- In a small mixing bowl combine flour and baking powder.
- Beat oil, sugar, and cocoa together in a large mixing bowl. Add eggs to oil and cocoa mixture one egg at a time, beating well after each addition. Stir in vanilla. Mix in flour mixture. Fold in nuts if desired. Chill the dough overnight.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheet.
- Roll dough into walnut-size balls and roll each ball in confectioners' sugar.
- Bake cookies for 12 to 15 minutes.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch baking pan.
- Stir 1 cup all-purpose flour, 1/4 teaspoon baking soda, and 1/4 teaspoon salt together in a bowl.
- Cream brown sugar, 6 tablespoons butter, and 1/4 cup white sugar together in a bowl. Stir in 1 egg and egg yolk. Add flour mixture and 1 cup chocolate chips; stir until combined. Spread cookie dough in the prepared baking pan.
- Combine 1/4 cup white sugar, 1 tablespoon butter, and water in a saucepan over medium heat. Bring to a boil. Stir in chocolate chips until smooth; transfer chocolate mixture to a bowl. Stir in 1 egg and vanilla extract.
- Stir 1/3 cup all-purpose flour, 1/4 teaspoon salt, and 1/8 teaspoon baking soda together in a bowl. Add to chocolate mixture. Spread batter evenly on top of the cookie dough.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 21 minutes. Be careful not to overbake.

- Heat oven to 350°F.
- Combine 1 cup sugar and 1/2 cup margarine in large mixer bowl.
- Beat at medium speed until creamy.
- Add egg and vanilla, and continue beating until well mixed.
- Reduce speed to low,and add all remaining cookie ingredients except marshmallows.
- Beat until well mixed.
- Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.
- Bake for 6-7 minutes or until edges are just set.
- Remove from oven.
- Press 1 marshmallow half onto center of each cookie.
- Continue baking for 2 minutes or until marshmallow is softened.
- Cool 1 minute; remove from cookie sheets.
- Cool completely.
- Combine all frosting ingredients except milk in small mixer bowl.
- Beat at low speed, adding enough milk for desired spreading consistency.
- Frost cooled cookies, covering entire marshmallow.
- Variations: Before putting frosting over cooled cookies, spread a thin layer of peanut butter, caramel, or seedless raspberry jelly over marshmallow, and then add your frosting.

- Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment paper.
- Put the chocolate in a microwave-safe bowl and melt it in the microwave. Stir and let cool.
- Using an electric mixer, mix together the sugar and butter in a large bowl until totally combined. With the mixer on low, slowly drizzle in the cooled chocolate. Scrape the bowl and mix again. Mix in the eggs one at a time, then the vanilla. Scrape the bowl once more and mix.
- Combine the flour, cocoa powder, baking powder and salt in a bowl and stir it together. Add it in scoops to the mixing bowl with the mixer on low. Scrape the bowl once and mix one final time until all combined.
- Scoop generous tablespoons of the dough onto the prepared baking sheet, then bake until the cookies are poufy and set, 11 to 12 minutes. Let them sit on the baking sheet for 1 to 2 minutes, then remove them to a wire rack to cool completely. Repeat with the remaining dough.
- Once cool, sprinkle generously with powdered sugar.

- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, baking powder and salt in a medium bowl; set aside.
- Combine 6 ounces chopped chocolate and the butter in a medium microwave-safe bowl. Microwave in 45-second intervals, stirring after each, until melted, about 2 minutes. Let cool slightly.
- Meanwhile, combine the eggs and sugar in a large bowl and beat with a mixer on medium-high speed until very thick and pale, about 5 minutes. Stir the espresso powder and vanilla in a small bowl, then beat into the egg mixture.
- Beat the warm chocolate mixture into the egg mixture. Reduce the mixer speed to low and beat in the flour mixture until combined. Beat in the remaining 2 ounces chopped chocolate; finish mixing with a rubber spatula (the dough will be soft).

