Tangy Cucumber Salad image

You'll spark taste buds with this tangy and refreshing salad. The simple marinade gives mild cucumbers lots of zip. The tomatoes are a pretty addition. This is a super use of summer's garden bounty. -Edna Hoffman, Hebron, Indiana

2 small cucumbers, thinly sliced
1 teaspoon salt, divided
2 medium tomatoes, chopped
1 medium onion, chopped
1/4 cup cider vinegar
2 tablespoons vegetable oil
1 tablespoon honey
1/2 teaspoon celery salt
1/2 teaspoon dried basil
1/2 teaspoon ground mustard
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
Dash cayenne pepper

Steps:

  • Place cucumbers in a strainer; sprinkle with 1/2 teaspoon of salt and toss. Let stand for 30 minutes. Rinse and drain well. Place in a large bowl; add tomatoes and onion. In a small bowl; add tomatoes and onion. In a small bowl, whisk together the remaining ingredients; pour over cucumber mixture and toss. Cover and refrigerate for several hours. Serve with a slotted spoon.

1 tablespoon white vinegar
1 tablespoon white sugar
2 teaspoons vegetable oil
1 teaspoon soy sauce
½ teaspoon salt

Steps:

  • Place cucumbers in a large bowl. Whisk vinegar, sugar, oil, soy sauce, and salt together in a separate bowl; pour over cucumbers. Stir to coat. Refrigerate at least 1 hour to allow flavors to blend.

1/2 cup white sugar
1/2 cup cider vinegar
1/2 teaspoon black pepper
1 pinch salt
1/2 cup water
3 large cucumbers

Steps:

  • Mix first 4 ingredients in water until sugar dissolves.
  • Peel and slice cucumbers into almost paper thin slices.
  • In a stainless steel or ceramic bowl, salt cucumber slices well and let stand for 30 minutes. This will allow the cucumbers to release some of their liquid and results in less bitter cucumbers. Rinse and drain well.
  • Put cucumber slices into glass bowl or jar.
  • Pour sugar/vinegar mixture over cucumber slices.
  • Let cucumbers marinate in jar for at least 24 hours.
  • Can add more sugar to your tastes.
  • This is really good with onion slices added too.

2 tablespoons vinegar or 2 tablespoons lemon juice

salt and pepper, to taste (I like a lot of pepper)
1/2 teaspoon sugar
1 teaspoon chopped fresh dill

Steps:

  • Mix cucumbers and onions together.
  • Mix rest of ingredients together in a closed bowl and give a shake.
  • Add to cucumbers, chill till very cold & serve.
