- Mix oil and sugar until well blended.

- Kick the tires and light the fires and preheat your oven to 350 degrees.
- Melt the butter in a pot, remove from the heat and stir in the white sugar.
- Once that is combined, mix in your cocoa.
- Add in your eggs then add in the vanilla. If you are using chocolate chips instead of chocolate chunks, you can mix in the 2/3 of a cup after the eggs are thoroughly combined into the mix.
- Once all that is mixed very, very well, add in your flour and barely stir it in. Just barely. I read somewhere that stirring the flour mixture creates gluten, which in turn creates the cakey texture I don't like for brownies. So in theory, the less you stir, the less gluten and then chewy brownies here we come!
- Line a 9x9 pan with parchment paper.
- I used chocolate chunks, which I placed on top of the batter. They are so heavy that they sink right into it. Bake at 350 degrees for 30-40 minutes, until the brownies pull away from the edges slightly.This is why I use the chunks, they sink in right to the top level of the brownies. Cool the brownies.

- Remove the cookie dough from the package, and place it between two sheets of parchment paper. Then use a rolling pin to flatten it into a rectangle.
- Prepare the brownie mix according to the instructions on the box, but use only half of the water that the recipe calls for so the batter is not too liquidy when you eventually roll up the dough.
- Spread the brownie batter evenly over the cookie dough with a spatula.
- Using the edge of the parchment paper, carefully but tightly begin rolling the cookie dough the same way you would a cinnamon roll.
- Chill the log in the freezer for at least 15 minutes. It should be firm but not rock solid.
- Slice the log into cookie-shaped pieces with a sharp knife. If you notice the log is starting to flatten when you cut it, stick it in the freezer for a few extra minutes to allow it more time to firm up.

- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the brownie mix, oil, and egg (or egg + egg yolk). Note that the batter will be very thick. Fold in the chocolate chips or chunks now, if desired.
- Use a medium cookie scoop to portion out the batter into 2-tablespoon balls. The cookies will spread while baking, so I recommend only placing 8 cookies per baking sheet.
- Bake at 350 degrees for 9-10 minutes. My cookies were perfectly cooked at 10 minutes in a 350 degree oven, but I would recommend starting to check them around the 9-minute mark. They’re done when they’re no longer shiny on top, even though they may still look slightly underbaked overall.
