3 tablespoons brown sugar
3 sprigs fresh rosemary, finely chopped
2 garlic cloves, crushed and cracked away from the peels

Steps:

  • In a small saucepan, combine vinegar, sugar, rosemary, and garlic.
  • Bring to a boil and reduce heat to low.
  • Simmer 10 minutes to thicken sauce.
  • Remove garlic and serve with your favorite meat.

8 ounces dry white wine

Steps:

  • Place the vinegar in a small saucepan and bring to a boil over medium heat.
  • Boil vinegar until you reach a syrup. The bubbles will change as you do this until it seems as if you are boiling sugar.
  • DO NOT OVER REDUCE. You can burn it. Check by removing a drop or two and cooling quickly.
  • Cool in the saucepan. Bottle and serve with a small spoon.
  • Drink the wine after. You want your wits about you when reducing something.

1 cup balsamic vinegar
1 small container cherry tomatoes
1 (8-ounce) container fresh mozzarella (recommended: Ciliegine)
1 bunch large fresh basil leaves
Extra-virgin olive oil, as needed
Salt and freshly cracked black pepper
Salt and freshly cracked black pepper
4 teaspoons Eros Pista or fresh Hungarian paprika (recommended: Univer), optional

Steps:

  • Preheat a grill to medium heat.
  • To make the sauce, pour the balsamic vinegar into a small saucepan and reduce very slowly on low heat. Stir occasionally until it reduced to the consistency of syrup, approximately 10 minutes.
  • Onto a skewer, layer 1 cherry tomato, 1 piece of fresh mozzarella and 1 large folded basil leaf. Repeat this pattern until 2 inches are left on the end of the skewer. Push the ingredients down towards the bottom tip for easy handling of the tops. Repeat with the remaining skewers and ingredients. When the skewers are ready to grill, put them onto a large piece of foil, brush them with olive oil, and season with salt and pepper, to taste. Transfer the sheet of foil with the skewers onto the grill and shut the lid until the cheese begins to melt, about 3 minutes. When finished, pull the skewers from the heat by gripping the sides of the foil. Drizzle each skewer evenly with the balsamic reduction and sprinkle each with 1 teaspoon of Eros Pista. Transfer to a serving platter and enjoy.

4 cups frozen, thawed or fresh blueberries
1 quart balsamic vinegar
1/4 cup sugar
Lime peel cut in strips from 1 lime (green part only)
1 (3-inch) cinnamon stick

Steps:

  • In a large non-reactive saucepan, crush blueberries with a potato masher or back of a heavy spoon. Add vinegar, sugar, lime and cinnamon and bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Cool slightly and pour into a large bowl. Cover and refrigerate for 2 days to allow flavors to blend.
  • Place a wire mesh strainer over a large bowl. In batches, ladle blueberry mixture into strainer, pressing out as much liquid as possible. Discard solids.
  • Pour vinegar into clean glass bottles or jars, and refrigerate, tightly covered, indefinitely. Use in salad dressings or drizzled over chicken or beef.

Large bunch fresh basil leaves
Olive oil, for drizzling

  • Measure the balsamic vinegar and pour into a saucepan. Bring it to a gentle boil over a low heat. Cook it until the balsamic vinegar has reduced to a nice thick glaze (but still pourable), about 15 minutes. Oh and one other thing, your house will stink. But it's a good kind of stink, it's a vinegary stink. Allow the reduction to cool to room temperature before you serve it.
  • When you are ready to assemble the salad, cut the tomatoes into thick slices. Arrange them on a platter, alternating them with the mozzarella slices. Tuck the whole basil leaves in between the tomato and cheese slices.
  • Drizzle on the gorgeous, almost black balsamic reduction. Then drizzle olive oil in a thin stream over the top. Finally, sprinkle on salt and pepper.
