BROCCOLI BLANCHED WITH SESAME OIL
The best way to keep your broccoli fresh and tasty is to blanch it with salt and sesame oil. It's easy, healthy and so versatile. The blanched broccoli keeps well for up to 3-4 days in the fridge and is ready to enjoy any time!

Steps:
- Gather all the ingredients.
- Separate the stems and florets. Cut off the tough skin on the stems.
- Bring 4 cups of water to a boil and add salt and stems. Cook for 2 minutes.
- Once the stems are getting tender (not tender yet), add the florets.
- Add the sesame oil and continue to cook until florets are almost tender, about 2.5 to 3 minutes. Since we will not transfer the broccoli to iced water to stop cooking further, we have to take it out before it's completely done. The remaining heat will continue to cook broccoli.
- Drain water. If you like, drizzle additional sesame oil over the broccoli. Let cool completely and put them in the glass container for storing.

SESAME BROCCOLI, REALLY..IT'S GOOD!
The dish is a nice and easy change from the norm, and quite different from some of the other broccoli recipes I have seen here. Try it, you might like it as much as we do! Due to a great suggestion from a reviewer, I have added toasting the sesame seeds, a marvelous idea! Also, PLEASE don't substitute the sesame oil as one review did here, you loose the entire flavor of this great dish! This is an adopted recipe and the above comments were made before I inherited it. Now having made this dish, I can concurr: it's a sesame oil that turns your head and gets your taste buds going in this recipe, and toasting the seeds also adds fuller flavour. I'm delighted to have adopted this recipe and will be making it often:) I hope that you will enjoy it too!

Steps:
- Prepare the broccoli for cooking. Boil, steam and drain. Please DO NOT over cook! Generally 6-8 minutes to steam or boil is about right for crisp broccoli.
- Heat the sesame oil on a skillet or wok for 15 seconds over high heat. Add the sesame seeds and the broccoli.
- Stir fry until heated through.
- Remove from the pan to a serving dish, pour soy sauce over!

- Bring a large pot of water to a boil. Add a generous pinch of salt. Add the broccoli and cook for 3 to 5 mins (depends on the size of the florets and amount of florets to water).
- Once the broccoli is bright green, take off heat, drain and wash with cold water.
- Heat oil in a skillet over medium low heat. Once the oil is hot, add garlic, reduce heat to low. Mix well and cook until the garlic is golden. 4 to 5 mins. (Slow cooking the garlic will roast it without burning).
- Add sesame seeds and sesame oil and continue to cook until the seeds start to change color.
- Add soy sauce, red pepper flakes and mix well for a few seconds. Add a tbsp of water and mix and take off heat.
- Drizzle over broccoli or add broccoli to the skillet and mix well. Add a dash of salt and pepper to taste. Serve.

- Cook 1 bunch broccoli spears in a steamer set over simmering water, 10 minutes. Pulse a 1-inch piece peeled ginger, 1 garlic clove, 2 tablespoons each water and sesame oil, 1 tablespoon rice vinegar, and a pinch each of sugar and salt in a mini food processor. Drizzle over the broccoli and sprinkle with toasted sesame seeds.
STEAMED VEGETABLES WITH SESAME-CHILE OIL

- Special equipment: a metal steamer basket
- Fill a large pot with 2 inches of water and bring to a boil over medium heat. Arrange the carrots, asparagus, cauliflower and broccoli in a metal steamer basket; place in the pot and cover. Steam the vegetables until slightly tender but still with a little crunch, 5 to 6 minutes.
- While the veggies are steaming, heat a small saute pan over medium heat. Add the sesame-chile oil, olive oil, garlic and pepper flakes, and cook for 1 minute.
- Transfer the steamed vegetables to a bowl. Add the sesame-chili oil mixture and the lemon juice, and season to taste with salt and pepper. Toss to coat the vegetables evenly. Serve immediately.
