BAKED BRIE EN CROUTE

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Whisk egg and water together to make egg wash.
- Roll out puff pastry gently to a 14-inch square. Trim corners with a knife or pizza cutter to make a circle. Spread apricot preserves over the pastry, leaving a 1-inch margin around the edge. Sprinkle cranberries and almonds over the pastry, and place Brie cheese in the center.
- Brush the edges of the pastry with some of the egg wash. Fold top and bottom of pastry over the dough; trim 2 inches off each edge. Fold remaining pastry on top to cover the Brie cheese completely. Press the seams with your fingers to seal. Remove any excess apricot preserves that leaks out.
- Transfer wrapped cheese, seam-side down, to baking sheet. Brush top with egg wash.
- Bake in the preheated oven until top is golden brown, about 20 minutes. Let stand before serving, about 30 minutes.

- Melt butter in medium saucepan on medium heat. Add apples and pears; cook 7 min., stirring frequently. Stir in honey and mustard; cook 10 min., stirring frequently. Remove from heat. Add bacon; mix well. Cool completely.
- Heat oven to 400°F. Roll out pastry sheet into 14-inch square on lightly floured surface. Place bottom half of Brie round on center of square; top with half each of the fruit mixture and nuts. Repeat layers.
- Gather edges of pastry dough over cheese, pleating edges as necessary; tie closed with kitchen twine. Place on parchment-covered baking sheet.
- Whisk egg and water until blended; brush onto dough.
- Bake 25 to 30 min. or until pastry is golden brown. Remove cheese from oven. Let stand 5 min. before cutting off and discarding the twine.
- Serve cheese warm.

- Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14-inch square. Cut off the corners to make a circle. Sprinkle the almonds and parsley in the center of the circle. Top with the cheese. Brush the edge of the circle with the egg mixture. Fold the pastry up over the cheese to cover. Trim the excess pastry and press to seal. Brush the seam with the egg mixture. Place seam-side down onto the baking sheet. Decorate the top with pastry scraps, if desired. Brush with the egg mixture.
- Bake for 20 minutes or until the pastry is golden brown. Let stand for 45 minutes. Serve with the crackers.
BRIE EN CROûTE
Brie en croûte is an easy and delicious cheese and puff pastry appetizer. It's gorgeous as a cheese board centerpiece, and is a perfect game day appetizer!

- Preheat oven to 425°F.
- Line a baking sheet with parchment paper. Roll out puff pastry onto the paper. Cut off about 1/3 of the puff pastry (reserve).Note: This recipe was written for refrigerated puff pastry. If using frozen puff pastry, thaw before using, rolled out to 1/4" thickness, and work on a floured surface instead of parchment paper.
- Place the wheel of Brie in the middle of the larger piece of puff.
- Spread orange marmalade on top of the Brie.
- Add dried fruit and nuts.
- Fold the puff around the Brie until it is entirely wrapped, smoothing any seams with your finger.
- Brush the puff with the beaten egg.
- Optionally, cut use a cookie cutter to cut decorative shapes out of the reserved, unused piece of puff. Add the shapes to top of the wrapped Brie, and brush with more beaten egg.Tip: If you don't have a cookie cutter, you can use the lid from a spice jar to cut circles.
- Bake the Brie for 20-25 minutes or until golden. Serve immediately along with fresh fruit, crackers, or sliced baguette.

I was looking to use up some Brie cheese and found this recipe on Food Network. She made this recipe for the "Engagement Brunch" show. After receiving my 1st review, I went to the recipe and now found a video of her making this recipe and it is different than what the posted directions are for it. - Preheat oven to 375 degrees F.
- Defrost 1 sheet of puff pastry for approximately 15 to 20 minutes and unfold (place remaining sheet in freezer for later use).
- Melt butter in a saucepan over medium heat.
- Saute nuts in butter until golden brown, approximately 5 minutes.
- Place nuts on top of Brie and spread jam on top of nuts.
- Gently roll pastry with a rolling pin to increase the size of the sheet 1 to 2 inches in each direction.
- Brush both sides of the sheet with beaten egg.
- Center the wheel of Brie on top of the pastry sheet.
- Bring all four corners of the sheet together above Brie and twist slightly to form a "bundle."
- Tie gathered pastry with kitchen/cooking string (tie string in the form of a bow), arranging pastry until you are satisfied with the "bundle" shape.
- Place "bundle" on an ungreased cookie sheet and bake for 20 to 25 minutes until pastry is golden brown.
- Serve with top-quality crackers.

