No Rosh Hashanah celebration is complete without a serving of tzimmes, a dish of root vegetables and dried fruits. The fruit and honey in the mix symbolize the sweetness of the New Year. The carrots and sweet potatoes are cut into rounds to honor the tradition of hope for goodness and sweetness without end. This version of the classic dish gets a savory undertone from a full cup of vegetable broth, making it all the better to pair with a slice of brisket or roast chicken.

Number Of Ingredients 15

4 tablespoons salted butter or vegan butter substitute (see Cook's Note)
1 1/2 pounds medium rainbow carrots, sliced into 1/2-inch-thick rounds (see Cook's Note)
1 1/2 pounds small sweet potatoes, peeled and sliced into 1/2-inch-thick rounds (see Cook's Note)
4 ounces red pearl onions, peeled (about 1 cup)
1/3 cup candied ginger, roughly chopped
10 dried apricots
10 prunes, pitted
1 cup low-sodium vegetable broth
1/4 cup honey
1 cinnamon stick
1 teaspoon kosher salt
Pinch fine sea salt
Ground cinnamon
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt 2 tablespoons of the butter in a medium skillet over medium heat and then add the carrots, sweet potatoes and onions. Sauté, stirring frequently, until lightly browned all over, about 8 minutes. Spread the vegetables evenly in a 9-by-13-inch casserole and tuck the ginger, apricots and prunes around the dish.
  • Add the vegetable broth and honey to a small bowl and whisk together to combine. Pour over the fruits and vegetables, then submerge the cinnamon stick. Cover the dish with aluminum foil and braise for 30 minutes. Remove the foil, stir the mixture and continue cooking (uncovered) until the vegetables are tender and the sauce is reduced and thickened to a syrupy consistency, about 30 minutes more.
  • Break the remaining 2 tablespoons butter into small pieces, dot over the top and gently stir to coat the vegetable mixture in the reduced sauce. Sprinkle with a pinch of sea salt and a light shake of cinnamon. Serve topped with mint and parsley.

3 lbs beef brisket
5 fresh sweet potatoes, peeled and quartered
4 carrots, peeled and cut
1 tablespoon cornstarch
1/2 cup Splenda sugar substitute

Steps:

  • Spray pot with cooking spray and brown brisket turning to cook through.
  • Simmer 2 hours, Brisket will render own juices. KEEP CHECKING, RESPRAY AS NECESSARY OR ADD WATER AS NECESSARY.
  • Add carrots and potatoes, cook 30 minutes.
  • In separate small saucepan add 2 cups water, cornstarch, Splenda, and 2 tbsp of juice from the cooked meat and veggies, simmer to make gravy.
  • Spray roast pan and place meat and veggies, cover with gravy and bake about 1 hour.
  • Serve brisket on a platter surrounded by vegetables. Goes great with cranberry sauce, or anything! Everyone will love it and it is definitely worth the effort!

1 (3 to 5-lb.) first-cut beef brisket
Salt and pepper
1 teaspoon dry mustard (optional)
3 to 4 large onions, sliced
2 cup water
1 lb. pitted prunes
4 large sweet potatoes, peeled and quartered
3 carrots, cut into chunks
¼ cup granulated or brown sugar
Juice of 1 lemon
8 to 10 small new potatoes (optional)
1 bay leaf

Steps:

  • Preheat the oven to 350°F (175°C).Rub both sides of the meat with salt, pepper, and if desired, mustard. Spread half of the onions over bottom of a shallow roasting pan. Place the brisket, fat-side up, in the pan and top with the remaining onions. Add ¼ cup water. Bake, uncovered and basting occasionally, until the meat and onions begin to brown (about 1 hour).Add the remaining water and remaining ingredients. (The liquid should never reach more than halfway up the side of the meat.) Cover, reduce the heat to 300°F or place over a low flame, and cook until the meat is fork-tender and the thickest part of the brisket registers about 175°F on a meat thermometer (2 to 3 hours - allow about 1 hour of cooking time per pound).Cover the brisket loosely with foil and let stand 20 minutes before carving. (Brisket may be prepared up to 2 days ahead and reheated.) Slice the brisket diagonally against grain into slices about 1/8-inch thick.

1 (6- to 7-lb) first-cut brisket
1 3/4 teaspoons salt
1 teaspoon black pepper
3 tablespoons olive oil
4 cups brown chicken stock or reconstituted brown chicken demi-glace
3/4 cup Sherry vinegar
2 lb carrots, peeled and cut crosswise into 2-inch-long pieces
4 medium sweet potatoes, peeled and cut into 2-inch pieces
2 3/4 cups dried pitted prunes

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Pat brisket dry and rub all over with 1 teaspoon salt and 1/2 teaspoon pepper. Heat oil in a 17- by 11-inch heavy roasting pan (3 inches deep) over moderately high heat, straddled across 2 burners, until hot but not smoking, then brown brisket, starting with fat side down, on both sides, about 5 minutes per side. Remove from heat, then add stock and vinegar to pan. Cover pan tightly with heavy-duty foil and braise brisket in oven 2 hours. Add carrots and potatoes to pan and braise, covered, 1 hour. Add prunes and braise, covered, until meat is fork-tender, about 30 minutes more. Cool meat, uncovered, to room temperature, about 1 hour, then chill, covered, at least 12 hours.
  • Put oven rack in middle position and preheat oven to 350°F.
  • Transfer brisket to a cutting board and slice across the grain about 1/4 inch thick. Discard as much fat as possible from surface of vegetables and sauce, then return sliced meat to pan and reheat, covered with foil, until heated through, about 40 minutes. Sprinkle with remaining 3/4 teaspoon salt and remaining 1/2 teaspoon pepper, then arrange meat with tzimmes and sauce on a large platter.

10 -12 large carrots, peeled and cut into large chunks
2 large russet potatoes or 2 large idaho potatoes, peeled and cubed
3 yams or 3 sweet potatoes, peeled and cubed
1 medium onion, diced
2 stalks celery, in 1-inch slices
2 garlic cloves, crushed
18 large pitted prunes, cut in half
1/4 cup honey
1 1/2 apples, unpeeled and cubed
1 teaspoon salt
1 teaspoon ground black pepper
2 1/2 cups orange juice
1 1/2 teaspoons cinnamon

Steps:

  • Place all ingredients in a pot.
  • Cover and bring to a boil.
  • Reduce heat to low and simmer for about 1 hour. Stir frequently.
  • Cook until carrots are soft but not mushy.
  • Tzimmes should have the consistency of a thick stew with very little liquid left in the pot.
  • Serve hot.
