GRILLED BUFFALO BBQ WINGS WITH BLUE CHEESE YOGURT DIP

Steps:
- Pat the wings dry, then toss with the All-Purpose Poultry Seasoning. Let sit for 15 minutes.
- Preheat a grill to medium low (about 250 degrees F).
- Once the grill is up to temperature, place the wings on the upper rack in the grill and cook with the cover closed for 15 to 20 minutes, or until the internal temperature is around 150 degrees F. Once the chicken wings reach the desired temperature, increase the temperature of your grill to medium high (about 400 degrees F). Spray your grill grates with nonstick grill spray, then place your wings onto the hot grates and cook to create a nice char on each side of the wings, until the final temp reaches 165 degrees F, about 1 minute per side.
- Transfer the wings from the grill to a mixing bowl with the Buffalo BBQ Wing Sauce and toss to coat. Serve with the Blue Cheese Yogurt Dip (or your favorite ranch or blue cheese dressing) and carrots and celery sticks.
- Combine the salt, chile powder, paprika, black pepper, granulated sugar, granulated onion, garlic powder and thyme in a mixing bowl and stir to evenly incorporate.
- Combine the vinegar, apple juice, ketchup, brown sugar, salt, black pepper, chile flakes and paprika in a nonreactive container and whisk to combine.
- Melt the butter over medium heat. Transfer to a mixing bowl, add the vinegar mixture and hot sauce and whisk to emulsify.
- Combine the mayonnaise, yogurt, blue cheese, buttermilk, lemon juice, garlic powder, granulated onion, black pepper and salt and mix well. Cover and store in the refrigerator until ready to use. Great as a dip or dressing.

Steps:
- Heat chicken, lime juice, BBQ sauce and buffalo sauce in a large saucepan.
- Add cumin, red pepper and onion powder.
- Once heated through, add ranch dressing and cream cheese, stirring until all is mixed well together.
- Remove from heat and add half of shredded cheese, stirring well to incorporate.
- Spoon mixture into a baking dish or crockpot and top with remaining shredded cheese. Serve warm (can be reheated in baking dish until bubbly or on low in a crockpot).
- *The heat of this dish can be increased or decreased as desired- just add more buffalo sauce*.

- Procedure:
- Preheat a grill to medium heat.
- In a large pot, mix together the hot sauce, cola, cayenne pepper, black pepper and soy sauce.
- Add the wings to the sauce - frozen is okay.
- Place the pot to one side of the grill, so the sauce comes to a simmer.
- Use tongs to fish wings out of the sauce, and place them on the grill for 8 to 10 minutes.
- Then return to the sauce to simmer.
- Repeat this process for about 50 minutes.
- The sauce will thicken.
- When the chicken is tender and pulls easily off of the bone, you have two options.
- You can dip one last time and serve for sloppy style wings, or serve right off the grill for dryer wings.

BUFFALO CHICKEN WING DIP
I first tried this buffalo chicken wing dip at my neighbor's picnic. A friend of theirs brought it and we munched on it all night til it was gone! I love this recipe for picnics, potlucks and tailgate parties. It's a much less messy way of enjoying chicken wings. My oldest son loves it. You can make it as spicy hot as you want...or leave it mild. It's best served warm, but you can also eat it cool.

- Preaheat oven top 350.
- In a large bowl, mix shredded chicken, celery and cheese.
- In a saucepan over med-low heat, combine cream cheese and salad dressing and stir until smooth. Stir in bottle of hot sauce ( don't have to use entire bottle if you want it milder). Pour heated mixture into bowl with chicken mixture. Stir to mix well.
- Pour into a 13" x 9" baking pan. Bake uncovered for 40 minutes or until bubbly----make sure top doesn't get browned. Let stand for 10 minutes. Serve warm OR cold-----tastes best warm--- with celery or other veggies and crackers.

- In a small bowl, combine the soy sauce, sugar, garlic, salt, orange zest and pepper; divide in half. Add chicken pieces to inner pot of large multi-cooker. Top with half the sauce and toss to coat. Lock pressure lid. Press pressure function; select poultry setting. Press timer; set to 1 minute. Start. , Let pressure release naturally for 10 minutes; quick-release any remaining pressure. , Remove chicken from inner pot with a slotted spoon to a large bowl. In a small bowl, combine chili powder, cayenne, pepper sauce and remaining sauce mixture. Discard cooking juices in inner pot and wipe clean. , Place wire rack into inner pot. Arrange chicken in a single layer on rack. Close air frying lid. Press air fry function; select poultry setting. Press temp; set to 400°. Press timer; set to 6 min. Cook chicken in batches, adding more time as necessary for wings to reach 170°. , In a small bowl, whisk dip ingredients. Serve with wings.
