CLASSIC TUNA MELT SANDWICH RECIPE
Nothing beats a hot, cheesy tuna melt sandwich for a comfort food lunch or dinner, and we have a few family secrets to making the best tuna sandwich ever!

Steps:
- Flake the tuna with a fork, then combine the tuna, mayonnaise, onion, celery, relish, lemon juice and salt and pepper.
- Slather two pieces of bread with mayonnaise like you would use butter, then place into a large skillet, mayonnaise side down.
- Place a cheese slice onto the bread.
- Spread the tuna mixture over the cheese slices. Place a cheese slice on top.
- Use the mayo to "butter " the remaining two slices, then place on top, mayonnaise side up and out.
- Heat the pan to medium heat and cook until the bread is lightly browned on the bottom.
- Flip the sandwiches carefully to the other side, then cook until the other side has browned.
- Remove, slice in half and serve.

- In a small bowl, combine the first five ingredients; add tuna and mix well. Spread rolls with additional mayonnaise if desired; top each with 1/2 cup tuna mixture and lettuce.

CURRIED TUNA SALAD

- In a mixing bowl break the tuna up with a fork. Toss with the onion, fresh coriander, and raisins.
- In a small saute pan, heat the oil over medium heat, add the curry powder, and stir until fragrant, about 30 seconds. Remove pan from the heat and set oil aside to cool.
- Add the curry oil to the mayonnaise, season with salt, and pepper to taste and add the lime juice. Gently mix the tuna with the seasoned mayonnaise. Serve on a bed of lettuce or in a sandwich.
- Yield: 3 to 4 servings
HOT CURRIED TUNA SALAD SANDWICHES
This is a similar recipe to one that my grandmother used to make when I was very young. Never have been able to duplicate it exactly, though. Perhaps it just tasted different coming from her kitchen. This rendition comes in a close second.

- Preheat oven's broiler.
- In medium bowl, stir together the tuna, celery, green onion, mayonnaise, lemon juice and curry powder.
- Spoon equal amounts onto each English muffin half, and top with a slice of cheese.
- Place muffins on a baking sheet.
- Broil for 2 - 3 minutes, or until cheese is melted and toasty.
- Serve hot.
- Team with a geen salad and a piece of fruit for a complete meal.

BARBIE'S TUNA SALAD
This is a really great tuna salad recipe I got from a friend who used it in her catering service business many years ago. The secret ingredients are the curry and Parmesan cheese! Odd combinations but this makes a terrific tuna sandwich! She used it for an appetizer with gourmet crackers and people always wanted her recipe. I have never tasted another tuna salad quite like this one, and it has been my favorite recipe for tuna salad for many, many years.