CHOCOLATE BROWNIE SANDWICH COOKIES WITH WHITE CHOCOLATE GANACHE AND STRAWBERRY PRESERVES

- For the cookies: Preheat the oven to 375 degrees F. Line 2 large rimmed baking sheets with parchment paper.
- Whisk the flour, baking powder and salt in a small bowl.
- Stir the 2 cups chocolate chips and butter in a medium bowl over a saucepan of barely simmering water until the chocolate mixture is melted and smooth. Remove the bowl and set aside. The mixture may be thick.
- Combine the eggs, sugar and vanilla in a large bowl. Beat the egg mixture using an electric mixture, until light and fluffy, about 5 minutes. Add the melted chocolate mixture and beat until well blended. Add the flour mixture and beat until just incorporated. Stir the remaining 1 cup chocolate chips into the batter. If the batter is very soft, chill for 15 to 20 minutes to allow the batter to firm up slightly. The batter can be prepared 1 day ahead. Let the batter stand at room temperature at least 1 hour before continuing.
- Using a small cookie scoop, drop the batter in rounded tablespoonfuls onto the baking sheets, spacing 1 1/2-to-2-inches apart. Bake the cookies until slightly firm to touch and crackled all over tops but still soft in the center, 12 to 15 minutes. Cool the cookies on the sheets.
- For the white chocolate ganache: Bring the cream to simmer over medium heat in a heavy small saucepan. Remove the pan from heat and add the white chocolate chips. Stir until melted and smooth. Chill the ganache until firm enough to spread, 1 to 2 hours. The ganache can be prepared 1 day ahead. Cover and keep chilled. Let the ganache stand at room temperature 2 hours to soften slightly before using.
- For the strawberry preserves: Mix the preserves and the lemon zest in a small bowl.
- Spread about 1 teaspoon ganache onto the flat side of each cookie to within 1/4-inch of the edge. Spoon 1/2 to 1 teaspoon strawberry preserves on the ganache side of half of the cookies. Place the remaining cookies on top, ganache side down, to form sandwich cookies. Chill until the ganache is firm, 15 to 20 minutes. Insert lollipop sticks into the ganache filling, if desired
- For the white chocolate drizzle: Place the white chocolate in a small bowl over a saucepan of barely simmering water. Stir occasionally until the chocolate is melted and smooth. Drizzle the melted chocolate over the top of one side of each sandwich cookie, using a fork. Chill until the chocolate has set, about 10 minutes. The drizzle can be prepared 1 day ahead. Store airtight in the refrigerator.
BROWNIES WITH A SURPRISE
Steps:
- Preheat oven to 350 degrees. Melt butter and chocolate together in a metal bowl over simmering water. Remove from over water and set aside. In a large bowl, whisk together sugar, eggs and vanilla. Whisk only to blend. Add chocolate mixture and whisk gently. Add flour and salt and use the whisk to stir in until blended. Grease a 12 by 12-inch square pan, and line the bottom with parchment. Pour a scant half of the brownie batter into pan and spread smooth. Place the 16 peanut butter cups upside-down onto the batter, spacing them evenly in 4 rows of 4 (the brownies will be cut into 16 squares, with a peanut butter cup in the center of each.) Push the cups down into the batter slightly. Top with the remaining batter and gently spread smooth. Bake 30 minutes. Center will still be soft. Remove from oven and let cool in pan on wire rack. Cool completely before cutting, or for best cutting results, chill several hours or overnight in refrigerator. Cut into 16 (3-inch) squares.

- Arrange the racks in the upper and lower third of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.

- Preheat oven to 300.
- In medium bowl, combine flour and baking powder. Mix well with whisk and set aside.
- In medium bowl with an electric mixer cream butter and sugar. Add egg and vanilla and beat on medium until smooth. Add the flour mixture and blend at low speed until thoroughly combined. Dough will be firm.
- Scoop tablespoons of dough, roll into 1-inch-diameter balls and place on ungreased cookie sheets, 1 inch apart. Witht he small end of a melon baller, scoop out the center of the dough balls. Be careful to not scoop all the way through the cookie. Place 1/2 teaspoon of jam in the center of each dough ball. Place scooped out dough back into the bowl to use to form more cookies.
- Bake 22-24 minutes or until light golden brown. Transfer to a cool flat surface.

- Melt the butter and mix in the sugars. Add the beaten eggs, baking soda, salt, vanilla, and water. Add the flour and mix throughly. Then chill the dough for at least an hour (overnight is fine, too).
- Preheat over to 375 degrees F., rack in the middle position.
- Scoop out a tablespoon of dough and form it around a piece of bridge mix. Place a walnut half on top and place it on a greased baking sheet, 12 cookies to a standard sheet.
- Bake at 375 degrees F. for 10-12 minutes, or until nicely browned. Cool on cookie sheet for two minutes and then transfer the cookies to a wire rack.
