This is my mother-in-laws famous brown bread recipe. We find these rolls at every family gathering! I reach for this recipe over and over again when we are craving bread for it has so few ingredients and so easy to make. My kids make a meal out of it in the mornings especially when they get to slather their own homemade strawberry jam over the top! Makes 3 loaves or 48 rolls

3 3/4 cups warm water
1/4 cup warm water (100 to 110 degrees F)
1 1/2 tablespoons salt
1 cup molasses
1/2 cup melted Crisco
1 fresh yeast cakes or 3 teaspoons dry yeast
1 teaspoon sugar
6 -10 cups flour

Steps:

  • Mix the yeast, sugar, and 1/4 cup of warm water.
  • Let sit for 5 minutes.
  • (Yeast is good if it foams!) In large bowl combine water, salt, molasses, and Crisco.
  • Stir until salt dissolves.
  • Add the yeast mixture and stir well.
  • Sift in 6 cups of flour and stir until mixed well.
  • Keep adding flour until mixture becomes too hard to stir.
  • Flop the dough onto a well floured surface and knead 6-8 minutes.
  • Place dough in large greased bowl, cover, set in warm place and let raise until double in size.
  • Punch dough down and with greased hands form into 3 loaves and place in greased loaf pans or form into approx.
  • 48 rolls and place in greased pans.
  • Preheat oven to 350.
  • Let formed dough rise.
  • Cook in preheated oven at 350 for 40-45 minutes.
  • Let bread/rolls sit in pans for 5-10 minutes then finish cooling on wire racks.
  • Brush butter over the tops and ENJOY!

1 1/2 cups warm coffee (about 100 degrees F)
1 tablespoon brown sugar
2 1/4 teaspoons active dry yeast
2 1/4 cups bread flour
1 1/2 cups whole-wheat flour
1 tablespoon cocoa powder
1/3 cup honey
2 tablespoons salted butter, softened
2 tablespoons molasses
Olive oil, for greasing and drizzling

Steps:

  • Mix together the warm coffee and brown sugar in a small pitcher. Mix in the yeast and set aside for a couple minutes to bloom.
  • In the bowl of an electric mixer, mix together the bread flour, whole-wheat flour and cocoa powder. Add in the coffee/yeast mixture, as well as the honey, butter and molasses. With the dough attachment, mix on medium until a ball begins to form, about 2 minutes. Reduce the speed to low and knead for an additional 6 minutes.
  • Grease a large bowl with olive oil; put the dough in it and cover with plastic wrap. Place in a warm spot in the kitchen and let rise until doubled in size, about 2 hours.
  • Divide the dough in half, form into 2 tight balls and put on a baking sheet. Drizzle the tops with olive oil and cover very loosely with plastic wrap. Allow to rise again for 45 minutes to 1 hour.
  • Preheat the oven to 375 degrees F.
  • When the dough is ready, remove the plastic wrap. With a serrated knife, cut an X in the top of each round. Carefully transfer the dough to two 10-inch cast-iron skillets. Place both skillets on the center rack of the oven and bake until the crusts are browned and the centers are set, about 30 minutes. Transfer to a cooling rack and allow to cool for at least 15 minutes before slicing.

106 grams (1/2 cup) packed light brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. If you want to make yourself a guide, use a 6-inch round cake pan or bowl to trace two circles onto the parchment, then turn the parchment over (so the ink won't touch the dough). Or just wing it.
  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl, using a hand mixer), cream the butter and brown sugar on medium-low speed until light and fluffy, 4 to 5 minutes.
  • Add the vanilla and mix on low speed to combine. Scrape the bowl well. Add the flour and salt and mix on low speed just until incorporated, 1 to 2 minutes.
  • Divide the dough into 2 equal portions (about 306 grams each) and shape into disks. Place one disk on one half of the prepared baking sheet and use your hands to flatten the dough into a 6-inch round. Repeat with the second disk, leaving 1/2 inch of space between the rounds. If using, brush a coat of egg wash onto the surface of each round.
  • Use a sharp knife to score each round gently into 8 wedges--press down just enough to barely cut into the dough, to a depth of about 1/4 inch. Bake until the edges of the shortbread are just beginning to turn golden and the surface appears set, 12 to 14 minutes.
  • Cool the shortbread completely on the baking sheet, then cut along the score lines into wedges.

My DH loves bread pudding and got this recipe from work and wanted me to try it. We love cinnamon so I doubled the cinnamon and decreased the nutmeg. The 9x13" pan made it really thin, the next time I'm going to see if it will fit in an 8x8" pan for a deeper finished recipe. Taste was great!

4 cups bread, torn into bite size pieces
2 cups milk
3 eggs
3 tablespoons butter
1 cup brown sugar
2 teaspoons vanilla
1/2 teaspoon nutmeg
2 teaspoons cinnamon

Steps:

  • In a small pan over low heat, melt butter with brown sugar for 5 minutes stirring occasionally. Set aside.
  • In a large bowl, combine all other ingredients except bread. Mix thoroughly.
  • Combine butter and sugar mixture with egg mixture, stirring constantly.
  • Spray 9x13" pan and cover the bottom with the torn bread.
  • Pour mixture over the bread.

White sugar, a peerless product in many ways, doesn't taste like anything but sweet. Using brown sugar, like toasting nuts before adding them to a recipe, adds another level of flavor. You won't think "Oh, this tastes like brown sugar." You'll simply think "Oh, this is the best shortbread I have ever had." Homemade shortbread with ice cream is one of the coziest desserts you could possibly make for a dinner party of friends. Though it used to be commonplace (under the name short'nin' bread), almost no one bakes it at home any more. It's a snap.

2 1/2 sticks unsalted butter, softened at room temperature
1/2 cup packed light brown sugar
2 1/4 cups all-purpose flour
1/4 cup cornstarch

Steps:

  • Preheat the oven to 350 degrees F. Line a 10 by 14 1/2-inch sheet pan (with sides) with parchment or waxed paper.
  • In a mixer fitted with a paddle attachment (or using a hand mixer), cream the butter until soft and smooth. Add the brown sugar and mix until incorporated.
  • In a separate bowl, stir together the flour and cornstarch. Add to the butter mixture and mix at low speed just until the ingredients are incorporated and the dough comes together. Turn the dough out onto a floured work surface and knead it 5 to 10 times, just to smooth the dough.
  • Reflour your work surface. With a rolling pin, roll the dough out to fit the sheet pan. To transfer to the sheet pan, roll the dough up onto the rolling pin, lift it up, and unroll into the pan. Using light strokes of the rolling pin, roll the dough evenly into the corners and edges of the pan, and roll out any bumps. (Or, press the rolled-out dough thoroughly into the pan with your fingers.) Prick the shortbread all over with a fork to prevent any buckling or shrinking.
  • Bake in the center of the oven for 15 minutes. After 15 minutes, rotate the pan and knock it once against the oven rack, to ensure even cooking and a flat surface. Bake 10 to 15 minutes more, until very lightly browned.
  • Immediately sprinkle the granulated sugar evenly over the surface. Let cool 10 minutes, then cut into 1 1/2 by 3-inch bars. Let cool completely in the pan, then store in an airtight container.
