Brown rice with spinach and Parmesan cheese is an easy, healthy, one-pot side dish with just a few simple ingredients!

1 tablespoon extra-virgin olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 1/4 cups quick cook brown rice (see notes)
1 tablespoon fresh thyme, chopped
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 1/2 cups low-sodium chicken or vegetable broth
1 (8 oz.) bag fresh spinach, roughly chopped
1/4 cup grated Parmesan cheese (plus extra for serving)

Steps:

  • Heat olive oil in a large pan over medium heat.
  • Add onion and sauté 5-6 minutes, until softened. Add garlic and sauté another 30 seconds.
  • Add quick cook rice, thyme, salt and pepper and stir to get the rice coated in the oils.
  • Add chicken or vegetable broth and bring to a boil. Then cover, lower the heat to medium low and cook 15-20 minutes, until the liquid is absorbed and the rice is cooked through.
  • Add chopped fresh spinach on top of the rice, then cover and let sit for 5 minutes off the heat.
  • Stir spinach into the rice and add Parmesan cheese. Taste and adjust seasoning and serve hot.

Healthy spinach brown rice that is made with a raw spinach and kale sauce and a lovely exotic twist from mango and lemon.

2 cups brown rice
2.5 cups baby spinach
1 leaf kale (-large)
2 leaves bay
1 yellow mango (-small)
2 scallions
1 clove garlic
3.75 cups water ((or vegetable stock))
4 tbsp extra virgin olive oil
1 lemon (-juiced & zested)
1/4 cups pine nuts (- for garnish (optional))

Steps:

  • Add the brown rice, water, bay leaves and a pinch of sea salt to medium stock pot. Bring to a simmer, cover with a tight lid, turn the flame down and simmer away for 45 minutes or until all the water is absorbed. Remove the rice from flame and allow it to sit covered for 10 minutes.
  • Transfer the cooke rice to a large mixing bowl and using a fork fluff up the grains. Discard the bay leaves.
  • Meanwhile add the spinach, kale and sliced mayo to a food processor or blender together with the scallions, garlic, olive oil and lemon juice. Process until smooth with a pesto-like texture. Season to taste with sea salt and more lemon juice if desired.
  • Pour the spinach sauce on top of the rice and using a spatula fold to coat well. Garnish with the pine nuts and serve!

Spanakorizo (Greek Spinach Rice) is the comfort food of your dreams. It gives you all the cozy, feel-good vibes but is also loaded with nutrients from spinach, plus flavor from dried herbs and a splash of lemon juice. This easy Greek rice recipe can be enjoyed as a vegetarian main for 4 people or as a side with your favorite protein (up to 6 people).

1 cup medium grain rice
4 tbsp extra virgin olive oil
1 yellow onion (chopped)
1 pound baby spinach
1 lemon, juiced
Kosher salt and black pepper
2 cloves garlic (minced)
2 tablespoons tomato paste
1 1/2 teaspoon dried mint flakes
1 teaspoon dried dill weed
Feta (for garnish)

Steps:

  • Rinse the rice well a few times until the water runs clear. Put the rice in a bowl and add water to cover it by 1 inch. Let is sit to soak for 20 minutes or until you are easily able to break one grain of rice between your fingers.
  • Heat ¼ cup extra virgin olive oil in a braising pan. Add the onions and cook for 5 minutes, stirring regularly, until soft and golden brown. Add the spinach, lemon juice, garlic, tomato paste, and a big pinch of kosher salt and black pepper. Sautee the spinach until just wilted. Stir in the mint and dill weed.
  • Drain the rice well and add it to the pan. Add 1 ½ cups of warm water. Bring to a boil for 3 minutes until the water reduces a bit. Turn the heat to low and cover.
  • Let the rice cook undisturbed for 20 minutes or until the rice is tender and fully cooked through and all the liquid has been absorbed.
  • Once cooked, let the rice sit covered for 5 to 10 minutes before serving.
  • When ready, fluff the rice with a fork and garnish for feta and parsley, if you like.

