MANDARIN ORANGE AND PEAR SALAD WITH TOASTED PECAN VINAIGRETTE
Found this recipe in a Paula Deen magazine and looks pretty and sounds good. Can't wait to try it out.

- In large bowl, combine lettuces, oranges, pears and red onion.
- For Dressing:.
- In a medium bowl, combine dijon and honey. Slowly add olive oil, whisking to combine. Slowly add vinegar, whisking to combine. Stir in toasted pecans.
- Drizzle salad with Toasted Pecan Vinaigrette, tossing gently to coat. Serve immediately.

- In a medium bowl, add orange curd. Emulsify the grapeseed oil by slowly pouring in the oil, whisking constantly. Continue whisking to incorporate sesame oil as well as white wine vinegar.
- Add honey, mustard then season with black pepper and salt; whisk well to blend ingredients. Serve over salad. Makes 1 cup.

- Gather the ingredients.
- Place the cider vinegar , mandarin orange juice, red wine vinegar (or balsamic vinegar), brown sugar, shallots, and kosher salt in a blender. Pulse to combine the ingredients.
- While the blender is running, very slowly add olive oil in a steady stream through the top opening of the blender.
- Transfer to a salad cruet or jar with a lid.
- Refrigerate any leftover vinaigrette for up to one week. After that, throw out any unused portion of this salad dressing.
- Enjoy.

CRUNCHY ROMAINE SALAD WITH SWEET SESAME VINAIGRETTE

- For the vinaigrette: Combine the mandarin syrup, vinegar, canola oil, sesame oil, sesame seeds, ginger and ramen seasoning in a jar. Cover tightly with a lid and shake until emulsified. Hold in the refrigerator. Shake again before using.
- For the salad: Preheat the oven to 350 degrees F. On a baking sheet, break up the ramen noodles into small pieces with your hands. Add the almonds and shake the pan to spread everything in an even layer. Bake until the ramen and almonds are a deep golden brown, 12 minutes. Let cool completely.
- In a large bowl combine the romaine, broccoli, carrots, oranges and scallions. Toss with enough vinaigrette to lightly coat. Top the salad with the toasted ramen and almonds. Serve immediately.
MANDARIN ORANGE VINAIGRETTE
This vinaigrette is delightfully different, and goes together in 5 minutes. This came from Cheap Fast Good! I have not tried this, just posting for safe keeping.

- Drain the oranges and put them in a blender or food processor. Add the vinegar, salt, and black pepper. With the motor running, add the honey and oil in a thin stream through the feed tube. Process until thoroughly blended.
- Serve at once or cover and refrigerate until ready to serve, up to 2 weeks. (If the dressing separates while standing, shake it well to recombine before serving).
