BROCCOLI CAULIFLOWER CROCK POT CASSEROLE
We turned the holiday favorite into a crock pot dish!

Steps:
- In a medium sized bowl add soups and cheese.
- Heat in microwave for 1 minute, then stir
- Continue heating for 30 seconds until cheese has melted, stirring each time.
- Pour both bags of frozen veggies in crock pot.
- Pour cheesy soup mix over veggies and stir.
- Place lid on and set crock pot on high for 2-3 hours or until it is bubbling
- Crush your sleeve of crackers and place in plastic bag
- Pour melted butter into bag of crushed crackers and mix well
- Pour crackers evenly on baking sheet
- Place cookie sheet under broiler for 90 seconds
- Stir crackers up with spatula
- Place under broiler for 30 more seconds
- After veggies are cooked, pour crackers over casserole
- Serve and enjoy!
BROCCOLI-CAULIFLOWER CHICKEN CASSEROLE
A chicken, broccoli and rice casserole is one of our favorite comfort foods. I make my easy variation in the slow cooker. You can easily substitute whatever cheese you prefer. - In a 6-qt. slow cooker, combine the first 6 ingredients. In a small bowl, whisk broth, cream cheese, oil, sage, salt and pepper; pour over chicken mixture. Sprinkle with cheese. Cook, covered, on low 4-5 hours or until chicken and vegetables are tender. Serve with rice.

Steps:
- Steam all the vegetables, in one pot if they'll fit, until tender.
- Spread vegetables evenly in bottom of 9 x 13 inch casserole.
- Salt and pepper to taste.
- In saucepan, heat both cans of soup (no water) and cheese over low to medium heat, stirring constantly.
- When cheese is thoroughly melted, pour evenly over vegetables in casserole.
- Sprinkle extra cheese on top, if desired.
- Bake in 350 oven until heated through.

CROCK POT CHICKEN AND BROCCOLI CASSEROLE
This is a recipe I like to throw together when we want something a little different. It comes out really good! You can also substitute other soup flavors and different veggies. I like to make it with a broccoli/cauliflower mixture.

Steps:
- Combine all three cans of soup in crock pot.
- Place chicken breasts in crock and cover well with soup mixture.
- Allow to cook for 6-8 hours.
- Stir in sour cream to chicken/soup mixture.
- Cook pasta according to package direction.
- Add your frozen broccoli in with the pasta while it cooks.
- Spread the pasta, veggie mixture into a 11x13 dish.
- Shred chicken in crock.
- Pour chicken/soup mixture over pasta.
- Sprinkle cheddar cheese over casserole.
- Crush ritz crackers and sprinkle over casserole.
- Bake at 350 until good and bubbly, about 30 minutes.
