OLD-FASHIONED PANCAKES
Anybody can add water to a boxed pancake mix, but you're better than that! These pancakes are not too thick, not too thin, but tender, light, buttery, and delicious.

GOOD OLD FASHIONED PANCAKES
This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite.

GOOD OLD FASHIONED PANCAKES
I used to use Krustease Buttermilk pancake mix for many years, always wih success.I don't know why I even tried this recipe, but I'm so glad I did! I hope you will try it and enjoy it too. If you have a small or medium ice cream scoop, it's great to scoop up the batter and pour it onto the griddle! Feel free to add your favorite fruits, chocolate chips, even trail mix into the batter.Whenever I make pancakes, I always prepare the batter the night before, it just seems to make them better. I always throw away the first one, maybe two pancakes, until the grill gets just right.Source: KVVU

OLD-FASHIONED PANCAKES
This is the most basic recipe for a slightly thick pancake. It's just as easy to make a quick homemade batter as it is to open a box mix, which needs ingredients added to it anyway. And using organic ingredients seems to give the pancakes a cleaner and truer flavor. From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

Steps:
- Place a heat-proof platter into a warm oven (at 200 degrees).
- In a large bowl, whisk together the flour, sugar, salt, and baking powder. Make a well in the center of the flour mixture. Add in the egg, milk, and 2 tablespoons of the butter. Whisk from the center, slowly incorporating the flour. Rest the batter for 10 minutes.
- Heat a large well-seasoned cast-iron skillet or favorite griddle over medium-high heat. Swirl the remaining tablespoon of butter in the skillet (or use oil to coat the griddle) and immediately pour in 1/4 cup of batter for each pancake. When bubbles rise to the surface, flip the pancakes, slightly reduce the heat, and cook until the bottoms are golden and the centers are cooked, about 1 minute. (Rarely does the first pancake work because it takes a bit of time to get in the groove with the heat, fat, and batter.)
- As the pancakes come out of the skillet, place them on the warm platter in the oven until ready to serve. Serve a stack of 3 pancakes, topped with more butter and the maple syrup.

Steps:
- Sift the flour and a pinch of salt into a bowl. Make a well in the centre with the back of a spoon then break in the egg and pour in half the milk. Whisk together, gradually incorporating the flour to make a smooth thick batter. Beat thoroughly to remove any lumps, then stir in the rest of the milk.
- Heat a little oil or butter in a medium frying pan, then tip off the excess into a bowl. Pour about 2 tablespoons of batter into the pan, tilting the pan as you pour, until the batter thinly coats the base. Cook over a moderate heat for 30 seconds to one minute until golden brown on the underside.
- Flip over the pancake with a palette knife, and cook the other side until it is golden brown. Slide the pancake out of the pan on to a plate, heat a little more oil or butter and cook the remaining pancakes one at a time in the same way.
- If preparing in advance, cook and stack the pancakes. Reheat in the microwave on Medium (750W) for about 2 minutes. Alternatively, heat the oven to 180C/gas 4/fan 160C. Wrap the pancakes in foil and warm them through in the oven for 10 minutes.

HEALTHIER GOOD OLD FASHIONED PANCAKES
I loved this pancake recipe. Way better than a mix at the store but I wanted to cut a little of the fat. I make them with less butter, egg whites instead of a whole egg, and nonfat milk. They are so fluffy and tasty plus I feel great about giving them to my family.

Steps:
- Resift flour with sugar, baking powder and 3/4 teaspoon of salt. Combine melted butter, egg and yolk and whisk in milk. Preheat the griddle
- With a few swift strokes fold the wet ingredients into the dry ones. Do not overmix; keep the batter lumpy so they will turn out light. Cook the pancakes on the griddle, using a scant 1/4 cup for each pancake. Turn them over when bubbles form over the entire surface of the pancake and cook for a few minutes on the other side. Serve hot with maple syrup. For dinner, serve hot with a saute of apples and raisins and along with either slices of bacon or topped with cottage or ricotta cheese.

Steps:
- Beat egg.
- Stir in butter and milk.
- Combine flour, salt, sugar, and baking powder.
- Stir into egg mixture.
- Lightly grease a griddle.
- Heat griddle and drop about 1/4 cup batter onto griddle.
- Spread lightly with a spoon.
- When bubbles begin to appear around outside edge and break, turn with a spatula and cook on other side.
- (I also lift edge a little with the spatula and peek under it to see how it's doing.) You will need to adjust your heat so they do not cook too fast and burn.
- For me, the temperature usually ends up somewhere between medium and medium-high.

OLD WORLD PANCAKE
This recipe came from an old cookbook that my sister found at a garage sale in Sudbury, that's Northern Ontario, Canada. It is fast and easy and different. We love it with lots of warm Canadian maple syrup! I love that there is no flipping or pan watching involved in this one.

Steps:
- Turn oven on to 425'.
- Put butter in large (10 inch) ovenproof fry pan (I use a 4 litre sauté pan) and put the pan in the preheating oven.
- In medium mixing bowl, whisk together the eggs and milk.
- Sprinkle in the sugar, nutmeg and flour. This means, just dump in the dry stuff.
- Whisk it all together until it is smooth.
- Remove hot pan from the oven, swirl the butter around and then dump in all the batter.
- No need to spread it or mess about, just pop it back into the hot oven uncovered, close the door and sit back with a cuppa and wait.
- Set that timer for 16-18 minutes.
- Remove from oven and slice into wedges, in my house that means half for me and half for my husband!
- This is great served with warm maple syrup, from annieCANada of course.
- Now enjoy. If you are having a big breakfast and you actually have leftovers, rest assured that this pancake tastes great at room temperature, cold or reheated.
- Gotta love that!
- B'Shalom everyone, Anne.
