THE BEST OATMEAL RAISIN COOKIES
Do you like chewy cookies? Or do you prefer cakey ones? Our oatmeal-raisin cookies can be both! For a chewy cookie, bake them right away. For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

- Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Whisk together the flour, salt, baking soda and cinnamon in a small bowl until combined. Beat the brown sugar and butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the honey, vanilla, egg and 1 tablespoon warm water and beat on high speed until creamy, scraping the sides and bottom of the bowl, about 3 minutes more. Add the dry ingredients and mix on low speed, scraping the bowl as needed, until completely combined. Add the oats and beat on low speed until combined. Fold in the raisins until evenly distributed. Arrange twelve 1-ounce scoops (2-tablespoon portions) of cookie dough on the prepared baking sheet, leaving about 2 inches between each. Bake until the cookies are lightly golden around the edges, 15 to 20 minutes. Cool on the sheet for 10 minutes, and then transfer to a wire rack to cool completely. Let the baking sheet cool, and then repeat with the remaining cookie dough.
GUMDROP OATMEAL COOKIES
Mom used to make these all year round. She didn't use the black ones, instead gave them to us kids to munch on while we watched her whip the cookies up. No coconut in mom's recipe. I supose you could add a cup or so if you'd like. As she chopped the gum drops she tossed them in sugar to keep them from getting all stuck together.

- Cream sugars, shortening and eggs.
- Combine flour,baking powder, soda & salt, add to creamed mixture.
- Stir in oatmeal and gum drops that have been chopped and tossed sugar.
- Chill dough 2-3 hrs., roll dough in walnut sized pieces place 2" apart on ungreased cookie sheet. Press with bottom of juice glass dipped in sugar.
- Bake at 350 for about 10 minute.

BRYTE HAVREKAKA (OATMEAL COOKIES)
Steps:
- Melt butter in a saucepan and fry the oatmeal lightly. Stir egg and sugar together. When the oatmeal is cooled, mix it all together. Drop from teaspoon onto well-greased cookie sheet. Bake in a slow oven, 300 - 325 degree oven and check on them at 12 minutes.

- Heat oven to 200 degrees.
- Line large baking sheet with parchment paper.
- Place the baking sheet in the oven to warm while you are making the meringue.
- Make a hot water bath by placing a medium sized, grease-free metal or glass bowl snuggly over a pan of hot water.
- Beat the egg whites in the bowl at a slow steady speed. When they are foamy add the cream of tartar. Gradually add the confectioners' sugar and when the meringue will form soft peaks, add the extract and increase to a medium beating speed. Beat for another 4-6 minutes, until the meringue forms firm peaks when the beaters are lifted.
- Fill the pastry bag while the meringue is still warm.
- Remove the warm baking sheet from the oven and adhear the parchment down with dots of meringue.
- Pipe out desired decoration. Bake at 200 degrees for about 45 minutes until the pieces feel firm and dry when gently squeezed.

OATMEAL-LACE COOKIES (HAVREKNIPLEKAKER)
I found this delicious recipe late one evening when my daughter informed she needed to bring a Norwegian food item for a heritage day pot-luck at her school the NEXT day! I had all the ingredients and the cooking time is so short so this is the one I made for her. I'm so glad I did, these turned out to be very delicious and quite different from 'normal' cookies. The recipe is from Authentic Norwegian Cooking by Astrid Karlsen Scott.

- Let stand a few minutes before removing from pan.
