Steps:
- Preheat the oven to 180C/350F. Line a large baking sheet with parchment paper.
- Add the almond flour, cheddar, parmesan, salt, and garlic powder (if using) , to a food processor and blend well, until it forms a dough. If the dough is too crumbly or isn't coming together, microwave the mixture for 20-30 seconds to allow the cheese to melt, then return it back to the blender and blend. The dough might stay a bit crumbly, but it must stick together if you pinch it with your fingers.
- Transfer the dough to a bowl, add your desired herb(s) if using, and knead well with a spatula or wooden spoon.
- Place the dough onto a piece of parchment paper, and fold it over the dough. Use a rolling pin to roll out the dough into about ¼ inch thick.
- Cut the dough into even squares with a pizza cutter and then sprinkle with flakey salt on top.
- Bake for 10-12 minutes, or until golden around the edges.
- Remove from the oven and allow to cool completely.
- Store crackers in an airtight container at room temperature.

Steps:
- Clean your kale by rinsing it in cold water and then removing the leaves from the stems. Chop into small pieces.
- Heat olive oil on medium in a cast iron skillet or another large skillet (with a lid). Add onion and garlic and cook for approximately 90 seconds.
- Add kale and coat with oil and mix with garlic and onion. Let saute for another minute, add 1 teaspoon of salt, mix, and then add the stock. Cover and let braise in stock for about 10 minutes, or until most of the stock has cooked off.
- Meanwhile, bring 3 quarts of water to a boil. Add noodles and boil until al dente. Drain and rinse in cold water to prevent sticking.
- When your kale is done, remove from skillet and set aside.
- WIth skillet on medium, add butter and as it melts, add the flour and whisk to create a roux.
- Slowly add the milk, 1 cup at a time, and whisk it to incorporate it all before adding more milk and half and half.
- Let the sauce cook, whisking constantly to prevent from burning, until it begins to thicken. Add cheese, 1 cup at a time, and whisk to combine. Reduce to medium-low.
- Let the sauce thicken and then start adding the cheese, a handful at a time, whisking until it is all fully melted before adding more cheese. Repeat for 2 cups of cheese.
- Once cheese sauce is thickened, add 1/2 teaspoon salt, pepper, and mustard and mix. Add kale and mix well. This will ensure that the kale is more evenly distributed in the dish.
- Once the kale is well mixed in, then add the cooked pasta and mix well.
- This is where you can stop and set aside if preparing in advance. Or you can serve it now, as is. Otherwise, pre-heat oven to broil and set rack to top third.
- Add last 1/2 to 1 cup of cheese to the top of skillet and add to oven to melt and crisp up cheese for 3-5 minutes.
- Serve and enjoy!

- Preheat the oven to 350 degrees F. Line a 14x17" baking sheet with parchment paper and set aside.
- In a large bowl, mix together the kale, pumpkin, sunflower, sesame, chia, ground flaxseed, water, sea salt, rosemary, and garlic powder. Stir well, and let the mixture sit for 15 minutes so that the chia seeds can gel and help everything stick together.
- After 15 minutes, transfer the mixture to the lined baking sheet and put another sheet of parchment paper on top. Use a rolling pin to roll the seed mixture until it's ~1/16" thick. Remove the top sheet of parchment paper and transfer the baking sheet to the middle rack of the oven. Cook for ~25 minutes, until the crackers get slightly brown around the edges.
- Remove the baking sheet from the oven and use a pizza slicer to cut into 25 crackers. Then carefully use your fingers or a fork to turn over the crackers. Put them back in the oven for another 5-10 minutes so that they firm up a bit more. Keep a close watch on them so that they don't burn.

- Add all the dry ingredients to the bowl of a food processor and whizz for a few seconds until the oats look like coarse flour. Add the oil and whizz again, then gradually add enough boiling water until the dough comes together (around 3 tbsp)
- Roll the dough out very thinly. The easiest way to do this is to place it between 2 sheets of greaseproof paper. Cut into squares around 7 cm, you should end up with around 16 biscuits.
- Place the biscuits on the greaseproof paper and bake for 30 mins at 160 degrees. Cool on a rack.

- Preheat the oven to 450 degrees. Toast your quinoa using the stovetop method. Allow the flour to cool for 5 minutes before adding to a food processor along with the sorghum flour, nutritional yeast, and salt. Pulse until evenly distributed, then pulse in the kale.
- With the food processor running, stream in the oil and water until the dough comes together into a ball, about 30 seconds. Remove and form into a ball. Let rest for just a few minutes.
- Cut the dough into four pieces. Knead one piece with your hands, place it on a piece of parchment and roll it as thin as you can. You'll probably need to sprinkle the dough with a little flour so that it doesn't stick. Repeat with the other three pieces and transfer the pieces of parchment to baking sheets.
- Bake the crackers for 5 - 6 minutes per side, watching closely so they don't burn. Careful when you flip them over too! Turn off the oven and let them sit in the warm oven for 1 - 2 hours so they get super crispy.

- Bruschetta Crackers. Yes, bruschetta is the equivalent of Italian salsa, but when done right, it's a bright medley that makes you forget you'll be reeking of garlic and onion for the rest of the afternoon.
- Brooklyn BLT Crackers. It's not really a BLT, but it's better, because it has kale, maple syrup, and bacon. Fry up 6 pieces of bacon, getting them as crispy as possible.
- Parsley and Lemon Cream Cheese With Cucumber. If one were to put Kate Middleton on a cracker, this would be it — simple, elegant, and a little bit fancy.
- Guac and Crackers (With Queso Fresco) Guac and chips is a trap. There is never, repeat, never enough guac. Guac-to-chip ratios are always dismal, so here is a recipe to ensure you get optimal portions of the green stuff.
- Chorizo and Tapenade Crackers. This is for the meat lover. These crackers can be topped with either tapenade or grainy mustard. Dealer's choice. Heat a non-stick pan on medium/high heat.

- Ricotta and Honey Cracker. Cheese and honey is one of those matches that makes you feel really, really bad for the lactose intolerant people in your life.
