
1/2 teaspoon Worcestershire sauce
1/4 cup brewed coffee
1 teaspoon brown sugar

Steps:

  • Marinate the chicken with the oyster sauce. Season with salt and pepper.
  • Heat the olive oil in a pan, and fry each side of the chicken until cooked. Set aside and keep warm.
  • In the same pan, fry the garlic until fragrant, then add the barbeque sauce, worchestershire sauce, brewed coffee and brown sugar. Allow it to simmer for 2 minutes.
  • Add in the chicken and coat evenly with the sauce. Allow it to caramalize and cover the chiken pieces.
  • Serve immediately.

My boys always begged for this chicken. It literally falls off the bones and the sauce gives a rich flavor to the rice. Made with pantry staples, it's easy to throw together, too! Use low-sodium soy sauce if you're sensitive to salt. My family prefers chicken thighs but any pieces will work. Skin the chicken pieces if preferred. A zesty Italian dressing works best.

½ cup Italian-style salad dressing
1 (4 ounce) can sliced mushrooms, drained
¼ cup water
¼ cup soy sauce
1 teaspoon dried minced onion

½ teaspoon garlic powder
⅛ teaspoon ground black pepper
2 cups hot cooked rice

Steps:

  • Combine chicken pieces, Italian salad dressing, mushrooms, water, soy sauce, dried minced onion, brown sugar, garlic powder, and black pepper in a heavy skillet or Dutch oven over low heat. Cover and simmer until chicken is very tender, about 45 minutes. Serve over hot cooked rice.

This recipe is similar to the lettuce wraps that are so popular in Asian restauants. It was in the R.S.V.P. section of a June 1982 issue of Bon Appetit magazine. It was requested from the Shun Lee Palace in New York City. Preparation time will be reduced if all chopping is done in a food processor. Once the prep is done the lettuce wraps come quickly together!

1 large chicken breast, skinned, boned, sliced and cut into tiny cubes (about 2 c. total, this is easier to do when chicken is partially frozen)
1 egg white
2 tablespoons cornstarch
1/2 teaspoon salt
2 long green chilies, cored, seeded and cut into small cubes (hot or mild)
10 -12 water chestnuts, cut into small cubes (about 1/2 cup)
1/2 cup finely diced celery
3 tablespoons finely diced carrots
1 teaspoon chopped fresh ginger
3 tablespoons finely chopped green onions
2 teaspoons finely chopped garlic
2 tablespoons shaohsing wine or 2 tablespoons dry sherry
1 1/2 teaspoons soy sauce
1 1/2 teaspoons chili paste with garlic
1 teaspoon sugar
1 tablespoon water
2 cups peanut oil
1/2 teaspoon sesame oil
1 head iceberg lettuce, leaves separated (cored)

Steps:

  • Combine chicken,egg white,1 tablespoon cornstarch and salt in medium bowl and stir to blend well.
  • Cover with plastic and refrigerate at least 30 minutes.
  • Combine chilies, water chestnuts,celery,carrot and ginger in another bowl.
  • Combine green onion and garlic in separate bowl.
  • Mix wine, soy sauce, chili paste and sugar in another bowl.
  • Blend remaining 1 tablespoon cornstarch and water in small bowl, mixing until smooth.
  • Pour peanut oil into wok;place over high heat.
  • When oil begins to smoke, add chicken in batches and cook, stirring constantly to separate cubes, about 1 1/2 minutes.
  • Remove chicken with slotted spoon, drain well on paper towels and set aside.
  • Pour off all but 2 tablespoons peanut oil from wok and return to high heat.
  • Add water chestnut mixture and cook, stirring constantly about 30 seconds.
  • Add green onions and garlic and cook, stirring constantly, 10 seconds.
  • Return chicken to wok and cook, stirring constantly, 30 seconds.
  • Add wine mixture and sesame oil; restir dissolved cornstarch.
  • Add to wok and cook, stirring constantly, 30 seconds.
  • Transfer to heated platter.
  • Spoon chicken mixture into lettuce leaves and fold over to enclose; serve hot.

This tastes rich and looks like an expensive gourmet entree, but is actually ready in about 30 minutes and is super easy on the wallet. You probably have all the ingredients on hand.

6 chicken thighs, boneless and skinless (or 4 boneless, skinless breasts)
1 teaspoon seasoning salt
1/2 teaspoon garlic powder
1 -2 tablespoon olive oil
1/2-2/3 cup water (for sauteing chicken)
6 ounces cream cheese, cubed (if you like a thicker, richer sauce use 8 ounces cream cheese)
3/4 cup milk (adjust depending on how thin or thick a sauce you like)
1/2 teaspoon seasoning salt
1/2 teaspoon garlic powder
1/2 teaspoon ground pepper (red, white or black pepper)
1/2 teaspoon dried parsley flakes (to garnish) or 2 dashes chives (to garnish)

Steps:

  • Sprinkle chicken with seasoning salt and garlic powder, and set aside.
  • In a microwaveable bowl, mix cream cheese, milk, garlic powder and pepper.
  • Microwave for 30 seconds at a time, checking and stirring until cream cheese is melted.
  • Heat olive oil in a saute pan.
  • Add chicken to pan and saute at medium heat adding small amounts of water to pan, as needed, so that chicken doesn't get too dry or stick to pan. The chicken will release juices that blend with the water.
  • When chicken is cooked through, but there is still some of this "juicy water" in the pan, add the sauce to the pan and cook until heated through.
  • Remove chicken with a slotted spoon and arrange on a bed of white rice.
  • Spoon or pour sauce over the chicken and then sprinkle with parsley or chives.
  • NOTE: I usually serve this dish with a side of steamed broccoli drizzled in heated olive oil (I season the heated olive oil with lime juice and garlic powder). YUMMY!
