APPLE CAKE WITH BUTTERMILK SAUCE
I wish I could tell you this cake is a "keeper"...but in our family it never lasts long enough for me to find out! I prefer to use Cortland apples when I bake this cake, but any firm baking apple will work.

- Combine flour, baking soda, salt and cinnamon; set aside. In a large bowl, beat eggs. Add sugar, oil, vanilla and orange juice. On low speed, blend in flour mixture. Fold in apple, walnuts and coconut. Pour into a greased and floured 10-in. tube pan. Bake at 325° for 1-1/4 hours or until the cake tests done. Invert cake onto a large plate or platter. Deeply puncture the top of the warm cake with a skewer or pick., In a small saucepan, bring all sauce ingredients to a boil, stirring frequently. Immediately spoon 1-1/4 cups of sauce slowly over the top of the cake, then pour the remainder down the sides. Cool. Serve with whipped cream if desired.

This is a delicious recipe combining apples, sour cream, sugar and a few others--to make a scrumptious dessert. I highly recommend that you use a high quality sour cream-it really does make the difference.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C). Press the pie crust into and up the sides of a 9 inch pie plate.
- In a medium bowl, stir together 3/4 cup sugar, 2 tablespoons of flour, and salt. Mix in the sour cream, egg and vanilla until smooth. Add apples, and stir to coat. Scrape the mixture into the pie shell.
- Bake for 15 minutes in the preheated oven, then reduce heat to 350 degrees F (175 degrees C), and continue baking for 30 minutes more.
- While the pie is baking, prepare the topping in a medium bowl. Stir together 1/3 cup of flour, 1/3 cup sugar, and cinnamon. Cut in the butter until the mixture resembles fine crumbs.
- After the 30 minute bake time has passed, cover the top of the pie with the crumb topping, and continue to bake for 15 minutes, or until topping is lightly browned and apples are tender. Allow the pie to cool, then refrigerate until chilled before serving.

SOUR GREEN APPLE GUMDROPS
I adapted this from similar recipes found online. Mixing the Crystal Light with the sugar they're rolled in gives them a great burst of sour flavor to help offset the sweetness a little. This recipe is also easily customizable to get the flavor you want.

Steps:
- Spray a 9" x 13" pan on bottom and well up the sides with nonstick spray.
- Combine 4 c sugar, 1 packet appletini Crystal Light and all other ingredients in a large saucepan and allow to rest for 1 minute.
- Stirring constantly, bring to a boil over medium heat. Boil for 2 minutes.
- Pour into 9" x 13" pan.
- Place in refrigerator to cool for at least 3 hours. Pan may rest on counter for ~15 minutes to significantly reduce sloshing while being moved.
- Spray a nonporous cutting board with nonstick spray.
- Run a knife along the edge of the pan to loosen the gumdrops, then turn onto greased cutting board.
- Cut into ~3/4 inch cubes. A greased pizza wheel is highly recommended, or a cookie cutter can be used to make fun shapes.
- In a small bowl, combine 2/3 c sugar and 1 packet appletini Crystal Light.
- Roll gumdrops in sugar/Crystal Light to coat.
- Allow to sit uncovered for a couple hours until dry.
- Store in an airtight container.

- In a small saucepan, bring cider a boil; cook until liquid is reduced to about 1/4 cup, 15-20 minutes. Remove from the heat and cool., Preheat oven to 350°. In a large bowl, combine apples, sugar, orange juice, cinnamon and cloves; toss to coat. For cake batter, in a large bowl, beat butter, sugar, eggs, vanilla and cooled cider reduction until well blended. In another bowl, whisk cake flour, baking powder and salt; add to butter mixture alternately with sour cream, beating after each addition just until combined. , Transfer a greased 8-in. springform pan; place on a baking sheet. Spoon apple mixture over batter. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool 15 minutes on a wire rack., For sauce, in a small saucepan combine sugar, butter, buttermilk, corn syrup and baking soda. Cook and stir over medium heat until bubbly, 4-6 minutes. Remove from the heat; stir in vanilla. Pour sauce over warm cake. Serve warm. Refrigerate leftovers.

- Peel, core and slice apples.
- Preheat a medium skillet over medium to medium-high heat.
- Add butter to the skillet, then apples.
- Saute 7 or 8 minutes.
- Add sugar, cinnamon, nutmeg, and cloves.

- Preheat oven to 400 degrees. Butter and flour an 8-inch round cake pan* (or spray with Baker’s Joy or equivalent).
- In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt; set aside. In a separate bowl, beat butter and sugar with an electric mixer until pale and fluffy, about two minutes. Add vanilla and egg and beat well. With the mixer set to low speed, beat in 1/3 of the flour mixture. Add half the buttermilk and continue beating on low speed until incorporated. Scraping down sides of bowl as necessary, beat in another 1/3 of flour mixture then remaining buttermilk. Finally beat in the last 1/3 of the flour mixture until just combined.
- Scrape batter into the cake pan, smoothing the top with a spatula. Scatter apple pieces evenly over the top of the cake batter then sprinkle evenly with raw sugar. Sprinkle lightly with cinnamon.
- Bake in a preheated 400-degree oven until cake is golden and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Cool in the pan for ten minutes, then turn out onto a wire rack to cool until warm. Invert onto a plate. Serve plain, or with whipped cream and salted caramel sauce.
