Fast and Easy No Knead Bread image

A No Knead Bread that is fast, easy and delicious. No 18 hour rising time, just 2 hours and baked to perfection. Fresh Homemade Bread just in time for dinner.

Number Of Ingredients 5

3 1/4 cups + 1 tablespoon all purpose flour ((450 grams))
1 1/2 cups + 3 tablespoons lukewarm water / divided ((396 grams))
1 3/4 teaspoons active dry yeast
1 1/2 teaspoons salt
1 teaspoon honey or sugar

Steps:

  • In a small bowl add 1/4 cup (60 grams) of lukewarm water, 1 teaspoon of honey (I mixed these together then added the yeast) and yeast. Let sit 5 minutes then mix to combine.
  • In a large bowl add the flour, make a well in the centre and add the yeast mixture and remaining water (1 1/4 cups + 3 tablespoons / 340 grams), start to combine with a wooden spoon, then add the salt and combine well. Sprinkle the top with 1 tablespoon of flour.
  • Cover the bowl and place in a warm draft free area and let rest for 2 hours.
  • After 1 3/4 hours has passed pre-heat oven to 420° F (220°C). And line a large cookie sheet with parchment paper, sprinkled with flour.
  • With the help of a spatula transfer the dough (floured side up) onto the prepared sheet. Divide the dough into 2-3 parts, shape into logs approximately 2 inches apart. Bake for approximately 25-30 minutes. (Bread is done when tapped on the bottom and there is a hollow sound). Enjoy!

3 cups water (lukewarm)
4 ½ teaspoon instant yeast ((2 packets))
6 cups all-purpose flour
1 tablespoon salt

Steps:

  • In a large mixing bowl, whisk together the water and the yeast. In a separate bowl, mix the flour and salt well. Dump the flour mixture into the yeast mixture. Using a wooden spoon or spatula, mix the dough until it is well combined.
  • Cover the bowl with a dry kitchen towel and set the dough aside to rise for 1 hour, or until doubled in size.
  • After your dough has risen, use a spatula to loosen the dough from the edges of the bowl. Flour your hands really well and also sprinkle a bit of flour over the dough. With your floured hands gently remove the dough from the bowl and roughly shape it into a ball. Place the dough onto a large sheet of parchment paper and cover with a dry kitchen towel to rise for another 30 minutes.
  • Preheat your oven to 450 F degrees and place your Dutch oven with its lid on inside to heat up during the preheat.
  • Take the pot out of the oven, and remove the lid. Pick up the dough by grabbing all four corners of the parchment paper, and carefully place the dough inside the pot.
  • Place the lid back onto the pot, and return it to the oven. Bake for 35 minutes with the lid on, and 20-25 minutes with the lid off, or until the bread is golden brown.
  • Remove the bread from the pot and allow it to cool completely before slicing.

Super-Quick No-Knead Bread image

This is the latest version of bread coming out of my kitchen. Husband and Son eat it almost as soon as it is out of the oven which makes me grouse at them about sore stomachs. Blahblahblah is probably all they hear because they carry on eating it! Sometimes I make plain crust bread and other times I roll the dough in cracked wheat before placing it in the pans. Either way the bread has a wonderfully crisp crust and a really tender inside.

6 cups flour
1 teaspoon salt
1 teaspoon dry yeast
1 teaspoon white sugar
2 1/2 cups warm water

Steps:

  • Mix all dry ingredients together.
  • Add water and stir in until a really sticky dough has formed.
  • Cover with a cloth and leave in a warm place to rise.
  • Punch down and divide dough into two balls.
  • If you are using the cracked wheat, roll the dough balls in the cracked wheat now.
  • Place into well greased pans and bake at 400F for 1 hour.
  • Cook's note: No need for a second rising as the bread rises perfectly in the oven on baking.

  • In a large bowl mix together the flour, yeast, and salt. Add the water and mix with a wooden spoon until you have a shaggy, sticky dough. You want it to be quite sticky, it will be OK, trust me.
  • Cover the bowl with a plastic wrap and set aside to rest at room temperature (but not in direct sunlight) for 12-18 hours - it’s best if you just let it rest overnight. After 12-18 hours the surface should be dotted with bubbles.
  • After rising, the dough will be quite loose and sticky. This is OK. Don’t add more flour. Don’t knead the dough. Instead transfer the dough to a floured surface and use floured hands to gently and quickly lift the edges of the dough in toward the center, folding the dough over onto itself. Tuck in the edges of the dough to make it round. Place the dough, seam side down, on a large piece of parchment paper. Cover the dough loosely with a towel or plastic wrap and let it rise at room temperature for 1.5-2 hours until it doubles in size (in cold weather rising will be slower).
  • A half hour before the dough is done with its second rise, preheat the oven to 450°F/230°C. Adjust the oven rack to the lower third position and place a large (6-8-quart) heavy pot and its lid.
