8 oz bow-tie pasta (, cooked to al dente according to directions listed on package)
1 1/2 lbs broccoli (, crowns chopped into small pieces and majority of stems discarded or reserved for another use (about 4 cups))
2/3 cup low-fat plain Greek yogurt ((I used Chobani non-fat))
1/3 cup mayonnaise ((full fat))
1/3 cup red wine vinegar
3 Tbsp honey
3/4 tsp salt
1/3 cup chopped red onion
2 cups grapes (, chopped into halves)
1 cup toasted pecans (, chopped)
8 slices bacon (, cooked and chopped)

Steps:

  • In a mixing bowl, whisk together plain Greek yogurt, mayonnaise, red wine vinegar, agave, salt and red onion.
  • Place cooked pasta and chopped broccoli in a large mixing bowl and pour Greek yogurt mixture over top and toss to evenly coat.
  • Cover bowl with lid or plastic wrap, transfer to refrigerator and chill 2 hours. Toss in chopped grapes, toasted pecans and cooked bacon just before serving.

1 cup chopped pecans
1 pound fresh broccoli
1 cup mayonnaise
⅓ cup sugar
⅓ cup diced red onion
⅓ cup red wine vinegar
1 teaspoon salt
8 ounces bow-tie pasta, cooked (½ of a 16-oz. package)
2 cups seedless red grapes, halved
8 cooked bacon slices, crumbled

Steps:

  • Preheat oven to 350°F. Bake pecans in a single layer in a shallow pan 5 to 7 minutes or until lightly toasted and fragrant, stirring halfway through.
  • Prepare pasta according to package directions.
  • Meanwhile, cut broccoli florets from stems, and separate florets into small pieces using tip of a paring knife. Peel away tough outer layer of stems, and finely chop stems.
  • Whisk together mayonnaise and next 4 ingredients in a large bowl; add broccoli, hot cooked pasta, and grapes, and stir to coat. Cover and chill 3 hours. Stir bacon and pecans into salad just before serving.

This recipe is my recollection of a recipe my best friend's sister used to make. She had explained it to me once and I quickly scribbled down the ingredients and brief description of how she said she made it. I have made this several times and it is one of those "to taste" recipes. I sometimes garnish this with crumbled cooked bacon or a little Parmesan cheese. Please don't substitute reduced fat or fat free dressing - I tried doing this once and was very unhappy with the results. I prefer Marie's brand for the dressing (usually sold near produce in a small jar..I use pretty much the whole jar usually), but you could also use homemade. Prep time allows for cooking the pasta. Plan ahead - this needs to chill.

1 (12 -16 ounce) package rotini pasta, cooked and drained, cooled completely (corkscrew shape)
1 bunch fresh broccoli, florets only, cut into bite-sized pieces
2 cups white seedless grapes or 2 cups red seedless grapes, halved, approximately, to taste
1 (15 ounce) can black olives (small or medium size)
1/2-1 cup red onion, sliced thinly or finely chopped
1 1/2-2 cups chunky-style bleu cheese salad dressing, approximately to taste, do not use fat free (such as Marie's)
salt, to taste
fresh ground black pepper, to taste
crumbled cooked bacon or sunflower seeds, optional garnish

Steps:

  • Combine pasta, broccoli, grapes, olives, and red onion in a large bowl.
  • Pour all of the blue cheese dressing into a separate mixing bowl.
  • Add enough of the reserved canning liquid from the olives to thin the dressing enough to your liking (*note:ifyou forgot to save the canning liquid, just use some cold water)- you may not need the full 1/4 cup, or you may need a little more- it depends upon how thick the bleu cheese dressing you purchased was.
  • The idea is to make the dressing thin enough to evenly coat all of the veggies& pasta lightly.
  • Mix thinned dressing with the veggie& pasta mixture and toss to coat well.
  • Chill at least 2 hours or overnight to allow pasta to absorb the dressing a bit- the chilled salad will appear dry.
  • Taste for seasonings- you may add a little salt& pepper if desired, but it may not be necessary depending upon the dressing brand you selected.
  • Toss salad again before serving.
  • Garnish if desired.
  • Garnishing IDEAS: If you like a little crunch, please feel free to garnish this with some crumbled cooked bacon or some sunflower seeds- sometimes I have even stirred them into the salad itself.

A wonderful summer meal, sweet and sour pasta, with the tastey undertones of bacon. This is from Southern Living Sept 2011. When I first saw it, I did not think it was going to be a good combination, but I made it because it seemed kid-friendly; but now *I'm* converted! I'm listing the ingredients the way they listed them, but honestly, half the sugar is perfectly yummy. Also, I did not find it necessary to chill the salad, so if you're running short on time, go ahead and eat it room temp! I also hid some boiled egg in this salad for extra protein for my kids--I just minced up the whites and blended the yolks into the mayonnaise mixture. They LOVED it! Lastly, the reviews for this on myrecipes.com gets 5 stars with 42 reviews, so it's worth a try!
