This recipe from The Pioneer Woman Cooks cookbook makes you to rethink meatloaf, with a blanket of thin, flavorful bacon and tangy-sweet sauce.

For the Meatloaf:
1 c. whole milk
6 slices white bread
2 lb. ground beef
1 c. (heaping) freshly grated Parmesan cheese
1/4 tsp. seasoned salt
3/4 tsp. salt
Freshly ground black pepper
1/3 c. minced flat-leaf parsley
4 whole eggs, beaten
10 slices thin/regular bacon
For the Sauce:
1 1/2 c. ketchup
1/3 c. brown sugar
1 tsp. dry mustard
Tabasco, to taste

Steps:

  • Preheat oven to 350˚. Pour milk over the bread slices. Allow it to soak in for several minutes.
  • Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.
  • With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)
  • Lay bacon slices over the top, tucking them underneath the meatloaf.
  • Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
  • Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.
  • Serve with mashed potatoes. Yummy!

1 1/2 pounds ground meatloaf mix
1 cup dried plain breadcrumbs
1 cup shredded sharp Cheddar
3/4 cup chopped cooked bacon
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-4 loaf pan with parchment paper.
  • Combine the meatloaf mix, breadcrumbs, Cheddar, bacon, chives, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands to mix together until combined well. Transfer the mixture to prepared loaf pan. Bake the meatloaf for 30 minutes.
  • Meanwhile, stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl.
  • Remove the meatloaf from the oven and brush the top and sides all over with the ketchup glaze. Bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 45 minutes more. Let rest for 10 minutes before slicing and serving.

Add onion and garlic; saute until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl. 5 slices bacon
1 stalk celery, diced
1 cup fine bread crumbs
1 cup milk
3 eggs
1 teaspoon Worcestershire sauce
1 teaspoon ground black pepper
½ teaspoon onion powder
1 pound ground beef
1 pound ground pork
⅓ cup ketchup
3 tablespoons brown sugar
1 tablespoon dry mustard
½ teaspoon Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.
  • Combine bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery in a large bowl. Mix well.
  • Crumble beef and pork into egg mixture and mix together using your hands, making sure not to overmix. Form into a loaf and place into the prepared loaf pan. Place the bacon slices along the top of the loaf long-ways.
  • Bake in the preheated oven on the middle rack for 30 minutes.
  • While the meat is cooking, combine ketchup, brown sugar, dry mustard, and Worcestershire for glaze in a small bowl; mix well.
  • Remove loaf from the oven and drain any fat bubbling around edges and on top. Return to the oven and continue to bake for 25 minutes more. Remove once more, drain fat again, and spoon or brush glaze mixture evenly over the top. Increase oven temperature to 400 degrees F (200 degrees C).
  • Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.

1 medium onion, chopped
2 garlic cloves, minced
2 large eggs
1/2 teaspoon dried thyme leaves

1/4 teaspoon hot red pepper sauce
1/2 cup milk or 1/2 cup plain yogurt

6 -8 ounces bacon, thin sliced (8-12 slices)

Steps:

  • Glaze: Mix all ingredients and set aside.
  • Meat loaf:.
  • Heat oven to 350°F.
  • Heat oil in medium skillet and sauté onion and garlic about 5 minutes. Set aside to cool.

  • MIX eggs with thyme, salt, pepper, mustard, Worcestershire, steak sauce, hot pepper sauce, and milk. Add egg mixture to meat in a large bowl, along with crackers or bread crumbs, parsley and cooked onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. *If mixture does stick, add additional mil a couple tablespoons at a time and continue mixing until mixture stops sticking.
  • COVER a wire rack with foil, prick foil in several places with a fork. Place rack on a shallow roasting pan lined with foil for easy cleanup.
  • TURN meat mixture onto prepared rack and with wet hands form mixture into a loaf approximately 9 X 5 inches.
  • BAKE loaf for 35 minutes; remove from oven. Top loaf evenly with glaze mixture. Add bacon crosswise, over loaf, overlapping them slightly. Return to oven for 5-10 minutes or until bacon is crispy and glaze is bubbly.
  • REMOVE from oven and top with grated cheese. Return to oven for final time until cheese is melted and beginning to brown. Approximately 5 minutes.
  • Let cool 20 minutes. Slice and serve.

  • For the meat loaf: Heat oven to 350°. Heat oil in medium skillet; add celery and garlic. Saute until softened, about 5 minutes. Set aside while preparing main ingredients.
  • Mix eggs with thyme, salt, pepper, mustard, worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley and cooked celery and garlic. Mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add more yogurt or milk, a couple of tablespoons at a time, until mixture no longer sticks.).
  • Turn meat mixture onto waxed paper. With wet hands, shape into loaf and place in meatloaf pan or shallow pan. Brush with half the glaze and arrange bacon slices on top.
  • Bake loaf until bacon is crisp and internal temperature of loaf registers 160 degrees, about 1 hour 15 minutes. Take out of oven and let rest under foil for 20 minutes. Simmer remaining glaze over medium heat until thickened slightly. Slice meat loaf and serve with extra glaze passed separately.