1 medium cucumber, peeled, halved lengthwise, seeded, and sliced crosswise 1/4-inch thick
2 cups baby spinach
1 pint cherry tomatoes, halved

Steps:

  • Bring the water to a boil in a medium saucepan. Stir in brown rice and 1 teaspoon coarse salt. Cover and simmer over low heat until rice is tender and has absorbed all liquid, about 40 minutes. Remove from heat; let stand 10 minutes, then fluff with a fork.
  • In a large bowl, whisk together oil, vinegar, dill, garlic, and sugar. Season generously with salt and pepper. Add rice, cucumber, spinach, and tomatoes, and toss to combine. Serve immediately.

1 3/4 cups cooked rice (brown, basmati or jasmine)
3 tablespoons rice vinegar
2 teaspoons soy sauce
1 pound baby spinach or 2 pounds bunch spinach, stemmed and washed
2 teaspoons black sesame seeds or lightly toasted regular hulled sesame seeds
1/4 pound firm tofu, cut into dominoes 1/4 inch thick by 1/2 inch wide and drained on paper towels
2 tablespoons peanut sauce
2 large carrots (about 1 pound), peeled and grated
6 shiitake mushrooms, stems removed, thinly sliced
1/2 cup cilantro, coarsely chopped, plus additional sprigs
1/3 cup mint leaves, coarsely chopped, plus additional leaves
1/4 cup Thai basil leaves, coarsely chopped, plus additional leaves (may substitute regular basil if you can't get the Thai variety)
Salt to taste
8 8 1/2-inch rice flour spring roll wrappers

Steps:

  • Toss the rice with 1 tablespoon of the rice vinegar and the soy sauce
  • Wash the spinach and steam 1 to 2 minutes, tossing halfway through. It should wilt but still have some texture. Rinse with cold water, squeeze dry and coarsely chop. Season with salt to taste
  • Spread each tofu domino with about 1/4 teaspoon peanut sauce
  • Place the shredded carrots, slivered mushrooms and chopped herbs in a large bowl and toss with the remaining rice vinegar and salt to taste
  • Fill a bowl with warm water and place a spring roll in it just until it is pliable, about 30 seconds. Remove from the water and drain briefly on a kitchen towel. Place the wrapper on your work surface in front of you and arrange several cilantro sprigs, whole mint leaves and basil leaves, vein side up, on the wrapper. Leaving a 2-inch margin on the sides, place a handful of the carrot mixture on the wrapper, slightly nearer to the edge closest to you. Top with a handful of rice, then a handful of spinach. Place 3 tofu dominoes down the length of the spinach. Fold the sides in, then roll up the spring rolls tightly, squeezing the filling to get a tight roll. Refrigerate until ready to serve. Serve with a dipping sauce of your choice

1 teaspoon olive oil
1 large onion, finely chopped
1 cup brown rice
2 cups water or 2 cups broth
1 (10 ounce) box frozen spinach, thawed and drained
4 ounces feta cheese, crumbled
8 kalamata olives, pitted and finely chopped
4 eggs, lightly beaten (or 1 cup egg substitute)

Steps:

  • In a large saucepan, heat the oil over medium heat.
  • Add the onion and sautee for about 5 minutes or until just golden.
  • Stir in the rice and water.
  • Bring to a boil.
  • Cover and reduce the heat to a simmer.
  • Simmer, covered for about 45 minutes, or until all the water is absorbed.
  • Remove from the heat.
  • Preheat oven to 350°F Oil a 8x8 baking dish (ceramic or glass would probably be best).
  • Stir in the spinach, feta and olives into the rice.
  • Stir in the eggs.
  • Pour into the prepared baking dish.
  • Bake, uncovered for 25-30 minutes, or until a knife incerted into the center comes out clean.
  • Let stand for 5 minutes before serving.