MINI BRIE EN CROUTE WITH CRANBERRY
I learned how to make brie en croute this year, and wanted to make a "bite sized" version for a recital reception. I adapted the Pillsbury baked brie recipe. It was a great success! Here is my recipe.

Steps:
- Cut the brie into 4"x4" square and discard the rounded edges.
- Cut the square into 1-inch cubes (there should be 16).
- Cut each 1-inch cube in half, and put the cheese aside.
- Open 1 can of crescent roll dough, and lay the dough flat on a greased counter space.
- Cut the dough in half lengthwise, and then into quarters widthwise. I recommend using a pizza cutter. This should result in 8 squares of dough.
- Place 1 piece of cheese and 1 table spoon of cranberry sauce onto a square of dough.
- Take the edges of the dough, and pinch them together at the top of the pastry to create a purse-like sculpture.
- Repeat this process to use all of the dough, cheese, and cranberry sauce.
- Place the little brie en croute "purses" 2 inches appart on a greased cookie sheet.
- Pour/brush the beaten egg over the tops of the purses. Make sure the purses are covered in egg from top to bottom.
- Bake purses in oven for 20 minutes at 350 degrees or until golden brown.
- Let cool for 1/2 an hour.
- Enjoy!

- Preheat oven to 375 °F.
- Defrost 1 sheet of puff pastry for approximately 15 to 20 minutes and unfold (place remaining sheet in freezer for later use). Melt butter in a saucepan over medium heat. Sauté walnuts in butter until golden brown, approximately 5 minutes. Add the cinnamon and stir until walnuts are well coated. Place walnuts on top of Brie and sprinkle brown sugar on top of nuts.
- Lay the puff pastry out on a flat surface. Place the brie in the center of the pastry. Gather up the edges of the brie, pressing around the brie and gather at the top. Gently squeeze together the excess dough and tie together with a piece of kitchen twine. Brush the beaten egg over top and side of Brie. Place Brie on a cookie sheet and bake for 20 minutes until pastry is golden brown.
MINI BRIE EN CROUTE
Steps:
- Preheat oven to 400°. On a lightly floured surface, unfold puff pastry. Roll out each pastry to a 10-in. square. Cut each pastry into sixteen 2-1/2-in. squares. Cut Brie into 32 pieces; place a piece of Brie in the center of each pastry square. Bring corners of pastry over Brie and pinch edges to seal., Place 2-in. apart on a parchment paper-lined baking sheets. In a small bowl, whisk egg and water; brush over puffs. , Bake until pastries are golden brown and puffed, 20-25 minutes. Serve warm.

Steps:
- 1. Thaw pastry sheet to room temperature, about 40 minutes or until it is easy to handle.
- 2. Heat oven to 400 degrees.
- 3. Beat egg and water in a small bowl.
- 4. Unfold the pastry sheet on a lightly floured surface. Roll the sheet into a 14-inch square.
- 5. Stir cherries, pecans, honey and rosemary in a bowl. Discard the apple juice that the cherries were soaking in or drink it. :+)
- 6. Spread the cherry mixture onto the center of the pastry square.
- 7. Top with the Brie cheese.
- 8. Brush the edges of the pastry square with the egg mixture.
- 9. Fold the two opposite sides over the Brie. Trim the remaining two sides of the square to 2-inches from the edge of the Brie.
- 10. Fold side up onto the Brie and press edges to seal.
- 11. Place seam side down onto the baking sheet.
- 12. Decorate the top with the pastry scraps. Brush with the egg mixture.
- 13. Bake for 20 to 25 minutes, or until pastry is deep golden brown.
- 14. Remove from the oven and let stand for 45 minutes.
- 15. NOTE: I like to soften the cherries in apple juice. Let stand till it is reconstituted and pat dry with a paper towel.

- In a medium bowl, combine the flour and salt for the puff pastry. Drop in the cubes of butter and use a pastry blender (or two knives, or your hands, or a food processor), to cut the butter into the flour and create pea-size clumps of dough.
- Stream in a tablespoon of water at a time and stir the dough with a wooden spoon. Once the dough is no longer shaggy, and instead forms a large mass, turn out the dough onto a floured counter/board.
