- Preheat convection oven to 400 degrees F (200 degrees C).
- Rub chicken breasts with olive oil and sprinkle both sides with salt and Creole seasoning. Place chicken in a broiler pan.
- Bake in the preheated oven for 10 minutes. Flip chicken and cook until no longer pink in the center and the juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Remove chicken from pan. Pour water into the pan, while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add more water if needed to dislodge the browned bits; serve alongside chicken.

SIMPLE PAN-FRIED CHICKEN BREASTS
This is a dish I came up with to serve with HeatherFeather's Red Wine & Rosemary Sauce over Linguine. This is so simple and extremely easy. I pan-fry the chicken in a skillet, then prepare the sauce in the same skillet. You might get some blackened 'stuff' in the pasta sauce - I strain it first before serving.

Steps:
- Pound the chicken breasts with a meat mallet or a rolling pin, to tenderize the meat and ensure uniform thickness.
- Sprinkle salt and pepper on both sides of the chicken and let sit for 15 minutes or so.
- Heat a skillet over med-high heat, and add olive oil.
- When pan is sufficiently heated, sear chicken breasts over high heat.
- Allow about 2 minutes (until lightly browned) before turning to other side.
- Optional: Before serving, sprinkle grated cheese on chicken and broil for approx 5-10 mins (until cheese is melted).
- Serving suggestions: Serve this over pasta, or as chicken sandwich with fresh tomatoes, lettuce and mustard/mayo.
- Personally I love this with fried rice too.

- If the breasts are thicker than 3/4 inch, place them on a cutting board that is lined with plastic wrap. Add another piece of wrap on top of the breasts. Pound the breasts to 1/2 to 3/4 inch thin. Coat the breasts generously with EVOO on both sides. Season with salt and pepper to taste. Set aside while you prepare the grill.
- Preheat your Foreman grill on high for approximately 5 minutes.
- Place the chicken on the grill and close the top. Grill for 4 to 5 minutes or until juices run clear. Check with a meat thermometer. You are looking for an internal temperature of at least 165°F.
- Remove the chicken to a platter and allow it to rest for 5 minutes before serving. Serve with your favorite grain side dish and vegetables. I recommend fluffy quinoa or cous cous and grilled asparagus.

- Preheat oven to 400° F (207°C). Pat dry the boneless chicken breasts with paper towels. Score the bottom of the chicken.
- Drizzle the olive oil on the chicken, add the minced garlic and rub all over the chicken breasts.
- Add honey, smoked paprika, lemon juice, salt and ground black pepper to the chicken. Stir to combine well with the chicken. Set aside and marinate for 15 minutes.

- It is important that you have all your ingredients handy before you start stir-frying, this is a quick recipe and you don't want to burn anything.
- Make the stir fry sauce and set aside: add all the ingredients to a bowl and mix to combine.
- Cut the chicken breast into small cubes, season with a pinch of salt and pepper, 1 ½ tbsp of cornflour, 1 tablespoon of the stir fry sauce, mix to combine then leave the chicken to marinate while you prep the other ingredients
- Heat up 2 tablespoons of oil in a wok/skillet over medium-high heat, add chicken pieces, making sure you are not overcrowding the pan and brown the chicken (this process takes about 3 minutes) You can work in batches if the chicken doesn't fit your pan in one go.
- Take out the browned chicken and transfer to a bowl. Don't transfer to a kitchen towel as you want to retain all the juice from the chicken.
- Still using the same wok/skillet, heat up a tablespoon of vegetable oil to the wok, add chopped bell pepper and onions and stir fry for about 2 minutes. Add the chopped garlic and stir fry for another minute. Stir fry for longer if you want your vegetables soft.
- Add chicken and toasted cashew and continue to stir fry for another minute or two, Finally, add the stir fry sauce and about 1/3 cup water (if you want it saucy) and simmer for about another minute or until the sauce thickens. Finish with chopped green onions (this is optional) Take it off the heat and serve immediately with rice. Enjoy
