1/4 cup all-purpose flour
1/2 teaspoon salt, divided
1/4 teaspoon plus 1/8 teaspoon pepper, divided
1 package (17.6 ounces) turkey breast cutlets
2 tablespoons butter, divided
2-1/2 cups quartered fresh mushrooms
1 large onion, chopped
3/4 cup reduced-sodium chicken broth
1/4 cup sherry or additional reduced-sodium chicken broth
1/2 cup reduced-fat sour cream
1-1/2 teaspoons minced fresh tarragon

Steps:

  • In a shallow bowl, mix flour and 1/4 teaspoon each salt and pepper. Dip cutlets in flour mixture to coat both sides; shake off excess. , Place a large nonstick skillet coated with cooking spray over medium heat. In batches, cook turkey in 1 tablespoon butter until meat is no longer pink, 2-3 minutes on each side. Remove from pan; keep warm. Wipe pan clean if necessary., In same skillet, heat remaining butter over medium-high heat. Add mushrooms and onion; cook and stir until tender. Stir in broth and sherry. Bring to a boil; cook just until liquid is almost evaporated. Stir in sour cream, tarragon and the remaining salt and pepper; heat through (do not allow to boil). Serve with turkey.

4 veal cutlets
1 tablespoon flour
2 tablespoons sunflower oil
1 shallot, chopped
2 cups oyster mushrooms, sliced
2 tablespoons Marsala or medium dry sherry
1 cup crème fraîche
2 tablespoons fresh tarragon, chopped
salt and pepper

Steps:

  • Season the flour with salt & pepper and use to dust the veal cutlets, then set aside.
  • Heat the oil in a large frying pan and cook the shallot and mushrooms for 5 minutes. Add the cutlets and cook over high heat for about 1½ minutes on each side. Pour the Marsala or sherry and cook until reduced by half.
  • Use a spatula to remove the veal cutlets from the pan. Stir the crème fraîche, tarragon and seasoning into the juices remaining in the pan and simmer gently for 3-5 minutes or until the sauce is thick and creamy. If the sauce seems to be too thick, add 2 tbl water.
  • Return the cutlets to the pan and heat through for 1 minute before serving.

Place olive oil and 2 tbsp butter in a large non stick skillet over medium heat. Cook the turkey cutlets about 2 minutes to brown on each side. Remove turkey cutlets and keep warm. Add remaining butter to the pan , add mushrooms and green onions, cook,stirring for two minutes;add sherry and stir to combine 2. Add the herbs and heavy cream. 1/2 celery stalk, cut into 1-inch pieces
1/4 onion, halved

  • 2. Cut the chicken breast halves in half horizontally to form 8 cutlets. Sprinkle evenly with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • 3. Place the flour in a shallow dish; dredge the chicken in flour.
  • 4. Heat a large skillet over medium-high heat. Add 1 tablespoon oil and 1 teaspoon butter to the pan; swirl until the butter melts. 1 1/2 pounds small white button mushrooms, stems trimmed

8 turkey cutlets (3 to 4 ounces each)
1/2 cup grated Parmesan cheese
1/2 cup chopped fresh parsley

Steps:

  • Heat broiler. If using a broiler-proof rimmed baking sheet, set rack 4 inches from heat; if using a broiler pan, set rack so that top of pan is 4 inches from heat. 1 garlic clove, minced
1/4 cup butter, melted

4 thin slices prosciutto or other ham, about 2 ounces
2 teaspoons dried rosemary
1 tablespoon chopped shallots

Steps:

  • Preheat grill to high.
  • Sprinkle turkey pieces with salt and pepper.
  • Cut cheese into thin slices to fit neatly in one layer, slightly overlapping, on turkey steaks. Set aside.

I found this recipe in a magazine many years ago. It is tasty and low in calories. I like to serve it over rice or noodles.

1 lb turkey breast, sliced (cutlets)
1 Tbsp vegetable oil
8 oz mushrooms, sliced
1/4 c onion, finely chopped
1/2 c dry white wine (optional)
3/4 c beef broth, reduced sodium, refrigerated, with the fat removed from the top
3 Tbsp all-purpose flour
1/4 tsp salt
1/4-1/2 tsp pepper
2 tsp lemon juice, fresh
1/4 tsp tarragon, dried, crumbled

Steps:

  • 1. Dry the turkey cutlets with paper toweling. Cut into 3x1 inch strips.
  • 2. Heat oil in a large non-stick skillet over medium heat. Working in batches if necessary, panfry the turkey for 30 seconds a side. Remove to a plate and keep warm.
  • 3. Saute mushrooms and onion in skillet over low heat for 3 minutes or until the mushrooms are soft. (you can add several TBS of water to prevent sticking if needed.) Add the wine.
  • 4. In a 2 cup measuring glass, stir the flour into the beef broth until smooth. Pour into skillet and stir. Add salt and pepper. Bring to a boil. Lower heat and stir constantly until the mixture thickens slightly.
  • 5. Lower heat to very low. Stir in lemon juice and tarragon. Return turkey to skillet. Cook 1 to 2 minutes until turkey is done.
  • 6. Notes: I have used lemon juice concentrate instead of fresh lemon juice. If you prefer, you can flatten the turkey with a mallet before you begin cooking. If I'm not using wine, I add water or more broth to make up the volume.

This is a lovely, quick recipe from a Good Housekeeping cookbook, with slight alterations to cook time/temp etc. It's extremely versatile; for instance, I had to use dried tarragon in place of fresh, and an onion in place of the shallot. It still came out great. Serve over noodles (but be aware that there is only enough sauce for two) and add garlic to your heart's content!
