Anchovies and tomatoes are a match made in heaven in this summery pasta dish - with tuna and a zesty hit of lemon thrown in, you will love it!

200 g bucatini
sea salt
1 large clove of garlic, peeled
1 fresh red chilli
2 anchovy fillets
4 ripe cherry tomatoes
extra virgin olive oil
1 x 180 g tin of quality tuna in olive oil
1 tablespoon baby capers, rinsed
1/2 lemon, juice from
100 g wild rocket, washed

Steps:

  • Cook the bucatini in a large pan of boiling salted water until al dente. Meanwhile, finely slice the garlic and chilli, then roughly chop the anchovies and tomatoes. Heat 3 tablespoons of oil (use the oil from the tin of tuna for added flavour, if you can) in a frying pan over a medium heat, then add the garlic, chilli, anchovies and capers. Fry for 2 minutes, then add the tomatoes and toss well.
  • Reserving some of the cooking water, drain the bucatini and add to the sauce. Toss well over the heat until lovely and glossy, adding a splash of the cooking water to loosen, if needed. Flake in the tuna, then add some lemon juice and most of the rocket. Toss well to warm the tuna through and wilt the rocket, then season carefully with salt and more lemon juice. Serve with a drizzle of oil, and a scattering of the reserved rocket.

1/4 cup extra virgin olive oil
1/2 cup canned chopped tomatoes
Handful fresh basil or fresh parsley, torn
Pinch of crushed red pepper
Small handful of pitted, coarsely chopped black olives
Canned tuna packed in oil
1/2 pound bucatini (or other pasta)
Kosher salt

Steps:

  • Heat 1/4 cup of extra virgin olive oil in a saute pan. Add 1/2 cup of the chopped tomatoes, torn basil, a pinch of crushed red pepper, and a small handful of pitted, coarsely chopped olives to the pan. Cook for 2 to 3 minutes until the tomatoes start to break down, then add the tuna, breaking it up.
  • Meanwhile, cook the linguine in boiling salted water until three-quarters of the way cooked, about 10 minutes. Reserve about a cup of the pasta cooking liquid. Toss the drained pasta with the olives and tomatoes.
  • Add a few more pieces chopped fresh basil or parsley. Turn the heat up to medium-high and cook, tossing, until the pasta is al dente. Add some of the pasta cooking liquid to moisten the pasta, if necessary. Divide the pasta among bowls and serve.

2 tablespoons extra-virgin olive oil
12 ounces fresh tuna steak, cut into 1/2-inch chunks
1/2 red onion, cut into 1/2-inch chunks
1 small bulb fennel, cored, trimmed and chopped, plus 1/2 cup fronds
3 stalks celery, chopped, plus 1/2 cup chopped leaves
3 tablespoons drained capers
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1/3 cup dry white wine
1 15-ounce can cherry tomatoes
10 ounces bucatini or spaghetti

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season the tuna with salt, add to the skillet and cook, turning, until browned on all sides, about 2 minutes. Remove to a plate.
  • Add the remaining 1 tablespoon olive oil to the skillet and reduce the heat to medium. Add the red onion, fennel and celery, season lightly with salt and cook, tossing, until the vegetables begin to soften and brown around the edges, 4 to 5 minutes. Add the capers, oregano and red pepper flakes; cook until sizzling, about 1 minute. Pour in the wine and simmer until reduced by half, about 1 minute. Add the tomatoes and 1/2 cup of the boiling water. Cook, smashing the tomatoes with the back of a spoon, until they begin to break down and the sauce is thickened, 8 to 10 minutes.
  • Meanwhile, add the pasta to the boiling water and cook as the label directs for al dente. Reserve 1/2 cup cooking water, then drain.
  • Return the tuna to the skillet. Add the pasta and toss to coat, adding the reserved cooking water as needed to loosen. Divide among bowls and top with the celery leaves and fennel fronds.

1 pound bucatini pasta
3 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
1 clove garlic, chopped
One 28-ounce can tomato puree
2 dry bay leaves
A Parmesan rind
2 tablespoons torn fresh basil leaves, plus whole leaves for garnish
2 tablespoons grated Parmesan
Freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the bucatini and cook to al dente according to package directions. Drain, reserving 1/2 cup pasta water.
  • Heat a large skillet with deep sides over medium-high heat and add the butter and olive oil. When the butter is melted, add the garlic. Saute the garlic until golden, about 30 seconds, and then add the tomato puree, bay leaves and Parmesan rind. Simmer for 10 minutes. Add the basil and simmer for a few more minutes until the sauce is thickened. Stir in the reserved pasta water and cooked bucatini. Toss to coat the bucatini in the sauce. Season with salt and pepper. Divide the bucatini among 4 to 6 plates and garnish each with grated Parmesan and 1 basil leaf.

