STRAWBERRY BANANA BREAD PUDDING



Strawberry Banana Bread Pudding image

Nonstick vegetable cooking spray
15 ounces frozen sweetened sliced strawberries (about 2 cups), thawed and drained, syrup reserved
1 (13.9-ounce) package banana quick bread mix
2 eggs
3 tablespoons canola oil
1 1/4 cups milk
1 (8-ounce) container mixed berry yogurt
1 cup plain yogurt

Steps:

  • Preheat oven to 375 degrees F.
  • Spray bottom of an 8 by 4 by 3-inch loaf pan with nonstick spray. Stir 1 1/4 cups strawberries, banana bread mix, eggs, oil and milk in a large bowl to blend. Transfer batter to prepared pan. Bake until a toothpick inserted into center of bread comes out clean, about 50 minutes. Cool 15 minutes in pan. Remove bread from pan.
  • Meanwhile, stir remaining 3/4 cup strawberries (with syrup), berry yogurt, and plain yogurt in medium bowl to blend. Cover and refrigerate until ready to serve.
  • Cut bread crosswise into slices and then into cubes. Transfer cubes to plates. Top with dollop of yogurt mixture and serve.

1 egg
1 cup milk
1/2 teaspoon pumpkin pie spice
1/4 cup light brown sugar
French Toast batter from French Toast with Brown Sugar Banana Syrup, recipe follows
4 slices reserved challah bread from French Toast with Brown Sugar Banana Syrup, cut into cubes, recipe follows
Reserved Brown Sugar Banana Syrup, from French Toast with Brown Sugar Banana Syrup, recipe follows
2 tablespoons butter
1/2 teaspoon pumpkin pie spice
2 tablespoons molasses
1/2 cup brown sugar
1/2 cup water
2 bananas, cut into 1/2-inch slices
1 loaf challah
2 cups milk
3 large eggs
1/2 cup all-purpose flour
2 teaspoons vanilla extract
2 tablespoons light brown sugar
1/4 teaspoon salt
Nonstick cooking spray

Steps:

  • Spray 4 (7-ounce) ramekins with nonstick cooking spray. Place onto a baking sheet and set aside.
  • In a large bowl combine egg, milk, pumpkin pie spice, brown sugar and French Toast batter. Whisk together until well blended. Add bread and mix so that all the bread is coated. Cover and let sit for 30 minutes to 1 hour in the refrigerator.
  • Preheat oven to 325 degrees F.
  • Evenly divide the bread and batter mixture among the 4 ramekins. Place in the preheated oven and bake for 30 to 40 minutes or until set.
  • Serve warm and top with Brown Sugar Banana Syrup.
  • For Syrup:
  • In a small saucepan, combine butter, pumpkin pie spice, molasses, brown sugar and 1/2 cup of water. Bring to a boil, add bananas then lower heat and let simmer for 3 minutes. Remove syrup from heat, cover and keep warm.* Serve over French toast.
  • For French toast:
  • Preheat oven to 400 degrees F.
  • Slice bread into 12 slices. Reserve 2 slices plus the ends for the bread pudding Round 2 Recipe. Place remaining 8 slices on a baking sheet. Toast in oven for 3 minutes. Remove and lower oven temperature to 250 degrees F.
  • In a large bowl whisk together the milk, eggs, flour, vanilla, brown sugar and salt.
  • Spray a 12-inch skillet with nonstick cooking spray and place over medium heat. Working in batches of 4, dip the bread into the batter and soak both sides. Remove allowing excess to drip back into the bowl and place in the hot skillet. Cook until golden brown on both sides, about 3 minutes per side. Transfer the toast to a baking sheet fitted with a wire rack and keep warm in a 250 degree F oven. Repeat with remaining slices of bread.
  • Serve hot with Brown Sugar Banana Syrup.

BANANA PUDDING

1 pint heavy cream
1/3 cup confectioners' sugar
3 boxes instant vanilla pudding, prepared and chilled, according to package directions
3 bananas, sliced
1 box vanilla wafers
Special equipment: 12 (4-ounce) wine glasses

Steps:

  • For whipped cream: In a very clean large bowl beat the cream with a hand beater, until it begins to thicken. Slowly add in the confectioners' sugar and continue to beat just until the cream holds peaks when the beaters are lifted out of bowl.
  • To assemble the individual banana puddings; put a single layer of each the vanilla wafers and the banana slices into each wine glass. Top with a layer of the vanilla pudding. Repeat layering a second time. Finish with a generous dollop of whipped cream or put the whipped cream into a pastry bag fitted with a large star tip. Pipe onto the top of each dessert. If using a large serving bowl assemble the ingredients using the same method.

CARAMEL BANANA BREAD TRIFLE

Two 3.4-ounce packages instant butterscotch pudding
4 tablespoons whiskey, such as Crown Royal, plus more for drizzling
2 cups heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
Half an 8-ounce container mascarpone, softened
1 loaf banana bread, cut into 1-inch-thick cubes
One 9-inch pecan pie, cut into small squares
One 20-ounce bottle caramel sauce
Chopped pecans, for garnish

Steps:

  • Make the pudding according to package instructions. Stir in 3 tablespoons of the whiskey.
  • Whip the heavy cream to soft peaks, adding the powdered sugar a little at a time. Stir in the vanilla. Whisk the mascarpone to make it light and fluffy. Fold it into the whipped cream. Fold in the remaining 1 tablespoon whiskey.
  • In a trifle dish or punch bowl, place a single layer of banana bread cubes and zucchini bread cubes into the bottom of the bowl. Drizzle over some of the whiskey to moisten the bread. Spread half the pie squares over the top. Evenly spread half the pudding on top, and then a layer of half the whipped cream. Top with half the caramel sauce. Repeat with the remaining ingredients, topping the whole thing with the chopped pecans. Cover and refrigerate for at least an hour before serving.

BROWN SUGAR BANANA SPICE CAKE

2 cups baking mix
3/4 cup sugar
2 1/2 teaspoons pumpkin pie spice, divided
2 ripe bananas, mashed
1 egg
1/4 cup canola oil
1/4 cup light brown sugar
1/2 pint whipping cream
3 tablespoons confectioners' sugar
1 tablespoons cocoa powder

Steps:

  • Lightly spray a 6-cup loaf pan. In a large mixing bowl, combine the baking mix, 2 teaspoons of pumpkin pie spice, the mashed bananas, egg, and oil. Using a hand mixer, beat the batter for 2 minutes. Remove 1/2 cup of the batter to a small bowl with the brown sugar, 1/2 teaspoon pumpkin pie spice and mix well. Pour the remaining batter into the loaf pan. Pour the brown sugar batter into the loaf pan and swirl with a knife. Make a foil ring and arrange it on the bottom of the slow cooker, then put the loaf pan on top of the foil ring.
  • Cover slow cooker with 5 paper towels before securing the lid. Cook on low setting until tester comes out clean, about 4 hours. Remove the loaf pan from the cooker and cool on wire rack. When cool, turn the cake out onto a serving platter and serve with the chocolate whipped cream.
  • For Chocolate Whipped Cream:
  • Beat the cream with a hand mixer, until it starts to thicken. Add the confectioners' sugar and cocoa powder and continue beating until firm peaks form.
