BRUSCHETTA WITH FRESH BASIL



Bruschetta with Fresh Basil image

Delicious and flavorful with fresh tomatoes, basil, onions and garlic! One of my most popular appetizers.

Number Of Ingredients 7

2 ripe tomatoes, coarsely chopped
1/4 cup sweet onion, finely chopped
1/4 cup basil, lightly packed and chopped
1 clove garlic, finely minced
1 TBSP olive oil
2 TBSP Parmesan cheese - optional (Feta is also a great alternative!)
Italian or French bread.

Steps:

  • After the tomatoes have been chopped, let them sit for about 5 minutes and drain the liquid.
  • Mix in onion, basil, garlic and olive oil.
  • Just before serving, add some of the Bruschetta mixture onto sliced bread.
  • If Bruschetta mixture is cold, broil bruschetta on the bread for a minute or two to warm it up.

These little toasts are a warm and flavourful appetizer. Top baguette slices with caramelized onions cooked in balsamic vinegar and cheese, then warm on the grill.

Yield Makes 28 slices.

Number Of Ingredients 8

3 cups chopped onions
3 tbsp salted butter
1 1/2 tsp granulated sugar
1 tbsp balsamic vinegar
28 - 30 baguette slices, 1/4 inch (6 mm) thick
1 cup shredded mozzarella cheese
1/3 cup freshly grated Parmesan cheese
1/2 tsp freshly ground pepper

Steps:

  • In a heavy frypan, sauté onions in butter over low heat until softened, about 5 - 7 minutes.
  • Stir in sugar and continue to cook over low heat, stirring occasionally until onions are glazed and golden brown, about 10 - 12 minutes.
  • Add balsamic vinegar and cook, stirring constantly, until vinegar is evaporated; cool.
  • Preheat natural gas barbecue on low heat for 10 - 15 minutes. Meanwhile, spread onion mixture evenly over one side of each baguette slice.
  • Combine mozzarella and Parmesan cheese with pepper; sprinkle over tops.
  • Place baguette slices, cheese side up, on a grill topper. Grill, with lid down, over low heat on natural gas barbecue for 3 - 5 minutes or until bread is toasted and cheese is melted.

My first culinary "success." This recipe came from a great book _Cucina Amore_, and is often requested by friends and family.

Number Of Ingredients 10

6 roma tomatoes, diced
2 cloves garlic, chopped
2 cloves garlic, peeled
3 tablespoons olive oil
2 1/4 teaspoons balsamic vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper
8 slices Italian bread, cut about 1 inch thick
2 tablespoons grated parmigiano-reggiano cheese

Steps:

  • Whisk together chopped garlic, vinegar, salt, pepper, and basil.
  • When combined slowly drizzle in oil.
  • Add tomatoes and let sit for 20 minutes at room temp.
  • Meanwhile back at the bat cave, toast the bread.
  • This can be done either in the toaster (if it's got really wide slots) or under the broiler (if using this method watch closely so it doesn't become a brickette).
  • When the bread is toasted rub each piece, on one side, with the whole garlic pieces.
  • Place the bread on a cookie sheet and top with tomato mixture.
  • Sprinkle on a little cheese and broil till the cheese melts (you can skip that last broiling bit and it's equally as wonderful).
  • Serve immediately.
  • The tomato mixture also makes a wonderful vinegrette for an antipasto salad.

I posted a Fresh Strawberry and Almond Baked Brie that I sometimes make a different way...with apples and walnuts. This gave me inspiration to come up with this Bruschetta recipe. It is great in the fall for dinner parties and other occasions.

1 large white onion, thinly sliced
1 large baguette, cut into 1/2 inch slices
8 ounces brie cheese, rind removed
2 gala apples, cored and sliced into thin wedges
1/4 cup chopped walnuts, toasted
2 tablespoons rice wine vinegar
1 tablespoon dark brown sugar
2 tablespoons olive oil
salt

Steps:

  • Heat Olive Oil in a pan to medium high heat. Add Onions, seasoning with a pinch of salt. Cook until they begin to turn brown and caramelize. DO NOT BURN!
  • Add apples, vinegar, and brown sugar. Reduce heat to medium. Saute until apples are cooked through and vinegar/brown sugar are absorbed.
  • In the meantime, slice the brie into pieces that are similar in size to the baguette slices. Place one slice of cheese on each baguette slice. Broil for about 2-3 minutes, or until cheese melts and bread is crispy.
  • Top each baguette slice with a spoonful of the caramelized apple/onion mixture. Serve warm.
  • Idea! - This appetizer is great for a dinner party where pork is the main dish.