2 tablespoons capers, drained and rinsed
Pinch of red pepper flakes
2 tablespoons extra-virgin olive oil
1 pound tomatoes, diced
2/3 cup pitted kalamata or nicoise olives, chopped
3 tablespoons unsalted butter, cut into pieces, at room temperature
3 tablespoons chopped fresh basil
8 ounces fresh mozzarella cheese, finely chopped

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain the pasta.
  • Meanwhile, pile the garlic, 1 tablespoon capers and the red pepper flakes on a cutting board; mince, then mash with the flat side of a chef's knife to make a paste. Transfer the mixture to a large bowl and add the olive oil, tomatoes, olives, the remaining 1 tablespoon capers and the butter. Stir in the basil and cheese.
  • Add the pasta to the bowl with the tomato mixture and toss until the butter is melted, adding the reserved cooking water to moisten, if needed. Season with salt.

1/2 cup red onion, thinly sliced
1 1/4-1 1/2 lbs albacore tuna, cut into 1-inch wide strips

1 teaspoon fresh oregano or 1 teaspoon marjoram, minced
salt and pepper
1 cup tomatoes, chopped, seeded, and peeled if you like
1/2 cup kalamata olives or 1/2 cup other dark olive, pitted if you like
1 tablespoon capers, drained
1 pinch red pepper flakes (to taste)

Steps:

  • Heat the garlic in the oil over low heat until it turns pale gold, about 15 minutes. Remove garlic with a slotted spoon to a small bowl.
  • Increase the heat to med-high and add the red onions. Cook for 2 minutes. Add the tuna strips. Increase the heat to high and quickly sear the fish on all sides, while seasoning it with the basil, oregano, and mint. Cook until the fish is done to your liking, 2 to 5 minutes. Remove fish to a hot platter or warm oven.
  • Return the garlic to the skillet. Add the tomatoes, olives, capers, and red pepper flakes. Cook for just a minute, stirring occasionally. Spoon over fish.
  • Garnish with the remaining basil and mint.

4 tablespoons olive oil
4 (6 ounce) tuna steaks, each 6 oz and 3/4 inch thick
salt
freshly ground pepper
1 yellow onion, thinly sliced
3 large garlic cloves, minced
1 (14 1/2 ounce) can diced tomatoes
1/2 cup full-bodied red wine, such as merlot
1/8 teaspoon red pepper flakes
1/3 cup green olives or 1/3 cup black olives
1 tablespoon small caper, rinsed and drained
2 tablespoons pine nuts, toasted
2 tablespoons finely shredded fresh basil

Steps:

  • In a large frying pan over high heat, warm 2 tablespoons olive oil. Season tuna with salt and pepper. Add to the pan and sear over high heat, turning once, just until golden (about 3 minutes). Transfer to a plate and set aside.
  • Add remaining oil to pan and reduce heat to medium-high. Add onion and saute until softened, 3-4 minutes. Add garlic and saute 30 seconds. Stir in tomatoes, wine, red pepper, olives, and capers. Cover and simmer about 5 minutes to blend flavors. Stir in pine nuts.
  • Return tuna to the pan, spooning the sauce over it. Cook, occaisionaly spooning sauce back over tuna, until tuna is opaque throughout and the sauce is slightly reduced, 7-10 minutes.
  • Transfer tuna steaks and sauce to warmed plates and sprinkle with basil. Serve at once.

12 ounces bucatini
3/4 cup black olive tapenade
3 cups basil leaves (from about 1 large bunch)
1/2 cup roughly chopped fresh Italian parsley leaves
24 oil-packed sun-dried tomatoes, drained and torn into bite-size pieces (heaping 1/2 cup)
High-quality extra-virgin olive oil, for drizzling
Sea salt
Freshly ground black pepper
Parmigiano-Reggiano wedge, for shaving

Steps:

  • Bring a large pot of water to a boil over high heat and add a generous amount of kosher salt. Stir in the bucatini, return the water to a boil, and cook the pasta, stirring occasionally to prevent the strands from sticking together, until it's al dente. (Since cooking times vary, for perfectly cooked pasta, refer to the package instructions for the recommended time and taste the pasta frequently while it cooks.)
  • Put the tapenade in a large skillet.
  • Drain the pasta and quickly add it, still dripping with water, to the skillet with the tapenade. Place the skillet over medium heat and cook the pasta, gently stirring to coat the pasta with the tapenade, until it's warmed through, about 1 minute.
  • Turn off the heat, add the basil, parsley, and sun-dried tomatoes and toss to combine.
  • Use tongs to lift the pasta out of the skillet and pile it onto four plates, dividing it evenly and twisting it into high mounds.
  • Finish each serving with a drizzle of olive oil, a pinch of sea salt, freshly ground black pepper, and Parmesan cheese shavings.
