My easy, make-ahead, low-carb wonder, Broccoli-Cauliflower Salad with Cranberries is a holiday side-dish favorite. This healthy salad is full of crisp broccoli and cauliflower, sweet/tart cranberries and crunchy pistachios, and it's equally at home on an elegant Christmas dinner table or at a covered dish neighborhood potluck.

3 cups broccoli florets (coarsely chopped into bite-size pieces (about 3 stalks))
2 cups cauliflower (coarsely chopped into bite-size pieces (about 1/2 head))
1 cup dried cranberries (I used Craisins))
1/2 cup pistachios* (coarsely chopped)
3 Tbsp red onion (finely minced)
6 slices bacon (cooked and crumbled)
1 cup mayonnaise
1/4 cup sugar
2 Tbsp red wine vinegar
1/2 tsp kosher salt
1/4 tsp ground black pepper

Steps:

  • Add broccoli, cauliflower, cranberries, and pistachios to a large bowl. Set aside.
  • Combine the mayonnaise, sugar, red wine vinegar, salt, and pepper in a small bowl and whisk until smooth and creamy.
  • Pour the dressing over the salad ingredients, add the bacon and red onion and stir to combine. Serve immediately, or cover and refrigerate for up to 3 days.

1 cup mayonnaise
1/4 cup sugar
2 Tbsp. red wine vinegar
1/2 tsp. salt
1/4 tsp. pepper
3 cups coarsely chopped broccoli florets
2 cups coarsely chopped cauliflower (about 1/2 head)
1 cup sweetened dried cranberries
1/2 cup chopped pistachios
3 Tbsp. chopped red onion

Steps:

  • 1. Cook bacon in a large skillet over medium-high heat 6 to 7 minutes or until crisp; remove bacon, and drain on paper towels. Crumble bacon. 2. Meanwhile, combine mayonnaise and next 4 ingredients in a large bowl, stirring until blended. Add bacon, broccoli, and remaining ingredients. Toss until vegetables are coated. Note: Chop the broccoli and cauliflower just enough to create uniform pieces, keeping smaller florets intact.

It is a Huge hit at BBQ's, in fact everyone always wants a copy of the recipe.A friend sudgested I make copies of the recipe when I take it to gatherings. Great Idea! The best part about this recipe is you get a lil bit of something in every bite! That is why it is so important to cut your veggie's up into small bite size pieces. I also only use 1/4 to 1/2 cup of fresh green onions

5 cups broccoli (cut up in small pieces the size of a nickle to a quarter. Do not use the stems.)
5 cups cauliflower (do the same as for broccolli)
2/3 cup onion (or green onions)
2 cups cheddar cheese (shredded)
6 pieces cooked bacon
1/4 cup sunflower seeds
1/3 cup raisins
1/2 cup sugar
1 cup mayonnaise
1 tablespoon cider vinegar
1 tablespoon red wine vinegar

1 cup mayonnaise
3 tablespoons granulated sugar
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • FOR THE SALAD ~ In a large salad bowl, mix all salad ingredients.
  • FOR THE DRESSING ~ In a small bowl, beat all dressing ingredients with wire whisk until blended.

¼ cup raw almonds, sliced
