1 cups watercress leaves, shredded or chopped
2 tablespoons dill pickle relish or sweet red pepper relish
8 sliced pumpernickel or marble bread
1/2 pound your choice of: Muenster, Havarti with dill or Leyden (Gouda with cumin seeds), thinly sliced
4 tablespoons butter, softened

Steps:

  • Preheat a griddle or large skillet over medium-low heat. Make 4 sandwiches of sliced cheese, chopped greens and relish, distributing the ingredients evenly among them. Butter the outsides of the sammies with softened butter and cook in preheated pan until golden and cheese has melted.

4 tablespoons unsalted butter, at room temperature
1/4 cup mayonnaise
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper
8 slices sourdough bread
2 tablespoons cream cheese, at room temperature
1 cup shredded Cheddar

Steps:

  • Preheat a skillet over medium heat. Mix the butter, mayo and smoked paprika in a small bowl until well combined. Sprinkle with salt and pepper.
  • Lightly butter one side of each of the bread slices with the mayo mixture. Add the cream cheese to the remaining mayo mixture and mix well to combine. Spread some of the cream cheese mixture on the other side of each of the bread slices.
  • Distribute the Cheddar on the cream cheese-side of 4 of the bread slices. Place the remaining 4 bread slices on top. Place the sandwiches in the skillet and cook until golden on the bottom, about 3 minutes. Flip the sandwiches and place a heavy-bottomed skillet on top of the sandwiches and cook until golden brown and the cheese is melted, about 4 minutes.

8 slices sourdough bread (or other desired bread)
8 slices smoked turkey breast (could also be chipped)
8 slices cheddar cheese
butter or margarine

Steps:

  • Place one piece of cheddar cheese on bottome piece of bread.
  • Place two pieces of sliced turkey (or desired amount of chipped turkey) on top of cheese.
  • Place second piece of cheese on top of meat.
  • Place second piece of bread on top.
  • Butter the top side and place that side down on George Foreman.
  • Butter what is now the top side and close the grill.
  • Grill until cheese is melted and bread is toasted.

Blarney Grilled Cheese & Chutney Sandwich image

My Irish family has been telling me for yrs (ok, decades) that I was full of blarney & now I get a chance to make it work for me! Blarney comes from the tradition of being held upside down by one's ankles in order to kiss the Blarney Stone at Blarney Castle in Blarney, Ireland. After kissing the stone, one is supposedly endowed w/the gift of gab. The Irish clearly have no need to seek special help in this area, so the only people you ever find submitting themselves to this exercise are tourists. Now you might ask "What does this have to do w/recipes?" Well, there is a Blarney cheese & it was advertised in the most recent Cooking Light magazine. Per their website, "Blarney Castle cheese is an entirely natural semi-soft, part-skim cheese containing no artificial additives or coloring. Its subtle flavor is reminiscent of a young gouda." So my advice would be to use Blarney cheese for this tasty new version of a grilled cheese sandwich if you can get it, a good gouda or even a smoked gouda. I thot the ingredients were a bit on the skimpy side, so I modified them slightly. I promise you will not be sorry if you are even more generous w/the chutney than stated. Enjoy!

6 slices sandwich bread (1/4-in thick)
2 tablespoons butter (softened, use more as needed)
3 tablespoons Major Grey chutney (flavor of choice)
6 ounces sliced cheese (Blarney Castle, gouda or smoked gouda)

Steps:

  • Spread 1 tsp softened butter on ea slice of bread (may use more as needed).
  • Spread 1 tbsp chutney on unbuttered side of half the slices.
  • Top chutney w/2 oz sliced Blarney, gouda or smoked gouda cheese.
  • Place bread slice on top, buttered side out.
  • Over med-low heat, brown in a lrg skillet (turning once or twice) till cheese is melted (1-2 min per side).
  • NOTE: Is it not cute the way they have so meticulously told us how to assemble & cook a grilled cheese sandwich? I loved it!

fresh baked bread (whatever type you prefer)
English cucumber
white cheddar cheese (old or strong)
butter or mayonnaise
salt
black pepper

Steps:

  • Peel cucumber skin and cut thin round slices.
  • Spread butter or mayonnaise on two slices of baked bread.
  • Cut Cheddar cheese into thin slices and place on of the slices until thoroughly covered.
  • Then place the thin slices of cucumbers on top of the cheese and add salt and pepper on top of the cucumbers only.
  • Place the second (buttered or mayonnaised) slice on top of the cucumbers and cut in half.
