GRILLED PORK TENDERLOIN

- Trim the pork tenderloin of any excess fat and silver skin.
- Place the lime zest, lime juice, honey, salt, and garlic powder in a small, lidded jar and shake to combine. Pour half of the marinade mixture into a 1-gallon resealable bag, add the chipotle pepper, and move around to combine. Add the pork tenderloin to the bag and seal, removing as much air as possible and place in a container to catch any leaks. Marinate in the refrigerator for 6 to 24 hours, rotating the bag halfway through the time. Place the remaining marinade in a covered container and refrigerate until ready to use.
- Remove the tenderloin from the bag and allow to sit at room temperature while preparing the grill. Remove the reserved marinade from the refrigerator.
- Fill a large chimney starter with natural lump charcoal and light. Once the charcoal is ashy and white, approximately 30 minutes, dump the hot charcoal onto the lowest grate of the grill and spread into an even layer using extra-long tongs. Place the cooking grate back on the grill and cover with the lid; heat the grate to medium heat for 2 to 3 minutes.
- Brush the grill with vegetable oil. Remove the tenderloin from the bag and place in the center of grate. Discard bag with marinade. Cover and cook for 12 to 15 minutes, turning every 1 1/2 to 2 minutes, until the tenderloin reaches an internal temperature of 140 degrees F.
- Remove the tenderloin from the grill and place on a large piece of heavy-duty aluminum foil folded at the edges to create a basket, and pour on the reserved marinade. Wrap tightly and rest for 10 minutes. Remove to a cutting board and slice. Garnish with cilantro and serve.

ROSEMARY PORK TENDERLOIN

- In a small bowl, whisk together the Dijon mustard, fresh ground black pepper, chopped rosemary, and minced garlic and mix well. Rub the mustard mixture over the surface of the tenderloins and wrap in plastic wrap. Marinate in the refrigerator for 1 hour.
- Preheat oven to 375 degrees F.
- Place rosemary sprigs and smashed garlic in the center of a roasting pan. Remove the plastic wrap from the tenderloins and top each with 2 slices of maple bacon. Tie with kitchen twine to secure bacon strips.
- Place the roasting pan in the oven and bake for 25 to 30 minutes or until an instant-read thermometer, inserted in the tenderloins, registers 160 degrees F. Remove from oven when desired doneness is reached and let sit for 5 to 10 minutes on a cutting board. Remove kitchen twine, slice and serve with your favorite sides. Garnish with the rosemary sprigs and garlic. Enjoy!
BACON-WRAPPED PORK TENDERLOIN

- Preheat the oven to 375 degrees F.
- Lay the bacon onto a rimmed baking sheet lined with a baking rack. Bake until the bacon has rendered some of its fat but is still completely flexible and hasn't begun to brown, about 15 minutes. Remove from the oven and let cool 5 minutes. Raise the oven temperature to 450 degrees F.
- Generously sprinkle the tenderloin with salt and black pepper.
- In a small bowl, stir together the mustard, brown sugar, garlic powder and cayenne. Coat the tenderloin all over with the mixture.
- Starting at one end, wrap the bacon strips around the tenderloin, overlapping them slightly so they are shingled.
- Place the tenderloin on the baking rack and roast until 130 degrees F at the thickest point, about 17 minutes. Let rest 5 minutes, then transfer to a cutting board using a long offset spatula and tongs. Slice into 1-inch-thick rounds and serve.
BROILED PORK TENDERLOIN
This is super easy, and super tender pork tenderloin. Don't over cook it; it should be about medium.

- Preheat the oven to 400. Mix the spices with the oil. Tie the end of the tenderloin so that it is a constant thickness. Slather the spice/oil mixture all over the tenderloins. Put them in a pan lined with AL foil (shiny side up). Let set for 10 minutes to let the salt soak on the meat. Turn the oven to broil; stick in the meat. Have it approximately 5 inches below broiler. Cook for 5 minutes (the top outside of meat should be browned), and flip it over. Cook for another 8 to 15 minutes (until center is 125). Pull them out and let them rest with a tent for 10 minutes. Eat!!!!

- Prepare grill for indirect heat.
- Season meat with garlic powder, salt, and pepper.
- Lightly oil grate. Place tenderloin on grate, and position drip pan under meat. Cook over indirect heat for 30 minutes.

APPLE PICKING BRAISED PORK TENDERLOIN

- Preheat the oven to 375 degrees F.
- Heat 1 tablespoon of the olive oil in a large braiser or Dutch oven over high heat. Pat the pork dry with paper towels and season all over with 1 teaspoon salt and 1/2 teaspoon pepper. Add to the pot and sear until golden brown on all sides, about 6 minutes. Remove to a plate.
- Reduce the heat to medium-high heat and add the remaining 1 tablespoon olive oil and the red onion to the pot. Cook, stirring frequently, until translucent, about 3 minutes. Add the garlic, 1 teaspoon salt and 1/2 teaspoon pepper and cook, stirring, until fragrant, about 1 minute. Stir in the farro and toast for 1 minute. Add the apple cider and scrape up the brown bits from the bottom of the pot with a wooden spoon. Add the chicken broth, grainy and regular Dijon and the thyme and bring to a strong simmer, about 2 minutes.
- Return the pork to the pot along with any residual juices. Braise in the oven until an instant-read thermometer inserted in the thickest part reaches 145 degrees F, 15 to 20 minutes. Remove the pork to a cutting board, tent loosely with aluminum foil and allow to rest.
- Stir the apple into the farro mixture. Bake until most of the liquid evaporates and the farro and apples are just tender, 15 to 20 minutes.
- Remove the thyme sprigs from the farro and stir in the escarole to wilt. Slice the pork into 1/2-inch-thick medallions. Serve the sliced pork over the farro and apples, topped with the parsley.

This is a recipe I have made alot...I got it from one of my Taste of Home cookbooks...It looks very fancy and tastes great....putting here for safe keeping so I don't have to keep looking it up in my cookbook...

- Preheat oven to 375 degrees.
- Slice tenderloin in 1/4 inch slices; pound thin between sheets of waxed paper.
- Dip into flour/salt/pepper mixture and saute very quickly in 2 T. of butter.
- Place in single layer in 11" X 9" X 2" baking dish, sprayed with Pam.
- Dice shallot, saute; add white wine and deglaze pan.
- Add to baking dish putting over pork slices.
- Mix parmesan cheese, bread crumbs and 1/4 cup butter in food processor.
- Make a log of the mixture.
- Slice and press one slice on top of each slice of pork (I just crumble on top of pork and press down on slices).
- Bake for 15 to 20 minutes.

GRILLED AND STUFFED COLONIAL PORK TENDERLOIN
Every once in a while I just get one right. Right ingredients, right combination, right motivation. This is an amazing pork recipe that was inspired by a disturbingly simple Colonial Goose recipe I am fond of. I served with a green salad and some brown rice.

Steps:
- Cut a "pocket": lengthwise in the pork with a fillet knife. Widen from the inside so that the hole is no more than two inches long, taking care not to puncture the bottom or sides.
- Rub garlic on inside, then fill cavity with Worcestershire. Stand upright and allow to "marinade" for ~30 minutes.
- Half, then slice apple and onions into about 1/16" slices.
- Reserve liquid marinade and stuff (you will be "shoving" this pork full -- don't think there is too much in there, there is not) with apples and onions.
- Liberally apply pepper to each side and grill for 20 minutes per side at a constant temperature between 375-400 degrees. Watch for flares and move to top rack if necessary to prevent burning.
- Allow to rest for ten minutes before slicing.
