Steps:
- Preheat oven to 400 degrees F. Add bacon to a large rimmed baking sheet lined with parchment paper. Bake bacon for ~10-15 minutes in the oven, until cooked through, to desired level of crispiness. Flip bacon once in the middle of baking if desired. Once done, pat dry with paper towel and chop bacon into bite-sized pieces.
- Bring a large pot of salted water to a boil on the stove over high heat. Add broccoli and boil for 2 minutes. Drain broccoli immediately, and run cold water over broccoli florets to keep them from cooking.
- To a large bowl, add blanched broccoli, diced onion, and diced red pepper. Toss to combine.
- Add blue cheese dressing, salt, and pepper. Mix together to coat broccoli salad ingredients until fully coated with dressing.
- Top salad with sunflower seeds, chives, and blue cheese crumbles.

- Cut broccoli into large pieces.
- Steam broccoli until tender but still bright green, about 10-12 minutes.
- Peel onions and cut in half through root end. Cut onion into thin slices.
- Heat oil in large skillet. Add onions and cook until soft, and some are dark brown and crispy, about 10 minutes.
- Put broccoli in a large bowl, add onions, cheese and mint.
- Toss, adding salt, pepper and more olive oil if necessary.
- Serve immediately.

- Make the broccoli filling. Steam the broccoli crown for four minutes, then remove from the heat. Rinse with cold water and pat dry. Slice 1/4 inch thick. Heat the oil over medium-high heat in a large, heavy frying pan, and add the red onion. Cook, stirring, until tender and seared on the edges. Add the sliced broccoli. Cook, stirring, until seared on the edges, about three minutes. Stir in the cilantro or epazote, season with salt and pepper, and remove from the heat. Taste and adjust seasoning.
- In a microwave: Place a corn tortilla on a plate. Top with half the broccoli and onions, and spread in an even layer. Sprinkle on half the cheese, and top with another tortilla. Press down gently, then microwave for 1 to 1 1/2 minutes until the cheese has melted. Remove from the microwave, cut into quarters or sixths, and serve. Repeat with the remaining ingredients.
- In a pan: Place a corn tortilla in a pan. Top with half the broccoli and onions, and spread in an even layer. Sprinkle on half the cheese. Turn the heat on medium-high, and heat until the cheese begins to melt and the tortilla begins to brown. Place another tortilla on top of the cheese, and press down lightly. Flip over the quesadilla in the pan, and heat for about 30 seconds or until the cheese has melted. Flip back over, and remove to a plate. Cut into quarters or sixths, and serve. Repeat with the remaining ingredients.

Steps:
- Cook pasta according to directions. Add the broccoli when pasta almost done to partially cook it.
- Heat saucepan and melt butter. Lightly sauté the garlic. Add the drained pasta and broccoli and sauté for about 3-4 minutes, adding more butter if necessary. Add cracked black pepper.
- Transfer to serving bowl and mix in the crumbled blue cheese and grated parmesan cheese.
- Mix well and serve.

ULTIMATE BROCCOLI - BLUE CHEESE CASSEROLE
This recipe has been slightly modified to suit the taste of people who prefer a little more taste in the casserole. Other recipes for Broccoli and Blue Cheese casserole are often runny, have only a slight flavor to them, and over cooked broccoli. We make this at Thanksgiving, Christmas, 4th of July, and other special occasions. It is the only dish of our 9-12 other dishes that doesn't ever make it to the refrigerator since it is completely gone on the first pass around the table. It is considered dessert by my 14 year-old son because it is so delicious.

Steps:
- Preheat oven to 350°.
- Steam or boil broccoli florets until just cooked, about 2-3 minutes - drain water well.
- In a large saucepan melt 2 tablespoons butter over medium-low heat. Stir in flour. Add cream cheese, blue cheese, salt, and milk. Stir over heat until smooth. Stir in broccoli being careful to not break apart broccoli and pour into an 8x8 or 9x9 oven-safe dish.
- Mix 6 tablespoons melted butter with cracker crumbs until well combined. Stir in 1 cup of cracker mixture into broccoli mixture. Pour mixture into a casserole dish.
- Bake covered for 15 minutes.
- Remove from oven and sprinkle the top with remaining cracker crumbs. Return to oven and bake uncovered for another 15 minutes.
- Allow to cool for 10 minutes before serving.
- This can be prepared the day before and you will need to add 25 minutes to your cooking time if it has been refrigerated.
