1/2 cup butter, cut into pieces
1 bag (12 oz) semisweet chocolate chips (2 cups)
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla
1 cup Gold Medal™ all-purpose flour
1/4 cup unsweetened baking cocoa
1/2 teaspoon salt

Steps:

  • Heat oven to 325°F. Spray cookie sheets with cooking spray.
  • In 2-quart saucepan, heat butter and 1 cup of the chocolate chips over low heat, stirring occasionally, until melted. Remove from heat; stir in brown sugar. Cool slightly, stirring occasionally. Stir in eggs and vanilla. Stir in flour, cocoa and salt. Stir in remaining 1 cup chocolate chips. Onto cookie sheets, drop dough by tablespoonfuls about 2 inches apart.
  • Bake 10 minutes or until almost set. Cool 5 minutes; remove from cookie sheets to cooling racks.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

1 cup sugar
1 teaspoon vanilla
2 large eggs
1/4 teaspoon baking powder
1/3 cup cocoa powder

Steps:

  • Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius.
  • Mix oil and sugar until well blended.
  • Add eggs and vanilla; stir just until blended.
  • Mix all dry ingredients in a separate bowl.
  • Stir dry ingredients into the oil/sugar mixture.
  • Pour into greased 9 x 9 square pan.
  • Bake for 20 minutes or until sides just starts to pull away from the pan.
  • Cool completely before cutting.

3/4 cup of butter
1 1/2 cups of white sugar
3/4 cup of cocoa
3 eggs

1 cup of chocolate chips or chocolate chunks
3/4 cup of flour

Steps:

  • Kick the tires and light the fires and preheat your oven to 350 degrees.
  • Melt the butter in a pot, remove from the heat and stir in the white sugar.
  • Once that is combined, mix in your cocoa.
  • Add in your eggs then add in the vanilla. If you are using chocolate chips instead of chocolate chunks, you can mix in the 2/3 of a cup after the eggs are thoroughly combined into the mix.
  • Once all that is mixed very, very well, add in your flour and barely stir it in. Just barely. I read somewhere that stirring the flour mixture creates gluten, which in turn creates the cakey texture I don't like for brownies. So in theory, the less you stir, the less gluten and then chewy brownies here we come!
  • Line a 9x9 pan with parchment paper.
  • I used chocolate chunks, which I placed on top of the batter. They are so heavy that they sink right into it. Bake at 350 degrees for 30-40 minutes, until the brownies pull away from the edges slightly.This is why I use the chunks, they sink in right to the top level of the brownies. Cool the brownies.

  • *For a keto version, try these Keto Chocolate Cookies.Combine dry ingredients in a large mixing bowl. 2 four ounce bars (226g) semi-sweet chocolate, coarsely chopped
3/4 cup (94g) all-purpose flour (spoon & leveled)
1/4 cup (21g) natural unsweetened or dutch-process cocoa powder
1 teaspoon espresso powder
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup (5 Tablespoons; 72g) unsalted butter, softened to room temperature
3/4 cup (150g) packed light brown sugar
1/4 cup (50g) granulated sugar
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
optional: 3/4 cup (135g) semi-sweet chocolate chips

Steps:

  • Melt the chocolate in a double boiler or use the microwave. Microwave in 20 second increments, stirring after each until completely melted. Set aside to slightly cool (so it doesn't melt the butter or cook the eggs).
  • Whisk the flour, cocoa powder, espresso powder, baking powder, and salt together. Set aside.
  • In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar together on medium-high speed until smooth and creamy, about 2 minutes. Add the eggs and vanilla extract, and beat on high speed for 2 full minutes. Scrape down the sides and up the bottom of the bowl, then beat on high for 1 more minute. Pour in the slightly cooled melted chocolate and mix on medium-high speed for 2 full minutes.
  • Pour in the the dry ingredients and beat on low speed until combined. Finally, beat in the chocolate chips.
  • Preheat oven to 350°F (177°C). Line large baking sheets with parchment paper or silicone baking mats. As the oven preheats, continue to step 6.
  • Cover and chill the dough in the refrigerator for just 20 minutes as the oven preheats. This quick chill time helps slightly solidify the chocolate and butter in the dough, which gives the cookies a nice spread (not over-spread). Chilling for longer creates thicker cookies where, in some cases, they may not spread at all. If chilling for longer than 20 minutes, allow the dough to sit at room temperature for 15 minutes before rolling and baking.
  • Roll or scoop the dough into balls, 1.5 Tablespoons of dough each. I recommend a medium cookie scoop. Place 3 inches apart on the baking sheets and bake for 12-13 minutes or until the edges appear set. (The centers will be quite soft, but will set up as the cookies cool.)
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Steps:

  • Preheat the oven to 350°F (176°C).
  • Grease either one 13x9x2-inch baking pan or two 8 or 9-inch square pans with cooking spray or a little oil.
  • Melt the butter in a large microwave-safe bowl on medium heat (50%). Work in intervals for approximately 2-2 1/2 minutes, or until it's completely melted.
  • Add the sugar and vanilla, whisking until smooth.
  • Beat the eggs in one at a time, fully incorporating after each addition.
  • Blend the cocoa powder into the bowl until the batter is smooth.
  • Gently stir in the flour, baking powder, and salt. Add any extras before the flour is fully incorporated.
  • Pour the batter into the prepared pans and bake for 30-35 minutes for the 13x9x2-inch baking pan. Bake for 20-22 minutes for the two smaller pans.
  • Remove from the oven when the brownies are pulling away from the edges of the baking pans.
  • Cool on a wire rack.

16 oz. chocolate chip cookie dough
1 box brownie mix

Steps:

  • Remove the cookie dough from the package, and place it between two sheets of parchment paper. Then use a rolling pin to flatten it into a rectangle.
  • Prepare the brownie mix according to the instructions on the box, but use only half of the water that the recipe calls for so the batter is not too liquidy when you eventually roll up the dough.
  • Spread the brownie batter evenly over the cookie dough with a spatula.
  • Using the edge of the parchment paper, carefully but tightly begin rolling the cookie dough the same way you would a cinnamon roll.
  • Chill the log in the freezer for at least 15 minutes. It should be firm but not rock solid.
  • Slice the log into cookie-shaped pieces with a sharp knife. If you notice the log is starting to flatten when you cut it, stick it in the freezer for a few extra minutes to allow it more time to firm up.
  • Place the cookies on a lined baking sheet, and bake at 350°F for 8-10 minutes or until the tops of the cookies look dry.
  • Let cool and enjoy!

Powdered sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment paper.
  • Put the chocolate in a microwave-safe bowl and melt it in the microwave. Stir and let cool.
  • Using an electric mixer, mix together the sugar and butter in a large bowl until totally combined. With the mixer on low, slowly drizzle in the cooled chocolate. Scrape the bowl and mix again. Mix in the eggs one at a time, then the vanilla. Scrape the bowl once more and mix.
  • Combine the flour, cocoa powder, baking powder and salt in a bowl and stir it together. Add it in scoops to the mixing bowl with the mixer on low. Scrape the bowl once and mix one final time until all combined.
  • Scoop generous tablespoons of the dough onto the prepared baking sheet, then bake until the cookies are poufy and set, 11 to 12 minutes. Let them sit on the baking sheet for 1 to 2 minutes, then remove them to a wire rack to cool completely. Repeat with the remaining dough.
  • Once cool, sprinkle generously with powdered sugar.
