1 (14 ounce) can red kidney beans
1 (14 ounce) can lima beans
2 (14 ounce) cans pork and beans
1 (14 ounce) can French style green beans
1 medium green pepper, chopped
1 cup chili sauce
1/2 lb turkey bacon
1/2-3/4 cup Splenda brown sugar blend
1 bunch green onion, chopped

Steps:

  • Cut up the bacon and cook it.
  • Stir-fry green pepper and onions in bacon drippings.
  • Combine all ingredients and cook for 10 minutes at 350, then lower to 250. Cook for one hour.
  • Serve hot or cold.

1 tsp butter
1 onion, chopped
1-16 oz can red kidney beans
1-16 oz baked beans
1 cup ketchup
1 cup packed brown sugar
1 tbsp vinegar
1 tsp yellow mustard
4 strips fried bacon, cooled and crumbled

Steps:

  • Preheat oven to 375*. In medium skillet, heat butter and saute onion. In large bowl, combine kidney beans, baked beans, ketchup, brown sugar, vinegar, mustard and bacon. Mix well. Pour mix into covered baking dish and bake 35 minutes or until hot.

1 lb dried navy beans or 1 lb pinto beans
6 cups water
1/4 lb salt pork, diced
1 large onion, chopped
1 clove garlic, minced
1 large green bell pepper, chopped
1 1/2 lbs chuck steaks, cubed
1 1/2 teaspoons salt
1/2 teaspoon oregano, crumbled
1/4 teaspoon red pepper
1/4 teaspoon ground cumin
8 ounces tomato sauce

Steps:

  • Pick over beans and rinse well.
  • Combine beans and water in a large kettle.
  • Bring to boiling; cover; cook 2 minutes.
  • Remove from heat and let stand 1 hour then pour into crockpot.
  • Brown salt pork in a large skillet.
  • Remove with a slotted spoon to crockpot.
  • Sauté onion, garlic and green pepper in pan drippings; remove with slotted spoon to crockpot.
  • Brown beef, a few pieces at a time in pan drippings; remove to crockpot with slotted spoon.
  • Stir in salt, oregano, red pepper, cumin and tomato sauce.
  • Add more water, if necessary to bring liquid level above beans.
  • Cook on LOW for 10 hours or on HIGH for 6 hours, or until beans are tender.

2 teaspoons vegetable oil
2 potatoes, cut into small rectangles
1 cup shredded carrots
2 ½ (15 ounce) jars nopalitos cactus, drained
1 tablespoon chili powder
2 cloves garlic, minced
2 teaspoons fenugreek seeds
2 teaspoons ground coriander
½ teaspoon ground cumin
1 (15 ounce) can pinto beans

Steps:

  • Heat oil in a skillet over medium heat. Add potatoes and carrots; cook and stir until potatoes are tender, about 10 minutes.
  • Stir cactus, chili powder, garlic, fenugreek seeds, coriander, and cumin into the potato mixture. Cook, stirring frequently, until cactus is softened, about 5 minutes. Add pinto beans; cook, stirring gently, until just heated through, about 3 minutes.
