THE BEST ROAST BEEF FOR SANDWICHES
The best cut of roast beef for sandwiches isn't necessarily the same as what you'd want hot from the oven. A hot roast demands plenty of marbling so that the rich fat can melt and baste the meat with its goodness. Roast beef sandwiches work better made from a leaner cut, preferably one with a mineral, earthy taste and a nice chew. A top loin roast is ideal. It's got plenty of brawny flavor, and all of the fat is on the surface, which you can easily trim off after the meat is cooked. Here, the beef is roasted low and slow to ensure rare, juicy meat. This said, if you want a more economical cut, use bottom, top or eye round here instead. Just adjust the roasting time if the cut is larger or smaller. - In a small bowl, stir together the garlic, salt, pepper and rosemary. Spread the paste all over the meat. Cover loosely with plastic wrap and refrigerate at least 3 hours or overnight.
- When you are ready to prepare the meat, remove it from the fridge and let stand at room temperature for 30 to 60 minutes.
- Heat oven to 325 degrees. Place a wire rack in a rimmed baking sheet.

- Add 2 cups of the beef broth (or cooking liquid) to a small sauce pan. Heat over medium-high heat until the broth begins to simmer. Reduce the heat to medium and continue to simmer.
- In a measuring cup, whisk together the remaining cup of beef broth* (or cooking liquid) and the flour until the mixture is smooth and (mostly) free from lumps. Slowly pour the mixture, which I recently learned is technically called a slurry, into the simmering broth, gently stirring as you pour. Continue to simmer and stir until the broth thickens into gravy. Remove from heat.
- To assemble the sandwiches, lay a slice of bread on the plate. Place a spoonful of mashed potatoes on the bread, followed by the desired amount of leftover roast, and topped with the delish brown gravy you just made. Enjoy!

- Pat the roast dry with a paper towel and sprinkle with seasoning and 2 tablespoons of flour. Rub all over to evenly adhere.
- Add the oil to a very large, rimmed sauté pan or Dutch oven over medium-high heat and allow to come to temperature. Add the roast to the pan and sear for about 4 minutes on both sides, or until it develops a nice crust. Remove from the pan and set aside on a plate.
- Reduce the heat to medium, add the diced onion to the pan and sauté, stirring often. Cook the onion for 3-4 minutes, or until just softened. Sprinkle the remaining 2 tablespoons of flour over the onions and stir to coat.
- Add about half of the beef broth one big splash at a time, stirring until completely incorporated after each addition. Once half of the broth has been incorporated, add the salt and pepper and allow to come to a simmer. Simmer for a few minutes, or until thickened slightly.
- Add the beef, along with all of its juices, to your slow cooker. Pour over the sauce, along with the remaining broth. Set your slow cooker on the high heat setting and cover. Cook for 4 hours, then remove the beef and shred it. Add the shredded beef back to the slow cooker, and continue to cook (uncovered) for 1 1/2 hours more, stirring occasionally.
- Cut your bread for sandwiches (if necessary). If you'd like to toast your bread, preheat the oven to 400°. Once the oven comes to temperature, place the bread on a baking sheet and bake for 4 minutes or until lightly toasted.
- Remove bread from the oven, slather with mayonnaise (if using), add a generous serving of shredded roast beef and desired toppings. Serve and enjoy!

- Start by placing your kosher salt, pepper, and garlic salt with parsley in a bowl. Mix it up and then rub on both sides of your raw beef roast.
- In your Instant Pot pour the tablespoon of oil and turn the saute feature on high. Let it get hot, and then place your roast in the pot to sear the sides.
- You will sear for 4 minutes or so on each side of the roast. This will add texture and flavor to your roast.
- Now when your roast is seared on both sides, turn off the saute and pour in your beef broth. Use a wooden spoon to scrape the bottom of the pot to remove any stuck-on debris. Add in your sliced onions on top of your roast, and place your Instant Pot lid on the pressure cooker. Make sure the valve is set to sealing.
- Cook high pressure for 75 minutes followed by a 15-minute natural release.
- While the roast is naturally releasing, wash, peel, and dice up your potatoes. Place them in a steam basket. If you don't have a steam basket you can toss on top of the roast in Instant Pot.
- Once you release remaining pressure off, open the lid and place potatoes in the Instant Pot. Place the lid back on and make sure it is sealed on the vent. Cook for 15 minutes high pressure followed by a quick release. Set the basket right on top of the roast.
- Once done, remove potatoes from Instant Pot, and place potatoes in a bowl or stand mixer and add in milk, sour cream, butter, cream cheese, and mix up into mashed potatoes. If the potatoes are too thick add a bit more milk. Then salt and pepper to taste the potatoes.
- For the roast, you will remove from the Instant Pot and let rest 10 minutes. Then shred up the beef with meat claws or two forks.
- In the instant pot remove any fat or drippings in the broth. Then turn to saute and pour in your gravy packets. With a whisk whip up the mixture until it thickens. Stir very often or it will burn.
- Once everything is all done, take your Texas toast and slice in half. Lay one slice down on the plate. Pile on some shredded roast, top with gravy, followed by another piece of bread and more gravy. Then add your scoop of mashed potatoes and gravy as well!
- Serve up your Instant Pot hot beef sandwich and homemade mashed potatoes!
